Pre-ENGINEERING Engineering Technology Grade Level: 9 - 10 Prerequisite: Grade of B or better in Algebra I and Teacher Recommendation Full Year - 1 Credit Class Fee of $25 The purpose of this course is to help students begin to develop their understanding of the various engineering/manufacturing fields and how they relate to the real world. Topics covered in this course include the engineering design process, aerodynamics, motors and motor controls, electricity and electronics. Students will complete hands-on projects to display their understanding of the material. Engineering Technology II - Ill Grade Level: 10 - 12 Prerequisite: Eng Tech I and Teacher Recommendation Full Year - 1 Credit Class Fee of $25 The purpose of this course is to help students specialize in either the engineering or manufacturing field. Topics to be covered include the engineering design process using SolidWorks modeling software, ArchiCAD Pneumatics, Tolerance and Quality Control. Students will complete hands on projects to display their understanding of the material and their growth in pre-engineering skills and concepts. Advanced Applications in Technology Grade Level: 10 - 12 Prerequisite: Eng Tech I - III and Teacher Recommendation Full Year - 1 Credit Class Fee of $25 The purpose of this course is to serve as a capstone course to provide STEM Education students with the opportunity, to develop a project from "vision" to "reality". Working in teams to design, engineer, manufacture, construct, test, redesign, test again, and then produce a finished "project". This would involve using ALL of the knowledge previously learned, not only in technology education, but across the curriculum. Partnership with SPC allows students to earn college credit upon completion of Advanced Applications in Technology. Culinary Center of Excellence Program Culinary Arts I - lV Grade Level: 9 - 12 Prerequisite: None for Culinary Arts I; advanced courses require teacher approval Culinary III - IV Q Full Year - 1 Credit each Class Fee of $25 This program provides students with the opportunity to learn about the restaurant and food industry. The Pro Start curriculum created by the National Restaurant Association. Allows students to learn basic food preparation, accounting, cost control, sanitation, and workplace safety. On-the-job training through internships and job site mentoring are an important part of the instruction. Upon successful completion of this program, students are eligible for certification for advanced training programs and/or employment beyond entry level. Subject Overview: The purpose of Culinary Center of Excellence is to facilitate students with a deep interest in culinary arts to experience aspects of the industry that will be conducted in and out of regular class time. The focus will be on advanced food preparation techniques. In the Culinary Center students will study different types of food service establishments and food related careers. They will apply the fundamental principles of food preparation and service to various projects. Students will acquire a basic knowledge of nutrition as they participate in the planning, preparation and service of a variety of foods using commercial equipment in a professional kitchen. National standards for safe and sanitary food handling with be emphasized and applied as students develop the ability to work effectively as a cooperative member of a food production and service team. As students graduate from the Osceola Fundamental High School Culinary Center of Excellence, students will have industry certification and the opportunity to post-secondary culinary schools. After 9th and 10th Grade: 1. Students will be able to pass the ProStart Level I certification, in line with the National Restaurant Association guidelines. 2. Students will finish 100 volunteer hours related to the foodservice industry (after 9th grade). 3. Maintain a grade point average of 2.5 or better on a 4.0 scale. After 11th and 12th Grade: 1. Students will be able to pass the ProStart Level II certification, in line with the National Restaurant Association guidelines. 2. Students will finish 400 volunteer hours (the 100 to be completed by the end of 9th grade are included in this) related to the foodservice industry. 3. Maintain a grade point average of 2.5 or better on a 4.0 scale. • Students in the Culinary Center of Excellence will also have the opportunity to compete in local, state and national culinary competitions. • Culinary Center of Excellence students will have a lab fee attached for culinary uniforms. 9 th and 10 th grade students in the Center of Excellence will be taking the following academic classes in addition to Center of Excellence courses: 9 th Grade English I or English I Honors U.S. Gov’t or U.S. Gov’t Honors World Cultural Geography Earth Science or Biology I Honors Algebra I or Geometry Honors 10 th Grade English II or English II Honors World History or World History Honors Geometry or Algebra II Honors Biology I or Chemistry I Honors 34 Osceola Guide
