Because I Said So by Wendy Shoffit, Editor For some strange reason, I keep singing “Back in the Saddle Again” over and over in my head. I wonder why? Seriously, though, thank you, Pam Abdalla for doing such a wonderful job in 2001 and for your kind words in last month’s issue. Being editor is certainly no easy task and you handled it marvelously. Now that everyone has confirmed their membership in the mutual appreciation club, let’s get down to business. This year will be a bit different from year’s past. Putting Slipstream together will no longer be a one-woman job. Fortunately for me, I can now take on the role of “Managing Editor” with several people helping me out substantially. Those people include “Production Editor” Kevin Hardison, Teri Davis, and Lisa Steele (official titles to come later). I’m hoping that through teamwork, I can maintain my own sanity and we can produce an improved newsletter for you all. Please note there are also some email changes. No, I’m not talking about the @home.com fiasco recently. I’m actually talking about the new editor@mavpca.org address to send all articles and/or inquiries, the pictures@mavpca.org address to send all pictures, unclassifieds@mavpca.org for unclassifieds and so on. This way should eliminate any confusion or loss of messages if an email address changes in the future. On a personal note, I wanted to say a sad goodbye to John and Suzanne Cochran who will be moving to Washington, D.C. at the first of the year. You both will be greatly missed. I’m looking forward to a great year and for all of you who were at my special dinner board meeting, here’s the recipe for my dessert. For the rest of you, try it... it’s super easy and delicious! Mexican Cobbler 10 Flour Tortillas 1 Can Cherry* Pie Filling 1 stick butter 1 1/2 cups sugar 1 cup water 1-2 tsp Almond Extract or Liquor 1. Roll pie filling in tortillas like enchiladas and put in 9x13 baker. 2. In sauce pan combine butter, sugar, and water. Bring to a boil and add almond extract. 3. Bring to a boil and add almond extract. Pour liquid over tortillas, keeping a little to baste with. Soak 40-60 minutes, re-basting edges as needed. 4. Bake at 350 degrees until brown (about 30 minutes). 5. Top with powdered sugar and cinnamon. *This also works with other pie fillings, as long as large pieces are cut into smaller portions.Cherry is easiest to work with. Maverick Minutes by Andy Mears, Maverick Region Secretary Each month Maverick Region holds a board meeting that is open to all members. A summary of the meeting minutes is published in the Slipstream the following month. December’s board meeting started with a fabulous pre-meeting dinner prepared by Wendy Shoffit. The dessert that followed was equally delectable. Thank you, Wendy, for all your hard work. James Shoffit opened the meeting just after 7:00. First up, a big thanks goes out to Dorothee Thielisch for making 50 stockings for families at Hope Shelter. Next, thanks to the outgoing Vice President team of Mimi and Carey Spreen for all their hard work in 2001 and congratulations to Eric Erz who will be serving as Vice President for 2002. Charlie Davis thanked Maverick Region for sponsoring the 914 SIG’s Ramble as well as all the volunteers that helped. Teri Davis wanted to remind everyone of the Rally school coming up in January look for the ad this month. Tinker introduced Dennis Chamberlain who will be taking on the responsibility of coordinating the happy hours. Another volunteer change is that Wendy has stepped up to work as Slipstream editor once again so, send your scanned and digital pictures to pictures@mavpca.org and your articles to editor@mavpca.org. Finally, after a very lively discussion regarding who may vote at a board meeting, James offered to clarify this issue at the next board meeting. The January board meeting will be on Wednesday January 2 at 7:00 PM, everyone is welcome to attend and if you would like to request that an item for discussion be placed on the agenda please contact James Shoffit at president@mavpca.org. Maverick Region PCA Board Meetings are held once a month. The meetings are open to all PCA members and your suggestions and opinions are welcome. And there’s free food! 8
