Caramel granola bars<br />

Serves: 12-14 bars<br />
Ingredients<br />
• 1 ½ cup gluten free rolled oats<br />
• 1 cup dates, soaked in hot water and drained<br />
• ⅔ cup raw almonds, roughly chopped<br />
• ⅓ cup raisins<br />
• ⅓ cup banana chips, roughly chopped<br />
• ⅓ cup smooth almond butter<br />
• 3 tbsp brown rice syrup<br />
• 3 tbsp <strong>Norbu</strong><br />
Method<br />
1 Line a square baking tin with greaseproof paper. Set aside.<br />
2 Place the dates, almond butter, brown rice syrup and <strong>Norbu</strong> sweetener in<br />
a food processor and process until smooth. Transfer the mixture to a bowl.<br />
3 Add the remaining ingredients to the bowl and mix until evenly combined.<br />
4 Press the mixture in the prepared tin and refrigerate for 1 hour or until firm.<br />
5 Remove bars from the pan and portion. Store in an airtight container in the fridge.<br />
Note: Replace the raw almonds, raisins and banana chips with any other additional<br />
added fruit or nut of your choice.<br />
