ROCKY ROAD<br />

Serves: 3-4<br />
Ingredients<br />
For the chocolate:<br />
• 5 tbsp coconut oil<br />
• 4 tbsp cacao powder<br />
• 2 tbsp <strong>Norbu</strong><br />
• 2 drops rosewater essence<br />
For the marshmallow:<br />
• ⅛ cup cashews, soaked for at least 2 hours<br />
• 1 tsp <strong>Norbu</strong><br />
• 2 tbsp coconut or almond milk<br />
• 1 tsp coconut oil<br />
• 2 tbsp coconut butter<br />
Method<br />
1 Using a coffee grinder, grind all the <strong>Norbu</strong> until it resembles icing sugar.<br />
For the marshmallow:<br />
1 In a food processor, process all marshmallow ingredients until smooth.<br />
2 Transfer to a bowl and place in refrigerator whilst making chocolate.<br />
For the chocolate:<br />
1 Briskly mix all chocolate ingredients in a bowl until smooth and pour<br />
into a silicon tray or baking paper lined tray.<br />
2 Top with pieces of raw marshmallow and chopped pistachios,<br />
cranberries, dried blueberries, dried raspberries and dried rose petals<br />
(or toppings of choice).<br />
3 Place in freezer for at least 30 minutes or until hard.<br />
4 Cut into pieces of desired size and serve.<br />
