colada cheesecake<br />

Serves: 16<br />

Ingredients<br />

For the base:<br />

• 1 ½ cups of almonds<br />

• 1 cup of dates<br />

• ½ cup of shredded coconut<br />

• ½ tsp of vanilla powder<br />

• Pinch of salt<br />

For the filling:<br />

• 3 cups of cashews, soaked overnight<br />

• 270ml of tinned coconut milk<br />

• ½ cup coconut water<br />

• Juice from 2 limes<br />

• 300g of sweet pineapple<br />

• ¾ cup of <strong>Norbu</strong><br />

• ¼ tsp of salt<br />

• ½ tsp of vanilla powder<br />

• 3 tbsp sunflower lecithin (optional)<br />

• ¾ cup of melted coconut oil<br />

Method<br />

For the base:<br />

1 Process all base ingredients until they resemble fine crumbs.<br />

2 Press crumb mixture into the bottom of a lined springform pan.<br />

3 Freeze while you prepare the filling.<br />

For the filling:<br />

1 Blitz all filling ingredients (except the lecithin and coconut oil)<br />

into a processor until smooth and creamy. Then add the<br />

lecithin and coconut oil. Combine well.<br />

2 Pour over base and return to freezer for 5-6 hours or overnight.<br />

3 Before serving place in fridge for a few hours to soften.<br />
