Mifroma matures, cuts, grates, packages and markets<br />
several hundred types of Swiss and foreign cheeses.<br />
Dörig Käsehandel AG, which stores and matures the wellknown<br />
Appenzeller cheese, and Bergsenn AG, the largest<br />
producer of Bündner Bergkäse mountain cheese specialities,<br />
are both part of the company.<br />
Market leader in Switzerland<br />
Mifroma leads the Swiss cheese market, with its range of over<br />
600 varieties of cheese. The cheeses are made by selected<br />
producers in Switzerland and other countries, with Mifroma<br />
handling the storage, maturation and further processing of the<br />
cheese into unrivaled gourmet products.<br />
Products at one with nature<br />
Depending on the variety, the cheeses are directly packaged<br />
at Mifroma or first matured for weeks or months. As part of the<br />
maturing process, the cheese is stored in sedimentary rock<br />
formed by nature over thousands of years. These natural cellars<br />
are the secret of perfect maturation.<br />
Know-how and technology<br />
After the maturation process, the cheeses are packed, labeled<br />
and then moved into the warehouse by a fully automated<br />
system. Mifroma has only recently invested in a new logistics<br />
system to make it even more flexible in meeting individual<br />
customer requirements.<br />
100 tonnes of cheese a day<br />
Every day over 100 tonnes of cheese are processed and<br />
supplied. They reach consumers via retailers or wholesale distributors<br />
such as restaurants, hospitals and hotels. Some of<br />
the cheese is exported to the EU through the French subsidiary<br />
Mifroma France.<br />
