A land of ancient traditions in a natural<br />
setting of rare beauty and the seat of the<br />
Magnifica Comunità, Val di Fiemme<br />
conserves gastronomic products with<br />
origins lost in the mists of time.<br />
This itinerary begins in Cavalese, where<br />
you can sample traditional pies, like the<br />
Fiemme Beer pie (11). Travelling along<br />
the state road towards Predazzo you<br />
pass small characteristic villages where<br />
you can enjoy the numerous specialities<br />
produced in this territory.<br />
Between one desmontegada and another<br />
In September, there are three “mouth-watering”<br />
weekends not to be missed. The “Desmontegade”<br />
in Cavalese, Predazzo and Primiero revive the<br />
ancient tradition of the return of the goats and<br />
cows to the valley after the summer spent in the<br />
mountain pastures. A joyful festivity of simplicity<br />
and colour held in a world brimming with beauty,<br />
traditions, and most of all knowledge and deep<br />
respect for the rites and secrets of the mountains.<br />

For instance in Carano, where the<br />
Cavalese Cooperative Dairy (2) produces<br />
the fresh and mature goat’s milk cheese<br />
and the local Valfiemme cheese.<br />
In Daiano and Varena you can discover<br />
the secrets of traditional speck (13) and<br />
taste various kinds of lucanica (14).<br />
And with these tasty cheeses and<br />
salamis you should not miss the<br />
opportunity to drink a glass of Fiemme<br />
beer produced in Daiano (10).<br />

Another destination is Castello di<br />
Fiemme, where you will notice dozens of<br />
beehives in the fields surrounding the<br />
village. In these little coloured houses<br />
the bees produce the excellent wild<br />
flower honey sold by many local<br />
beekeepers (6, 7, 8, 9, 12) or in the shops<br />
of local valley products. In this area you<br />
can also find delicious raspberries (23)<br />
and tasty goat’s milk cheeses (24). Also<br />
recommended is a possible detour to<br />
Valfloriana to taste the organic cheeses<br />
produced exclusively with the milk of the<br />
Alpine Grey breed of cows, a listed Slow<br />
Food (22).<br />
In Tesero you can stop for a meal of<br />
rabbit, which is bred in Val di Fiemme (5).<br />
The last stage in our itinerary is<br />
Predazzo, the country of origin of the<br />
Felicetti pasta (15) since 1908, which<br />
owes its quality to the pure water of Val<br />
di Fiemme. Not to be missed in Predazzo<br />
is a stop at the Predazzo and Moena<br />
Cooperative Dairy to discover the secrets<br />
and aromas of the famous Puzzone di<br />
Moena (1), the main ingredient in the<br />
menus of restaurants, hotels and<br />
agriturs associated with the Route.<br />
