LEMON & COCONUT PROTeiN BALLS<br />
Recipe by Running Hearts<br />
Serves: 12 balls<br />
Ingredients<br />
• ½ cup almonds<br />
• ½ cup macadamia halves<br />
• ¼ cup cashews<br />
• ⅓ cup <strong>Norbu</strong><br />
• ⅓ cup desiccated coconut<br />
• ⅓ cup melted coconut oil (optional)<br />
• ½ cup coconut flour<br />
• 2 tbsp vanilla protein powder<br />
(use pea protein to make dairy free)<br />
• Juice of 1 lemon<br />
• Rind of 1 lemon<br />
• Cold water<br />

Method<br />
1 Blend together all ingredients except water and ¼ of the macadamias.<br />
2 Process until smooth.<br />
3 Slowly add in water if necessary, to form a ‘sticky’ dough like consistency.<br />
4 Add the last ¼ of macadamias and quickly process the nuts to mix through.<br />
5 Roll into balls of desired size and freeze for 4 hours prior to consuming.<br />
Note: These protein balls can be stored in the freezer.<br />
