In the Garden GETTY IMAGES Open For Tea Cakes and Symphytum! AS A CHILD I reckoned gardening was a boring, adults-only pastime but little did I know that I would become so hooked I am now a plantaholic. Quite how it happened I am not sure but when we moved to a beautiful old Wealden cottage with about an acre of what could never be described as garden I felt we were duty bound to make one. Lawns were encouraged and nurtured, trees planted, a greenhouse (never big enough) was installed and numerous beds dug in Wealden clay with no thought for the resulting hours of kneeling, weeding, planting, watering and feeding. Then the inevitable happened: friends persuaded us to approach the National Gardens Scheme (NGS). By asking people to throw open their gates to the public, the charity has raised gazillions for a wide range of UK charities. Unknown to us we would be joining the likes of super-cook Mary Berry, the charity’s president, who has welcomed visitors to her sumptuous garden for years. I am sure the first time she opened she did not fall into the trap, as we did, of underestimating the number of visitors, 359, having baked only three cakes! In Kent this year a record 156 gardens are opening, some for just one day and others for several. Gardens range from pocket handkerchiefs to rambling estates, alms-houses and even Canterbury Cathedral’s gardens. The total raised last year was an amazing £3million which was split between nine charities including Macmillan Cancer Support, Hospice UK, and Parkinson’s UK. Many of the gardens in our area have already opened this year but the gates to Goddards Green, Angley Road, Cranbrook TN17 3LR will be open on Sunday 8 July from 12.30pm to 4pm. Sissinghurst Castle Garden will open especially for the NGS on 1 October from 11am to 5pm. Crêpes filled with Mushroom, Ham and Camembert I have always had a soft spot for Normandy, parts of which are so like the Weald with orchards, rolling countryside and woods. A kindly chef once gave me this delicious recipe while eating in a wonderful auberge! INGREDIENTS Serves 4 For the crêpes: 125g plain flour 55g buckwheat flour 2 eggs 8fl oz milk 4fl oz water 2tbsp vegetable oil For the filling: 3oz unsalted butter 7oz brown mushrooms, thinly sliced 4 slices of the best quality ham, cut into small pieces 250g Camembert, rind removed 2tbsp crème fraiche Salt and black pepper WHAT TO DO 1 Put flour into a mixing bowl, make a well in the middle, add the eggs and a little milk. Whisk the flour/eggs while GETTY IMAGES gradually adding the rest of the milk, water and oil. Let the mix stand for at least an hour. If longer, cover and refrigerate. 2 For the filling, melt half the butter in a frying pan. Add the mushrooms and a little salt and cook for about five mins until all the moisture is lost. 3 In a saucepan melt the remaining butter on a low heat. Whisk in the flour and cook for 30 secs without letting it colour. Add milk and whisk constantly. Bring to the boil, reduce heat and simmer for 10 mins. Add the cheese and stir until melted. 4 Add mushrooms, ham and crème fraiche. Taste and add seasoning as required. 5 Make the pancakes by pouring enough batter to thinly cover the whole of the bottom of the pan. Cook until lightly golden on both sides and stack. 6 Spread the filling on each pancake and fold into a triangle. Allow two crepes per person. Bon Appetite! Emma Fraser Parish Cake • Summer 2018 35
