Gramercy’s viticultural and winemaking philosophies are very simple- to select the best<br />

vineyards, harvest ripe, not over ripe grapes, intervene minimally in the winemaking process,<br />

and don’t smother the wine with tons of new oak. They believe that too many wines<br />

have excessive alcohol and new oak, are overly fruity and taste like they could be from<br />

anywhere. They created Gramercy <strong>Cellars</strong> to make different wines that display balance,<br />

fruit and earthiness, and minimal new oak flavors. Their wines may require time to<br />

develop and open, but will reward patience. This is their passion. At Gramercy <strong>Cellars</strong>,<br />

they seek to produce wines that will complement food, provide great pleasure and stand<br />

out as uniquely as Washington.<br />

“Our inaugural Walla Walla Valley <strong>Syrah</strong>. Damn we love this wine. The grapes were<br />

destemmed, fermented in small, open top fermenters for 7-12 days, lightly pressed, allowed<br />

to settle and placed in French Oak barrels, with 15% new. The wine was aged for 18<br />

months leaving just a kiss of oak. This wine displays smoked meat, black olive and licorice<br />

flavors and elegant black fruits. The wine shows balanced acidity with intense richness and<br />

just a touch of vanilla spice. Exactly what we wanted to make in Washington!” Greg<br />

“Our inaugural Lagniappe <strong>Syrah</strong>. In New Orleans, Lagniappe means a ‘a little something<br />

extra.’ We feel both the wine and the vineyards are a gift to us. The grapes were partiallly<br />

destemmed (it’s all about the whole cluster), co-fermented with Viognier in small, open top<br />

fermenters for 7-12 days, lightly pressed, allowed to settle and placed in neutral French<br />

Oak. The wine was aged for 18 months.<br />

This wine displays an amazingly floral nose with hints of orange rind. Flavors of liquid<br />

stone and gravel, with smoked meat and red and black fruits. This wine is all about balance<br />

with fantastic acidity and intense fruit and earth flavors. This is a food wine, not for sipping<br />
