The shoulder is removed by following the natural seam between the breast plate <strong>and</strong> blade bone (scapula).<br />

Cut at the natural seam with a sharp knife while pulling the fore-shank away from the body <strong>of</strong> the carcass.<br />

The shoulder number 1 will include the blade bone (scapula), armbone (humerus), <strong>and</strong> fore-shank (radius <strong>and</strong><br />

ulna) <strong>and</strong> the associated muscles.<br />

•Major muscles will include: infraspinatus, supraspinatus, serratus ventralis, subscapularis, Biceps<br />

brachii, Triceps brachii long head <strong>and</strong> lateral head. A portion <strong>of</strong> the deep pectoral muscle may remain<br />

on the Shoulder Number 1.<br />
