service for customers, but is intended to serve as a product development tool. The<br />

ButchersChop is crafted <strong>of</strong> pine <strong>and</strong> oak <strong>and</strong> is made to replicate a New Engl<strong>and</strong> Style Barn. It<br />

is also decorated with historical photos <strong>and</strong> other antiques from the region. Jim also plans to<br />

include an old fashioned knife sharpening business on a custom basis. This ties into the marketing<br />

strategy <strong>of</strong> making people feel like they are visiting a traditional meat market. A critical<br />

aspect <strong>of</strong> the ButchersChop is also direct interaction with customers. Customers will be made<br />

to feel as though they are the center <strong>of</strong> the business. The goal is to pull sales that are currently<br />

wholesale to local grocers into the store. “One store in New Milford purchases about $1,200<br />

worth <strong>of</strong> product per week <strong>and</strong> then retails it at a 20-30 percent mark-up” Jim said. “Pulling<br />

those sales directly into the Egg & I would obviously improve the pr<strong>of</strong>itability, the only drawback<br />

is the convenience <strong>of</strong>fered by a full service grocer so that the wholesale market will still be<br />

important for sales.”<br />

One <strong>of</strong> the key problems faced by any retail outlet will be product merch<strong>and</strong>ising. In order to<br />

increase utilization <strong>of</strong> the carcass, there are multiple uses for each cut. For example, there is a<br />

charge for bone disposal (rendering), so they are roasted <strong>and</strong> then turned into demi-glaze<br />

bricks. These can then be used as gravy <strong>and</strong> stock for roasts. Rinds are taken <strong>of</strong>f bacon <strong>and</strong><br />

rolled up to make chew toys which are merch<strong>and</strong>ised for $0.79 each. There is approximately<br />

$12 in value for each hog simply from the chew toys. Other specialty cuts are also made to<br />

help differentiate products <strong>and</strong> improve sales. Rather than selling whole hogs for hog roasts,<br />

fresh hams are held back <strong>and</strong> used instead. During the summer, sales <strong>of</strong> hams are slower <strong>and</strong><br />
