chef in the spotlight for <strong>March</strong> is the one and<br />
only Dolly James.<br />
Dolly is a strong, independent woman who<br />
grew up in the Philippines and enjoys sharing<br />
the foods and tastes of her culture with others.<br />
Dolly has chosen to mix many traditional<br />
elements together into one dish, with chicken<br />
and pork adobo with mango salsa. Not only is<br />
this dish a popular luau offering and a national<br />
dish of the Philippines, it also happens to be a<br />
trademark of the Philippine cuisine.<br />
Just looking at this magnificent dish will<br />
leave you breathless as it captivates the taste<br />
buds and immerses you in a foreign culture.<br />
The meal is made up of laminated pork and<br />
chicken, served with a vibrant mango salsa and<br />
white rice.<br />

Peninsula, the talents of our chefs will have<br />
something to tickle your tastebuds regardless<br />
of your background or culture.<br />
Our <strong>Dolphins</strong> HQ restaurant every Thursday<br />
night hosts and honours flavours from all over<br />
the world. During <strong>March</strong> and April, we are<br />
introducing something brand new to the restaurant<br />
with traditional Spanish cuisine.<br />
Should you be a little nervous to try these<br />
new flavours, the restaurant offers a selection<br />
of Spanish dishes within a buffet, allowing you<br />
to try as many of the dishes as you like.<br />
You may find that it is merely the names of<br />
the dishes that have you nervous, for these<br />
dishes use simple ingredients brought together<br />
in traditional Spanish ways.<br />
Paella valenciana may sound bizarre, but<br />
simply combines fluffy rice with chicken,<br />
chorizo and seafood.<br />
Arroz con leche could be mistaken for a rare<br />
exotic fruit, but turns out to be a Moorish rice<br />
pudding dish. Escalivada, while hard to pronounce,<br />
is a dish of Catalan roasted pepper,<br />
eggplant and onions.<br />
The cuisine on offer is enough to immerse<br />
yourself into the Spanish experience, but the<br />
<strong>Dolphins</strong> can do one better.<br />
At approximately 7pm each Thursday night,<br />
guests will enjoy a traditional performance by<br />
our very own Spanish señorita.<br />
This Spanish experience will surround the<br />
senses during <strong>March</strong> and April only. With limited<br />
seats available each Thursday night, we<br />
encourage you to book ahead to avoid disappointment.<br />
Doors open at 6pm.<br />
