ESPRESSO VANILLA 'MILKSHAKE'<br />

Serves: 1<br />
Ingredients<br />
• ½ pack silken tofu*<br />
• 1 shot espresso<br />
(or 1 tsp coffee granules in ⅛ cup hot water)<br />
• ½ tsp pure vanilla<br />
• 1 cup water<br />
• 1 tsp <strong>Norbu</strong><br />
Method<br />
1 Add all the ingredients to a blender and blitz until smooth.<br />
2 Serve in a cold glass, with a few ice cubes if desired.<br />
Note: *Don’t sub the silken tofu with hard tofu – you’ll end up with<br />
a very lumpy milkshake! If you can handle dairy, try adding<br />
plain Greek yoghurt instead of tofu.<br />
