4.5 SHELF LIFE OF ICED WHOLE NILE PERCH AND CHILLED FILLETS<br />

The summery of results for estimated shelf life for iced whole <strong>Nile</strong> perch (both sensory<br />

assesment <strong>and</strong> microbiological counts) <strong>and</strong> chilled fillets (microbiological counts) stored at<br />

0-3 o C are shown <strong>in</strong> table 20. Shelf life of newly caught iced whole <strong>Nile</strong> perch was<br />

estimated to be about 4 weeks (26-28 days). The laboratory chilled fillets had a long shelf<br />

life (17 days) compared to establishments chilled fillets. The estimated shelf life for<br />

establishment’s chilled fillets processed after long storage time of 17 days <strong>in</strong> ice was 8<br />

storage days compared to 10-13 storage days for other chilled fillets (processed after 10, 6<br />

<strong>and</strong> 5 storage days <strong>in</strong> ice).<br />
