High altitude flavours<br />

At sunset, when the Pale di San<br />

Martino are tinged with pink, at 2,200<br />

m on the Tognola Alps and the snowwhite<br />

ski pistes, the “High Altitude<br />

Flavours” event takes place; a tasting<br />

of cheeses and products of the<br />

Primiero, Fiemme and Fassa valleys<br />

served with <strong>Trentino</strong> wines and for the<br />

youngest with apple juice and wild<br />

fruits. A magical atmosphere, sweet<br />

melodies and a thrilling torchlight<br />

descent on the piste Uno with the ski<br />

instructors provide a unique<br />

experience. A detailed programme is<br />

Martino di Castrozza.<br />

This journey, in Primiero, in the shadow<br />

of the Pale di San Martino, starts from<br />

Siror, the first of the 7 communes that,<br />

like a mosaic, form the inhabited part of<br />

this Dolomite valley. In this centre the<br />

delicious ‘carne fumada di Siror’ (20) has<br />

been produced for over 40 years and is<br />

excellent eaten either by itself, or with<br />

fresh cheeses, or local ricotta.<br />

On the way to Tonadico, it is worth<br />

stopping at Villa Welsperg to see the<br />

caretaker’s garden and the laboratory for<br />

the recuperation of the traditional seeds<br />

of the past. Starting from Tonadico the<br />

didactic Tonadico-Cimerlo path leads,<br />

past the old Apiary of Don Fuganti, to Val<br />

Canali, renowned as the “Valle Biodiversa”<br />

for the important ecosustainable<br />

projects started by the<br />

Paneveggio Pale di San Martino Nature<br />

Park. Nature and flavours are the subject<br />

of many walks, also beneath the stars,<br />

visits to the mountain dairies (27),<br />

tasting and workshops organised by the<br />

Park. And for the youngest, entertaining<br />

activities to discover the berry fruits in<br />

the highest located cultivations in<br />

<strong>Trentino</strong>, at the foot of Passo Cereda<br />

(26).<br />

On the state road leading to Mezzano, a<br />

stop at the Primiero Cooperative Dairy (4)<br />

is a must. Here you can find the Tosèla<br />

cheese and various maturations of the<br />

Nostrano di Primiero to enjoy with the<br />

local honey (19). If you order it<br />

beforehand, you can also find the Botìro di<br />

Primiero di Malga butter produced only in<br />

the summer months.<br />

To discover where and how Botìro butter<br />

is made you have to go to Malga<br />

Fossernica in Valle del Vanoi, on the edge<br />

of the Tour of the Ethnographic Path<br />

dedicated to the mountain dairies, their<br />

use and a number of activities combining<br />

traditions and flavours organised by the<br />

Vanoi Eco-museum. The last mouthwatering<br />

stop is above Zortea, on the road<br />

leading to the splendid Lake Calaita,<br />

where you can find not only strawberries<br />

and bilberries, but also herbal teas of mint,<br />

pot marigold, cornflower and nettle (31).<br />
