William Grant & Sons has become the first whisky<br />

distillery to index “sweetness” with the launch of<br />

their single malt whisky Alisa Bay. Such scientific<br />

measurement of the whisky is now achievable due<br />

to a new data-led distillation process created by Malt<br />

Master Brian Kinsman at William Grant & Sons’<br />

state-of-the-art distillery in Girvan, Scotland.<br />

In another first, Alisa Bay is the first Scotch whisky<br />

to undergo the newly coined ‘micro-maturation’.<br />

This process sees the new spirit first kept in small<br />

bourbon casks to age for up to nine months. This<br />

intense maturation process, where the malt is ‘cask<br />

started’ as opposed to ‘cask finished’ enables the<br />

good folk at Girvan distillery develop a greater depth of<br />

flavour, incorporating varying levels of sweetness and<br />

smokiness.<br />

Alisa Bay will be available for sale in December this<br />

year.<br />
