out from winter, Florida fields are<br />

alive with vivid, luscious strawberries.<br />

Plant City is known as the winter<br />

strawberry capital of the world and<br />

the dominant producing region for<br />

winter berries in the United States.<br />

If you missed the Strawberry Festival<br />

this year, don’t worry. The growing<br />

season isn’t over yet, so check with<br />

local farmers markets and grocers for<br />

“Look for berries that are red all the<br />

way to the tip,” Veilleux said. “Don’t<br />

wash them until you are ready to eat<br />

them, as they will break down faster if<br />

you do. The best place to store is in the<br />

refrigerator. Fresh, ripe berries will keep<br />

four to five days in the refrigerator.”<br />

If you somehow are lucky enough to<br />

have more Florida fresh strawberries<br />

than you can eat in the next few days,<br />

plan on freezing them. Wash and carefully<br />

dry the berries with a clean kitchen<br />

towel or paper towels, remove the stem<br />

and place them in a single layer on a<br />

baking sheet. Freeze until solid, and<br />

then place berries into zip lock bags.<br />

frozen berries into smoothies or lemonade,<br />

bake them in coffee cakes, cook<br />

Strawberry Pretzel Salad<br />

This unusual dish is one of Veilleux’s<br />

favorites. It can be served as a dessert or<br />

side salad at potlucks and parties.<br />

Ingredients:<br />

2 cups crushed pretzels<br />

3⁄4 cup unsalted butter, melted<br />

3 tablespoons white sugar<br />

1 (8-ounce) package cream cheese,<br />

softened<br />

1 cup white sugar<br />

1 (8-ounce) carton frozen whipped<br />

topping, thawed<br />

2 (3-ounce) packages strawberry gelatin<br />

2 cups boiling water<br />

4-5 cups of fresh strawberries or two<br />

10-ounce packages of frozen strawberries.<br />

Directions:<br />

Preheat oven to 400 degrees. Stir together<br />

crushed pretzels, melted butter<br />

and 3 tablespoons of white sugar. Mix<br />

well and press mixture into bottom of<br />

9-by-13-inch baking dish. Bake 8-10 minutes,<br />

until set. Set aside to cool.<br />

In a large mixing bowl, cream together<br />

cream cheese and 1 cup white sugar. Fold<br />

in whipped topping. Spread mixture onto<br />

cooled crust. Dissolve gelatin in boiling water.<br />

Stir in strawberries and allow to set briefly.<br />

When mixture is about the consistency of egg<br />

whites, pour and spread over cream cheese<br />

layer. Refrigerate until set.<br />

Florida’s tourism and hospitality industry,<br />

having supported revisions<br />

to the Venues Agreement to enhance<br />

projects, including the Dr. Phillips<br />

Center for the Performing Arts,<br />

Orange County Convention Center,<br />

and Camping World Stadium.<br />

Additionally, Boyd has served<br />

as a regional ambassador on several<br />

Visit Orlando trips to promote<br />

Central Florida as a world-class destination.<br />

His attentiveness to hospitality<br />

industry priorities was highlighted<br />

by his efforts during his final weeks<br />

in office to support CFHLA’s initiative<br />

to amend the county’s alcohol<br />

ordinance relating to hours of alcohol<br />

sales and service. If approved<br />

by the current board, this amendment<br />

will provide an enhanced<br />

customer experience for visitors<br />

The Living Trust<br />

Revolution<br />

Baby Boomers, those born between 1946 and 1964, make up<br />

about 23.5% of today’s total population yet they control over 80% of personal<br />

financial assets and more than half of all consumer spending. Considered the<br />

healthiest percentage of today’s population, nearly 42% of boomers seem to<br />

be in a state of denial regarding their own aging and death as exemplified<br />

more and more by those who are having plastic surgery in order to portray<br />

younger appearances and to maintain acceptance within social circles and the<br />

work place. Furthermore, about 25% of boomers claim they will never retire<br />

thereby prohibiting large segments of the population following the boomers<br />

from ever attaining the wealth and opportunities the boomers were afforded.<br />

As a result of the baby-boomer tidal wave of wealth that has transformed the<br />

face of everything in its wake, over the next 5 to 15 years trillions of dollars<br />

will be passed from the boomer generation to the next. Unlike boomers’<br />

parents who relied so heavily upon social security as a means of retirement<br />

and often leaving little to pass on to their children, boomers have become<br />

the largest and wealthiest retiring class in the history of our nation and have<br />

much to bestow upon their children. Boomers realize that to fortify their<br />

financial goals and pass on their estates to their children, estate planning<br />

has become as essential to them as owning a house, a car, a television or<br />

a computer. Estate planning has become so important to boomers that<br />

not only are they preparing for their own but they are paying to have<br />

estate documents prepared for their parents as well.<br />

The boomers have turned estate planning into what has been<br />

dubbed a “Living Trust Revolution.” To put the revolt in perspective,<br />

boomers’ parents so often believed in the principal that “I had to fight for<br />

what I earned in life so let my children fight over what’s left once I am gone.”<br />

Over the past many years, boomers have experienced the impacts of what<br />

happens when their parents died without a will or a trust. They quickly<br />

learned terms like “intestate” and “probate”, often facing a war with siblings<br />

over who would receive mom’s wedding ring or dad’s gun and coin set. So<br />

what is this revolution all about?<br />

It is about Probate and how to avoid it. What is Probate? It is a<br />

legal process, also known as estate administration, that takes place after you<br />

die requiring attorneys and courts to oversee the payment of your debts and<br />

distribution of your assets to rightful heirs or other beneficiaries. Probate can<br />

be costly in both time and money. Having experienced a probate war and<br />

sibling rivalry at the time of a parent’s death, boomers rebelled against the<br />

need of attorneys and courts to decide what to do with the family estate.<br />

Boomers discovered that with a “Living Trust” probate roadblocks<br />

could be eliminated. Think of a “Living Trust” as a “Will” attached to a<br />

rainbow that begins with you, passes over the roadblocks, and leaves your<br />

loved ones with your pot of gold distributed how<br />

you wish, when you wish and to whom you wish<br />

without any need for a family war or the need<br />

for courts and attorneys. This is the thrust that<br />

has caused the “Living Trust Revolution.”<br />

Students about to take standardized<br />

college entrance exams, including<br />

the SAT and ACE, may elect to<br />

receive short-term tutoring just prior<br />

to sitting for a test. Alamdar said it<br />

is especially helpful when students<br />

are preparing for the “dreaded writing<br />

sample portion. A little bit of help<br />

can go a long way to achieving the<br />

extra points needed for a college’s<br />

consideration.”<br />

The ability to start and end tutoring<br />

at-will is also helpful to students<br />

hoping to receive college credit for<br />

Advance Placement courses taken in<br />

high school. Sometimes a quick refresher<br />

is all that is needed.<br />

Alamdar is an expert in the tutoring<br />

profession, starting her previous<br />

company, Sterling Tutors, in<br />

1995. She holds a bachelor’s degree<br />

in animal and veterinary science<br />

from West Virginia University.<br />

Both her master’s in mathematics/scientific<br />

education from Johns Hopkins<br />

University and a master’s in educational<br />

psychology from the University<br />

of Central Florida fully prepared her<br />

There was a “student mutiny, tug-of-war<br />

and race for orphans” during the whirlwind<br />

Catholic Schools Week at Holy Family<br />

Catholic School. The week began with an<br />

open house to give prospective students’<br />

parents a look behind the classroom doors.<br />

Nearly 700 students, from pre-K 3-yearolds<br />

to eighth-graders, took part in a walka-thon<br />

to raise money for the Orphans<br />

Rising Missions. The school also hosted a<br />

field day, Crazy Hair and Sock Day, talent<br />

show, Virtual Career Day and volunteer<br />

breakfast that honored all the people who<br />

make every event at HFCS possible. The<br />

Class of 2017 prepared lessons for weeks<br />

in advance so they could be ready to teach<br />

the younger students while their teachers<br />

kicked up their feet. Through fun events like<br />

these, Catholic schools around the nation<br />

focused on the value of Catholic education<br />

in their communities.
