Mocha popsicles<br />

Serves: 8 popsicles<br />
Ingredients<br />
• 1 ½ cup light coconut milk<br />
• 200g sugar free dark chocolate, finely chopped<br />
• 2 tbsp <strong>Norbu</strong><br />
• 1 tsp vanilla extract<br />
• 1 tbsp instant ground coffee<br />
Method<br />
1 Place coconut milk, <strong>Norbu</strong>, chocolate, ground coffee<br />
and vanilla in a blender and process until smooth.<br />
2 Pour the mixture into popsicle moulds and insert a popsicle<br />
stick in each. Freeze until firm, about 4 hours or overnight.<br />
3 Briefly hold the moulds in a glass of hot water to loosen the pops.<br />
