Health and Nutrition Strategies For<br />

Cancer Survivors and Everybody Else<br />

WHAT’S IN YOUR DIET?<br />

Processed foods are primarily carbohydrates with essential nutrients removed. Such as baked<br />

goods, for longer shelf life. You will need a sufficient quantity of these type products to satisfy your<br />

nutritional needs. The excess will be stored in your body. Fiber is the part of the plant that your<br />

body can’t digest. Fiber slows fats and sugars entering the blood stream, and since fats bind to fiber,<br />

it lowers cholesterol and blood pressure. Soluble fiber is so potent it is allowed to be advertised on<br />

products such as oatmeal, as “heart healthy”. If you don’t get enough fiber in your diet (at least<br />

25 grams), you are probably consuming excessive fats and sugar, which of course are being stored.<br />

Fruit and whole grains are high in fiber. If you want to get slim or get healthier increase your<br />

fruit and exchange enriched flours for whole grain. I’m a supplement advocate and include a fiber<br />

supplement in my daily regimen.<br />

I increase my fiber anytime I eat red meat or poultry.<br />

While we’re talking about enriched flour, let’s take a look at the whole concept of food enrichment.<br />

Enriched, implies that something has been added to food to make it better. When a nutrient is lost<br />

in processing and replaced, or is added for longer shelf life. Fortified foods are foods with nutrients<br />

added, that are not replacements.<br />

Here’s an interesting paragraph hidden in the sports section of the Virginia Pilot. “The NFL<br />

warned players that some meat produced in China and Mexico may be contaminated with<br />

clenbuterol, a banned substance”. With the rescinding of “Country Of Origin” labeling, and the<br />

world’s leading pork manufacturer now owned by the Chinese, I have concerns and would limit<br />

my intake.<br />

The response I’ve received about making Northeast North Carolina the “Organic Capital of the<br />

World”, has been remarkable. Many cancer studies have shown that one of our major crops,<br />

organic cruciferous produce, are potent cancer fighters. I believe that organic cruciferous produce,<br />

are going to be one of the most coveted commodities in the world as cancer rates rise. Northeast<br />

North Carolina, is ideally located to capitalize on our long growing season and brilliant farmers.<br />

Our proximity to a major seaport, railroad, major trucking hub and interstate highways, provide<br />

access to more than 50,000,000 million customers. I envision our farmers making their own deals<br />

with organic produce customers.<br />

With consumer demand for organic on the rise, this is the next big thing.<br />

<strong>Final</strong>ly, I had a wonderful time at the well attended, Relay for Life Survivor’s and their care<br />

provider’s dinner. Debbie Morrisette did her usual masterful job. Clearly, the American Cancer<br />

Society (ACA), deserves our support.<br />

Cruciferous produce is medicine.<br />
