The results from the total viable counts (TVC) of the <strong>Nile</strong> perch gut samples ranged from<br />

2.4x10 2 -1.0x10 6 cfu/g (table 16). It can be concluded that the fish guts are good reservoirs of<br />

<strong>in</strong>digenous micro flora that may contribute to contam<strong>in</strong>ation dur<strong>in</strong>g process<strong>in</strong>g if h<strong>and</strong>lers do<br />

not abide to good hygiene <strong>and</strong> operat<strong>in</strong>g practices. The results for Enterobacteriaceae<br />

ranged from 4.0x10 3 -3.8x10 4 cfu/g .The results <strong>in</strong>dicate that the fish guts can be an important<br />

reservoir of bacteria contam<strong>in</strong>ation of <strong>Nile</strong> perch dur<strong>in</strong>g process<strong>in</strong>g at establishments.<br />

One sample was presumptive V. cholerae per 25g of fish guts (table 17). The V.<br />

parahaemolyticus <strong>and</strong> or V. vulnificus were absent <strong>in</strong> 25g from all samples.<br />
