Apricot, Pistachio &<br />

Almond Bliss Balls<br />

Serves: 10-12 balls<br />

Ingredients<br />

• ¾ cup dried apricots<br />

• ½ cup pistachios<br />

• ½ cup almonds<br />

• ¼ cup almond meal<br />

• ½ tsp ground ginger<br />

• 2 tsp <strong>Norbu</strong><br />

• 1 tbsp coconut water<br />

• Zest and juice of 1 lime<br />

• Extra pistachios and desiccated coconut for rolling<br />

Method<br />

1 Blend all ingredients in a food processor until smooth.<br />

(Add more coconut water if too dry, or more almond meal if too wet)<br />

2 Scoop a tablespoon of mixture and roll into balls. Leave as is, or roll<br />

in some desiccated coconut or ground pistachios.<br />

3 Freeze for at least 30 minutes before eating.<br />

Note: These bliss balls can be stored in the freezer for up to 3 months.<br />
