bread. Try roasting parsnips,<br />

carrots, sweet potatoes,<br />

acorns or butternut<br />

squash or pumpkin; and<br />

puree with vegetable<br />

broth for creamy-tasting<br />

soup.<br />

Think beyond green<br />

bean casserole and candied yams,<br />

and find favorite new vegetable dishes<br />

this year. Rely on roasting to bring out<br />

rich deep flavors in root vegetables<br />

like squash, potatoes and beets. Fire<br />

up the wok for Asian-inspired bok<br />

choy, sugar snap peas, eggplant, shiitake<br />

mushrooms or colorful rainbow<br />

chard. Include a salad accented with<br />

pomegranate seeds, dried cranberries<br />

or mandarin orange segments.<br />

Setting aside a traditional menu offers<br />

freedom to experiment with herbs<br />

and spices. Fresh thyme, rosemary,<br />

1/2 teaspoon minced garlic<br />

Wash, peel and chop sugar pumpkin<br />

into 3/4-inch cubes. Roast at 350 degrees<br />

for 10-15 minutes or until tender. Saute<br />

the carrots, celery and onions in olive oil<br />

on medium with garlic, sage, rosemary<br />

and a little salt and pepper. Add the kale<br />

and vegetable broth, and let it wilt on low<br />

heat. Stir in the white beans and cream<br />

of celery soup. Pour filling into a pie dish<br />

or oven-safe casserole. Place pie crust on<br />

top of filling, and crimp edges. Bake at<br />

375 degrees until crust is golden brown,<br />

between 35 to 45 minutes.<br />

Green Beans<br />

With Fennel & Tarragon<br />

Ingredients:<br />

1 pound green beans, ends trimmed<br />

Salt and pepper<br />

1/4 cup olive oil<br />

2 tablespoons lemon juice<br />

1 teaspoon minced garlic<br />

1 fennel bulb, thinly sliced<br />

1/3 cup fennel fronds<br />

1/2 cup roasted almonds, chopped<br />

2 tablespoons fresh, chopped tarragon<br />

Method:<br />

Place beans in a large pot, cover with<br />

water and bring to a boil. Cook 2-3 minutes<br />

until tender. Drain and run under<br />

cool water. Drain again. Whisk together<br />

oil, lemon juice and garlic, and season<br />

with salt and pepper. Toss beans, fennel,<br />

fennel fronds, almonds and tarragon<br />

together with the dressing immediately<br />

before serving.<br />

Persimmons<br />

& Brie Crostini<br />

Ingredients:<br />

1/2 baguette, thinly sliced at a slight<br />

diagonal (16 slices)<br />

2 Fuyu persimmons, peeled, halved<br />

and thinly sliced crosswise (16 slices)<br />

8 ounces Brie, thinly sliced<br />

2 teaspoons light brown sugar<br />

Fresh ground pepper<br />

Method:<br />

Preheat oven to 375 degrees with racks<br />

in top and middle positions. Place baguette<br />

slices on rimmed baking sheet, and<br />

toast on middle rack until dry and lightly<br />

golden, 8-10 minutes. Preheat broiler. Top<br />

each baguette with one slice of Brie, one<br />

slice persimmon and a sprinkle of sugar.<br />

Broil on top rack until sugar melts and<br />

cheese begins to bubble and turn golden,<br />

1-2 minutes. Serve with fresh pepper. ª<br />

What is probate? Apparently, it<br />

is not foremost in the minds of more<br />

than 50% of parents who have saved<br />

throughout their lifetime and acquired<br />

such simple assets as a house, a car,<br />

and a bank account. For others, assets<br />

may also include insurance benefits, investments and retirement benefits. Will<br />

their children acquire these assets upon their parents’ deaths? Yes, for the<br />

fortunate ones who can afford a probate attorney. Those with insufficient funds<br />

may discover that what should be theirs, ends up in control of banks or investment<br />

institutions resulting from home foreclosures, automobile repossessions, and<br />

bank accounts transferred to the state’s unclaimed property. Why?<br />

Due to daily financial and family struggles, parents are often too preoccupied<br />

to think about the future. Disregard for the future will impact the lives of their<br />

adult or young children when parents die. You have worked all your lives, but if<br />

you suddenly die, your children could face the unexpected and expensive cost for<br />

probate attorneys and court fees to legally retrieve their parents’ assets.<br />

In the U.S., greater than 50% of all parents fail to do estate planning<br />

and their assets end up in probate. Unfortunately, 25% of all children cannot<br />

afford the high cost for probate after their parents die because they may not<br />

You imagined your son would one day attend college and become an<br />

architect or computer engineer, but he now lives under a bridge on drugs<br />

with post-traumatic stress disorder resulting from the horrors of war. You<br />

imagined your daughter would one day be married and financially stable but<br />

now survives on welfare with 3 small children all from different dead-beat<br />

fathers. Every parent imagines their children having financially successful<br />

lives and many do, but too often they have not yet achieved financial success<br />

and are living on a shoe string budget at the time of their parents’ deaths.<br />

None of the children discussed above will be able to pay for the high cost for<br />

probate attorneys and court fees.<br />

schools are all fun stuff while your children are growing up, and if there is<br />

anything left at your death such the family home and $500 in the bank, who<br />

What is the cost of estate planning? It is typically far, far less expensive<br />

than the cost to probate assets at death. Estate planning is your responsibility<br />

Artists of All Ages<br />

Market attendees will experience<br />

a wide range of artwork at the<br />

Holiday Makers Market, from pottery<br />

to paintings to soap makers to<br />

natural makeup products. The event,<br />

which offers free admission, was first<br />

formed around Maria’s dinner table,<br />

as she is a pottery artist and her husband<br />

is a master craftsman.<br />

“We were sitting around the dinner<br />

table with friends, who are also artists,<br />

and we were talking about different<br />

ways they could get their brand out to<br />

the public,” she said. “One thing led<br />

to another, and this is how the Holiday<br />

Makers Market was born.”<br />

Maria visited art groups on<br />

Facebook and encouraged them to<br />

visit the event’s website to sign up for<br />

the event. This led to a “whole gamut<br />

of different artisans” offering several<br />

mediums of local art for the art expo.<br />

The public will have the chance<br />

to speak with the artists themselves,<br />

with some artists participating in<br />

make-and-take demonstrations, so<br />

the public can take home their own<br />

created art pieces.<br />

“I enjoy opportunities where you<br />

can get your hands dirty [with art],<br />

so any type of demonstration is always<br />

fun,” Maria said. “I think part<br />

of the attraction for the market will<br />

be that the public will actually get to<br />

meet the artists and talk to them. It<br />

connects you more to the art.”<br />

Another feature of the Holiday<br />

Makers Market is the Young Makers<br />

program that allows artists under age<br />

18 the opportunity to reveal their artistic<br />

talents to the public, some even<br />

for the first time.<br />

“The Young Makers program is<br />

something I really wanted to do to get<br />

our younger generation involved and<br />

to preserve some heritage art that is<br />

happening,” Maria said. “We have<br />

seven attending, and I think it will be<br />

good for other children to see the opportunity<br />

that, if they are interested in<br />

art in some way, there is a potential<br />

for them to earn a living doing it.”<br />

Excited Artists<br />

Maria is not the only one excited<br />

about the upcoming Holiday Makers<br />

Market. This sentiment is also felt by<br />

many of the event’s participating artists,<br />

as they look forward to seeing<br />

what others bring for art and interacting<br />

with the public.<br />

Illustrator Brandi Monard will be<br />

showcasing her own form of concept<br />

art, Brandelane, which is retro illustrations<br />

of theme park entertainment<br />

on paper goods like gift wrap and<br />

greeting cards and even tote bags.<br />

“The market will be filled with<br />

unique, local artists, and I’m excited<br />

to be part of them, as well,” she said.<br />

“I feel meeting the artist of the piece<br />

makes it more personable [for the<br />

customer], and you create a connection<br />

with the artist.”<br />

Jewelry maker Deborah Fallon<br />

found the posting on Facebook for<br />

market vendors and decided to take<br />

part with her sterling silver jewelry.<br />

“I think it should be well-received,<br />

with it being around the holiday<br />

shopping weekend,” she said. “I<br />

think Sunday is a good shopping<br />

day this side of town and a great<br />

opportunity.”<br />

swimming team placed third in a<br />

• The women’s volleyball team<br />

met Olympia High in its district<br />

championship as well, beating them<br />

Jan. 7, 2019 — Tax-Aide Volunteers<br />

Needed<br />

Volunteers are needed to help prepare tax returns<br />

and assist with filing requirements for AARP’s Tax-Aide<br />

Program. Client facilitators greet the older taxpayers<br />

and assist them in organizing their tax documents.<br />

Individuals with an aptitude for tax preparation, experience<br />

in filing personal returns, good communication<br />

and computer skills are urged to sign up. AARP membership<br />

is not required. An orientation is held in December,<br />

and training of volunteer counselors in the Orlando area<br />

begins around Jan. 7, 2019. For more information or<br />
