Because <strong>of</strong> the small quantity <strong>of</strong> pork in Wisconsin the state<br />

has few programs related to pork. Some <strong>of</strong> the value-added<br />

projects that are in the works include:<br />

1. New food products<br />

2. Ethanol feasibility study<br />

3. Caviar processing <strong>and</strong> marketing<br />

4. New soybean oil products<br />

5. Development <strong>of</strong> new specialty cheeses<br />

6. Farmstead cheese production<br />

Grant Project Summaries<br />

12042-<strong>Value</strong>-added Lamb Awarded $27,000.00<br />

The goal <strong>of</strong> this grant is to increase the price lamb producers<br />

receive. In order to achieve this goal, lamb producers<br />

will conduct a feasibility <strong>and</strong> product development study to<br />

identify possible value-added lamb meat products. After a<br />

possible product is identified, the group will create a business<br />

plan for the producer-based association.<br />

12055-Development <strong>of</strong> a <strong>Value</strong>-<strong>Added</strong> Oil Seed industry<br />

for Wisconsin Awarded $20,000.00<br />

The goal <strong>of</strong> this project is to develop value-added oil seed<br />

processing in Wisconsin. The project is a collaborative<br />

effort between the Wisconsin Innovation Corporation, UW-<br />

Madison Department <strong>of</strong> Agronomy, UW-Center for<br />

Cooperatives, Soy-Co L.L.C. <strong>and</strong> Cooperative Development<br />

Services. Project goals include the creation <strong>of</strong> new valueadded<br />

products from oil seed processing plant <strong>and</strong> creation<br />

<strong>of</strong> an oil seed cooperative. The project will provide a new<br />

pr<strong>of</strong>itable market for central <strong>and</strong> northern Wisconsin<br />

Farmers.<br />

12078-Conducting value-added Product Development<br />

Research at River Valley Foods, Inc Awarded $17,550.00<br />

The purpose <strong>of</strong> this study is to provide producers with a<br />

value-added food-processing model. In this study, River<br />

Valley Food will document the complete food product<br />

development research conducted on several value-added<br />

processing foods. Information gained from this study will<br />

be published in a guidebook <strong>and</strong> be made available<br />

through the UW-CIAS World Wide Web Page.<br />
