“Prüm has been the great name in the Mosel since the 16th century. Manfred Prüm<br />
owns the finest of the family vineyards and his wines are legendary. He is openly secretive<br />
and no one is allowed in the cellars. When asked what his secret is, he replies, ‘quite<br />
simple - perfect grapes.’ Prüm has some of the best sites in Mosel (close to the river, where<br />
the mist encourages botrytis), a dedicated, experienced team in the vineyards, and original<br />
ungrafted vines over 100 years old that are trained so as to reduce the yield.<br />
Fermentation is in stainless steel vats, almost always with indigenous yeast and the<br />
wines are disturbed as little as possible to allow the natural carbon-dioxide to retain their<br />
freshness. Sadly, today the general demand is for last year’s Rieslings, but it is criminal<br />
to drink Prüm wines too soon. In 2003, the secondary aromas of his 1993 Wehlener<br />
Sonnenuhr Riesling Spätlese were in full ascendancy; with purity and filigree elegance.<br />
His wines have always captivated me, and the Wehlener Sonnenuhr lange Goldkapsel<br />

oiliness of texture. Look for some short term gain in clarity and then - based on a long-standing track<br />
