Yüzlerce yıl, dondurma buna<br />
benzer tariflerle yenmiş. Ama<br />
1254 - 1324 yılları arasında<br />
Marco Polo tarih sahnesine<br />
çıkmış. Uzun Asya gezisinden,<br />
beraberinde makarnadan<br />
tatlıya binbir tarif ve tatlıyla<br />
dönünce lezzetin tarihini de<br />
değiştirivermiş.<br />
Acaba Marco Polo’nun Çin usulü<br />
dondurma tarifini ilk deneyenler<br />
ne düşündü? Beğendi mi?<br />
Kimbilir! Ancak bir süre sonra<br />
buzla sütü buluşturan formül<br />
öyle bir tutmuş ki, eski yöntemler<br />
unutulup gitmiş. Dahası, dünyaya<br />
Roma dondurması diye özel bir<br />
çeşit bile kazandırmış.<br />
“Roma’da olan Roma’da kalır”<br />
denmiş. Ama bu, dondurma için<br />
söz konusu olmamış. Fransa Kralı<br />
II. Henri ile evlenen Catherine<br />
de Medicis, yanında aşçılarını<br />
da götürmüş. O aşçılar da önce<br />
Fransız sarayına, sonrasında tüm<br />
Avrupa asilzadelerine dondurmayı<br />
tanıtmış. Sıradan insanların bu<br />
özel lezzeti tanıyabilmesi için<br />
elbette zaman geçmesi gerekmiş.<br />
Ama bir kez keşfedilince de<br />
Marco Polo’nun babası ve amcasıyla Çin’e varışını gösteren minyatür<br />

neredeyse dondurma çılgınlığı<br />
yaşanmaya başlanmış.<br />
Düşünün, kayıtlara göre Marco<br />
Polo’dan sadece 2 yüzyıl kadar<br />
sonra, 1676 senesinde Paris’te<br />
250’ye yakın dondurmacı olduğu<br />
biliniyor. Sayı bu kadar artınca<br />
rekabetin de arttığı ve sürekli<br />
yeni karışımlar denendiği açık.<br />
Dondurmaya çağ atlatansa,<br />
zahmetli yayıkları devre dışı<br />
bırakan soğutucu makineler<br />
olmuş. 1900’lerden itibaren, bu<br />
makineler sayesinde dondurma<br />
daha da yaygınlaşmış. Hem<br />
yemeyi kolaylaştıran hem de<br />
lezzetini katlayan külahı ise,<br />
ilk kez 1904’te ABD’de St.<br />
Louis’de düzenlenen Dünya<br />
Fuarı’nda ortaya çıkmış.<br />

His cook, the name of whom will<br />
ever remain unknown (probably<br />
another slave), created one of the<br />
first ice creams in the history with<br />
that snow. He poured honey over<br />
condensed snow, added pieces of<br />
various fruits, and presented it to<br />
the emperor.<br />
Marco Polo’s contribution<br />
The recipes of ice cream did not<br />
differ too much, for hundreds of<br />
years. However, between 1254<br />
and 1324, Marco Polo was on the<br />
stage of history. He changed the<br />
history of flavors as well, when<br />
he returned from his long travel<br />
through Asia with all sorts of<br />
recipes and deserts.<br />
What did the first people who<br />
tasted Marco Polo’s Chinese ice<br />
cream think? Did they like it?<br />
Who knows! However, after a<br />
while, the formula combining ice<br />
and milk became so popular that<br />
old methods fell into oblivion.<br />
Furthermore, it became the origin<br />
of a special sort of ice cream,<br />
the gelato (“Roman ice cream” in<br />
Turkish).<br />
It was said, “What happens<br />
in Rome remains in Rome”.<br />
However, this was not the case<br />
for ice cream. Catherine de’<br />
Medici, who married King Henry<br />
II of France, brought her cooks<br />
to France. They introduced ice<br />
cream first to the French court<br />
and then to the European nobility.<br />
Of course, it took time before<br />
ordinary people could become<br />
familiar with this special flavor.<br />
Nevertheless, once discovered, it<br />
caused, so to say, an ice cream<br />
mania.<br />
According to records, just about<br />
2 hundred years after Marco<br />
Polo, in 1676, there were almost<br />
250 ice cream shops in Paris.<br />
Obviously, such a high number<br />
fueled competition and new<br />
mixtures were tried continuously.<br />
Ice cream was brought into a<br />
new age by freezers that replaced<br />
inconvenient churns. From 1900s<br />
on, ice cream became more<br />
widespread by means of these<br />
machines. Ice cream cones, which<br />
make eating ice cream easier<br />
and adds flavor to it, emerged in<br />
1904, at a World’s Fair held in St.<br />
Louis.<br />
The world’s most delicious<br />
adventure is still going on.<br />
Creators of ice cream allure us<br />
with hundreds of varieties. What<br />
can we say? Bon appétit!
