BEYOND 2032
...MANY OF
WHOM WERE
RISING STARS AT
THE VERY FIRST
EVENT AND HAVE
NOW BECOME
THE LEADING
HOTELIERS OF
TODAY.
First up this month, I must congratulate all of the outstanding members that nominated
for the 2023 Awards for Excellence. At our Awards Gala in June we saw over 1400
members come together to celebrate the very best Queensland has to offer. This event
marked the 30th year since the inception of the awards, and it is a true testament to
the longevity of the industry to see so many familiar faces, many of whom were rising
stars at the very first event and have now become the leading hoteliers of today.
With incredibly tough competition, we recognised Tracy Hatch of the Wellshot Hotel,
Ilfracombe as the Hotelier of the Year, The Langham Gold Coast as the Best Overall
Accommodation Hotel, The Rix Hotel from Charters Towers as the Best Overall Hotel
Regional and The Prince Consort as the Best Overall Hotel Metropolitan. We could not
have asked for a more diverse group of members celebrated as leaders in our industry.
This got me thinking about the upcoming Olympic and Paralympic Games in 2032.
So much focus and conversation is centred upon the games. What I believe we are
missing however is a greater vision beyond this event.
It occurs to me that we need to change our focus. While there is incredible
opportunities for members across the state as we welcome the world for a few weeks
in 2032, the opportunities beyond this date are just as important. Queensland has a
rare opportunity to establish a reputation for tourism and hospitality excellence that will
last well beyond the few weeks of the games.
Between now and 2032, many government programs will be looking to build
infrastructure, support business development, attract new investment and train staff.
As an industry, I would like to think that we can move beyond short-term pork-barrelling
and set up our state for long term prosperity. It will take every member to achieve this.
If a project is suggested, we should not automatically dismiss it or limit it to current
needs. Imagine what will be needed if our tourism numbers double or triple – not for
just a week, but for years. These are the kinds of big picture thinkers that our industry
needs. We have them, as we saw at the Awards for Excellence. It is not a 9-year sprint
but a marathon that needs to last beyond our lifetime.
REACHING OUT
IN A TIME WHERE MENTAL HEALTH IS AT THE FOREFRONT OF THE AUSTRALIAN HOSPITALITY INDUSTRY, EMERGING
TECHNOLOGY SUCH AS OK2PLAY? IS A SIMPLE AND EFFECTIVE OPTION FOR HELPING PEOPLE IN NEED.
QHA REVIEW | 12
In acknowledgement of Gambling Harm Awareness
Week, we thought it appropriate to shine a light on a
product helping to create safer gambling experiences
in venues across Queensland.
OK2PLAY? is the leading player protection platform for
the hospitality industry, and asks gamblers to confirm
if they are okay to play in a discreet and seamless
manner before they start gambling. Built by Australian
tech company GPT, the technology was developed
as a pathway for venue patrons to ask for assistance
while also increasing the response speed of staff.
The program prompts individuals to respond to the
question ‘OK2PLAY?’ at various points in a hospitality
location with gaming machines. While the patrons
who respond ‘yes’ will have a relatively unchanged
experience, for those feeling susceptible or uncertain,
the technology triggers a private in-venue response
from staff to assist, which will then allow the individuals
to be linked with support services.
CEO of OK2PLAY?, Bryan Te Wani, said the simple
and effective technology bypasses all of the barriers
society may put up for people seeking help.
“The anonymity of technology means people don’t
have to consider who they might ask, what they will
say or what that person might think if they approach
them for help.
“It removes all those hurdles to capture patrons in
action and prompt them to stop for a moment and
consider, ‘Am I really okay to do this right now?’,” he
said.
Many venues throughout Queensland and New South
Wales have embraced OK2PLAY?, with launches
further planned in other venues and hotels over the
coming months. In addition to protecting the people
that need it in a respectful way, the technology also
provides venues with staff protection, as the platform
acts as the first level of detection for identifying at-risk
individuals.
Bryan said most importantly, the platform helps bring
people together and allows those seeking help to have
a human-to-human connection.
“If a patron is no longer enjoying the experience and is
struggling in that moment, venues should provide an
exceptional level of care for these individuals and take
their responsibility seriously, for the patron, the staff
and the community.
“What OK2PLAY? provides is a tool for protecting
players while also protecting staff who have previously
been responsible for the incredibly difficult task of
recognising vulnerable patrons,” he said.

STAYING STRONG
NEW TABCORP AND QHA AGREEMENT WILL CONTINUE
DELIVERING EXCELLENCE FOR QUEENSLAND PUBS AND HOTELS.
QHA REVIEW | 14
The ink is fresh on a new Partnership Agreement
between Tabcorp and the Queensland Hotels
Association (QHA). The agreement cements Tabcorp’s
three flagship brands, TAB, MAX and SKY, as
Diamond Partners of the QHA for the next two years.
This agreement also reaffirms TAB’s position as the
exclusive wagering partner and sponsor to QHA. CEO
of Tabcorp, Paul Carew, said it is a position which
Tabcorp is very proud to maintain.
“We have cultivated a strong and enduring partnership
over the years, and now, we are thrilled to seize this
opportunity to extend our support, opening up new
avenues for innovation and mutual benefit for both
Tabcorp, the QHA and its members,” he said.
Chief executive of the QHA, Bernie Hogan, the
QHA is always seeking to obtain the best operating
environment for their members and patrons.
“As the Tabcorp brands have been strong partners for
many years, we were delighted to continue to work
with them to improve the offering right across our state
for members and patrons. We look forward to working
with Tabcorp over the next two years to continue to
improve the in-venue and digital experience across
media, wagering and gaming offerings,” he said.
This agreement is a continuation of a long running and
fruitful partnership between Tabcorp and the QHA.
Most recently, this partnership delivered significant
savings to the network, with TAB committing to fully
rebate the cost of SKY Racing subscription fees for
QHA members who are exclusive TAB venues.

QHA REVIEW | 16
The conference and expo is a highly regarded
event for Australia’s leading pub operators and
senior managers, and is usually held in Sydney and
Melbourne. Now in its seventh year, the summit will be
coming to the Sunshine State and hosted in the halls
24 to 25 July.
Established in 2016 and organised by Australian
a light on the best practices and new trends in the
industry while delivering ideas and inspiration to help
publicans grow their business.
This year the expo is being held over two days instead
of one, with an optional half-day study tour of some
of Brisbane’s most successful pubs being added
to the itinerary. The tour has been put in place to
inspire and provide networking opportunities for those
participating in addition to giving visitors a look into
running their venues.
In addition to the tour, panels, presentations and
directly influenced by the topics needing the most
THE SOUTHERN HOTEL’S NEW TERRACE VENUE
OFFERS A STYLISH OUTDOOR ALTERNATIVE
IT’S A CHILLY DAY UP ON THE RANGE BUT A ROARING FIRE IS KEEPING THE SOUTHERN HOTEL’S NEW TERRACE
ADDITION COSY AND CONVIVIAL.
QHA REVIEW | 18
The Terrace opened in October last year along
with fully upgraded toilet facilities and a renovated
sports bar at the beloved family-owned Toowoomba
establishment.
Owner of the Southern Hotel, Richard Bowly, said off
the back of Covid, he knew people were looking for
more outdoor area options with fresh air and plenty of
light.
“We wanted to create a space that would be warm in
winter, cool in summer and was really stylish.
“Our guiding principle for The Terrace was that it
would be attractive to and comfortable for our female
patrons.
“Our women customers are particularly discerning and
appreciative of details. So I told our interior designer,
Elena Harris, that I wanted it to be the kind of space
she would walk into and go ‘wow’,” he said.
Food is a key part of the ‘wow’ factor, and the bar is
serving 1500 meals a week – almost on par with the
restaurant.
“We have eight different nationalities working in our
kitchen, so we offer food that reflects that terrific
diversity including Indian, Vietnamese and Sri Lankan.
“If you can make an area work with food, then it’s
sustainable. People aren’t just coming for a drink,
they’re coming for a meal and to enjoy the outdoor
atmosphere,” Richard said.
Five big screens mean customers never miss their
favourite sporting events, and regular musical duos
and solo acts are popular. But on a winter’s afternoon,
the open fireplace is the biggest drawcard.
“Everyone loves the combination of outdoor ambience
and a roaring fire,” Richard said.
Richard Bowly is a long-time member of LMG, and
owns four Bottlemart shops along with the Southern
Hotel.
“LMG set the industry standard. They are incredibly
strong on merchandising and keeping up with retail
trends and very good at helping to make us profitable.
“The digital solutions they’ve implemented have made
a huge difference and I’m really excited about the
loyalty system LMG will be rolling out later this year,”
Richard said.
QHA REVIEW | 19
LATEST & GREATEST
Bernie Hogan, chief executive of the QHA with Richard Barker, general manager of Braille House
FEEL THE LOVE
FOR 126 YEARS THE BRAILLE HOUSE HAS HELD TRUE TO ITS MISSION OF EMPOWERING PEOPLE OF ALL AGES WHO
ARE BLIND OR HAVE LOW VISION. NOW, THE ASSOCIATION IS WORKING WITH THE QHA TO HELP MAKE THE HOTEL
INDUSTRY A MORE INCLUSIVE PLACE.
QHA REVIEW | 20
Braille House has a long and positive history with the
Queensland community, and first worked with the QHA
through a joint initiative during that memorable time
when everyone had to scan QR codes before entering
a venue.
The project aimed to improve inclusivity for blind and
low vision patrons in member venues throughout
Queensland, and made QR codes more accessible
for disadvantaged people who could scan them
independently due to the simple addition of a raised,
clear sticker.
Richard Barker, general manager of Braille House,
said approximately 900 QHA hospitality and tourism
accommodation venues across Queensland had taken
advantage of this initiative, however there are many
ways that the association can help the hotel industry.
“A significant way is by producing menus in large print
and braille. People who are blind or have low vision go
out for a drink and a meal the same as everyone else,
so it makes sense to have a menu on hand that they
can read independently. This is also a great way for
hotels to demonstrate to their patrons that they value
accessibility and inclusion.
“We know that QHA and its members are committed
to providing exceptional experiences for their patrons,
and we also recognise that good intentions need the
support of organisations like Braille House. We will
always be here to assist QHA members,” he said.
Of course, Braille House’s amazing work goes beyond
the hotel industry. In Australia, less than 5% of reading
material is produced in alternate format such as braille,
meaning for every 100 books a sighted person has
access to, a blind person has access to less than five.
LATEST & GREATEST
Richard said Braille House recognises that, and
understands through the power of literacy, braille
supports blind and low vision people to live
independently, attain their desired level of education,
increase their opportunities for employment and
interact with their communities.
“In providing the tools to be literate, we are
empowering blind and low vision learners, because
recent research also indicates braille literacy is uniquely
associated with well-being and self-esteem among
legally blind adults. Participants who learned braille
early in childhood reported the highest wellbeing levels.
“People who are blind or have low vision deserve
to have the same access as their peers to quality
literature. Can you just imagine being the child that
doesn’t get to read Dr Suess or Harry Potter because
it isn’t available in braille? Here, we are striving to
narrow the void and increase the availability of literature
in alternate formats, and it’s heartening to know that
our work matters and makes a difference,” he said.
Braille House found its core purpose all the way back
in 1897, when a group of seven ladies in Queensland
met after realising there were many children in the
colony of Brisbane who were blind and had no books
to read.
After Lady Lamington, the wife of Queensland’s
eighth governor, attended the second meeting and
agreed to be the group’s patron, the women made a
commitment to learn braille and produce twelve books
each, which were then displayed at an 1897 exhibition
before being gifted to the children.
Richard said the organisation’s library was established
two years later, and ever since the Braille House has
been providing reading material for blind and low vision
children and adults.
“In addition to teaching people how to read braille,
the organisation has grown to include a free lending
library which has thousands of braille and eBraille
volumes that are available to borrow. We also produce
‘Twin Vision’ books, where our team takes a children’s
picture book and adds braille to it so that the same
book can be read by both sighted and blind children
at the same time. That way, parents who are blind or
have low vision can also read to their sighted children.
“Beyond books, we are also experienced in the
provision of other large print and tactile resources such
as menus, health information, QR code indicators,
maps, models, emergency evacuation information
packs and local neighbourhood watch newsletters. In
programs with Brisbane and Ipswich City Councils, we
also transcribe information such as business cards,
documents, certificates and other important material
into braille,” he said.
Currently, The Braille House is actively working
to secure funding to produce a package of
materials designed exclusively for the Queensland
accommodation, hospitality and tourism industry.
These resources will help hotels and pubs learn crucial
information about accessibility and inclusion to support
blind or low vision patrons.
The association runs a myriad of colourful events to
raise funds for their cause. Richard said, with Lady
Lamington being their first patron, the association
proudly celebrates National Lamington Day on July 21
every year and invites Australians to get together, enjoy
a lamington and raise money for Braille House.
“On a bigger scale, last year we held our inaugural
Celebration of Friendship Golf Day and, with it being
such a great success on many levels, we are actively
planning our 2023 event which will be even bigger and
better.
“QHA members are warmly invited to join the event
and raise much needed funds for Braille House.
This year it will be held at Royal Pines on Friday 17
November, and the format will see a midday tee off
following an early lunch. There’s 18 holes of golf, drinks
and dinner, plus amazing entertainment. Also included
for under $500 per player is accommodation and a full
breakfast the following morning.
“Additionally, high on our list of priorities is to
commence a fundraising initiative to build a fit
for purpose facility to better accommodate our
organisation and allow us to continue to serve the
community through the great work we do,” he said.
WHERE LIFE TAKES YOU
WITH THE MERGING OF THE ACCOMMODATION ASSOCIATION OF AUSTRALIA (AAOA)
AND TOURISM ACCOMMODATION AUSTRALIA (TAA) FINALLY HERE, WE SAT DOWN
WITH ONE OF THE KEY INSTIGATORS BEHIND IT ALL.
QHA REVIEW | 22
As the CEO of both the TAA and the new peak
industry body – Accommodation Australia, Michael
Johnson sure has a lot of things on his plate, but said
he is quite thrilled with his new position, and that it was
very humbling to get through the process.
“The first opportunity to join the association came up
about four years ago. I had just finished doing the
redevelopment of Parkroyal out of Parramatta, so I
thought it was such a great chance after so many
years in the industry. I had been associated with the
Australian Hotels Association (AHA) before, as an
executive and on the New South Wales board, so the
opportunity to actually take the CEO role for TAA was
just a great transition for me.
“These roles give you the opportunity to really benefit
the industry as a whole. You get to have all of these
connections to members and find out what is keeping
them awake at night so you can make a difference.
I have to say, it was a bit of an initiation by fire, that’s
for sure, because I’d only been in the job for about six
months when we got hit by a pandemic and started
closing things up,” he said.
As someone who has over 35 years of experience
managing 5-star business hotels, resorts and tourist
attractions across two countries, you could say
Michael sports an in-depth understanding of the
hospitality industry. Hailing from Sydney, his invaluable
international insights, industry knowledge and skills
have helped give the Australian accommodation
industry the best possible representation at all levels of
government.
Preceeding all of that, however, Michael said his
beginnings with the industry goes right back to the
Southern Pacific Hotel Corporation in the 70s and 80s,
where he started as a trainee washing dishes who had
no idea where his life could possibly take him.
“I effectively worked my way through the hotel
departments, and it was after I’d been there for a few
years that the general manager asked what I intended
to do when I got out of there. I said I would probably
have to go back to work, but then he said ‘Why don’t
you call this work? I haven’t worked a day since I’ve
been here, I’m just loving it.’ So he put me through
an official traineeship, and I came out of it as a duty
manager and then worked my way from food and
beverage manager up to the general manager.
“I was managing hotels in my early 30s. I did that
for many years, and look, I was blessed. I managed
some great hotels, from corporate venues to resorts in
Brisbane City and right across Queensland. I managed
Travelodge and Royal on the Park for a short period of
time in addition to the Dockside Park Royal back in the
early 90s. I also crossed the ditch a lot and managed
hotels in Christchurch, New Zealand too,” he said.
For Michael, and many others in the accommodation
industry, it has been a long personal ambition
to see one united voice speaking for Australia’s
accommodation sector. The excitement has been
palpable for the amalgamation of AAoA and TAA.
A merger between the major national industry bodies
has been attempted multiple times over the years,
which is why, after years of organisation, finally
having a peak industry body representing Australia’s
economically important accommodation sector has
been met with a collective sigh of relief. Michael said
that the progression has been fantastic, and he still
pinches himself that the amalgamation has finally been
achieved.
FEATURE
“It’s been a long haul and I have to say it’s huge. We
had a great working party in place – Steven Ferguson,
CEO of the AHA, Ian Horne, CEO of AHA South
Australia and Richard Munro, who was the previous
CEO of AAoA.
“It was great timing that we were able to come
together under the direction of Scott Leech, who was
our national board president, and also Simon McGrath
and Julian Clarke, who were the president and vice
president of the AAoA board.
“They all came together and said this is the best time
to do it. So the working party was formed, which
allowed myself and Dean Long, who was CEO of
the AAoA, to just focus on member requirements. It
was full on – we were pushing into governments with
JobSeeker and JobKeeper and there was a lot to do.
“We made some great inroads though, and we had
some great successes for the industry. We were
probably working overtime for a while, but whether it
was state government or federal government, we really
felt like they were listening – they were very engaged
with us,” he said.
Along with being heavily involved in sorting out the
nuances of bringing together two highly active industry
bodies, Michael and the merging teams at the AA and
TAA are also continuing to do what they do best –
addressing issues to the government that keep hotelier
members up at night.
When asked about the big issues in the
accommodation industry that are going to be tackled
in the coming months at both federal and state
levels, Michael said there is plenty happening in many
different spaces.
“I was in Canberra last week and we had good
meetings with Senator Farrell, our tourism and trade
minister. It was great to be able to talk with him about
where we are at the moment because our international
tourism is certainly building, but it’s not building at the
speed we’d probably like it to be.
“There’s been a lot of banter around saying we had
all our eggs in one basket with China, but they were a
huge contributor in 2019 with 1.4 million visitors.
QHA REVIEW | 23
FEATURE
“We’ve had TAA over in China just recently, and Senator
Farrell is actually going across with a delegation as well,
not just for trade, but for tourism, because we really do
need to see that start coming back.
“There’s a few interesting things happening in the
state space as well, including leave and outsource
housekeeping, which we’re very dependent on in hotels.
Portable long service leave is now also being legislated
for the accommodation and food sector as well. So
that’s a bit scary and something that we’re looking at,
because that’ll start getting pushed into other states
as well.
“There is also affordable housing. That’s a big one
happening across all of the states and everyone’s really
feeling that at the moment. We’re seeing some reprieve
in staffing with working holidaymakers, because we’re
now slowly seeing them come back. I’m pleased to say
that we’ve got over 133,000 working holiday makers
back in the country, which is great. That’s only about
10% down on what we had pre-pandemic. So that’s
helping us in that labour force right around the country,”
he said.
It’s incredible, hard-working people like Michael and the
day-to-day business of the AHA and TAA that ensures
our industry maintains a positive line of communication
with both sides of government right across the country.
Which is important, because the closer the national
hospitality and tourism sector is to government, the
more successes the QHA will have for its members,
supporters and the industry as a whole.
“I often tell people to please contact me, because they
always say, ‘Oh, we don’t want to bother you,’ but that’s
why we’re here. We’re here to be bothered because we
need to know what the issues are so that we can be
fighting the good fight on behalf of our members.
“I’m looking forward to getting up to Queensland again.
We’ve got committees operating up there and it’s about
to be more of a joint environment, which is amazing as
well. There’s great representation for Queensland hotels
and there’s nothing but good things happening for the
future, so I’m really excited about that,” Michael said.
WOMEN’S SAFETY DURING
UPCOMING SPORTING EVENTS
QHA REVIEW | 26
July will mark the start of the FIFA Women’s World
Cup and it’s an exciting time for so many fans who will
be able to cheer on the Matilda’s at Suncorp Stadium
- especially the growing number of young girls who are
taking part in the game with their local football clubs.
It’s great to see the Sunshine State will be hosting
eight of the sixty-four matches, and we look forward to
seeing many more major sporting events being held in
Queensland over the coming years.
I would like to acknowledge that it will be a
particularly busy time for QHA members making it
an opportune moment to remind licensees about
their responsibilities regarding responsible service of
alcohol (RSA), to ensure your patrons have a safe and
enjoyable night out.
All licensees must ensure they are compliant with their
responsible service of alcohol (RSA) by taking the
below steps:
• Ensuring patrons are not supplied or able to
consume liquor if they are unduly intoxicated,
disorderly, or a minor
• Making clean potable water available for patrons
• Having policies and procedures in place that staff
can refer to confirm there are no non-exempt
minors on the premises
• Ensuring there are sufficient ID checking processes
in place
Equally, we all have a role to play in making our
venues a safe and inclusive environment for everyone.
Unfortunately, women are still experiencing sexual
harassment and other unwanted advances every day.
The Palaszczuk Government is firmly committed to
eliminating all forms of violence in our communities;
and ensuring women are safe on a night out is part of
that commitment.
On a separate note, licensees should have received
your licence renewal notice by email or post which are
due by 31 July.
It’s crucial that you do not let your licence lapse,
otherwise your liquor licence will be automatically
suspended and then cancelled after 28 days, should
the fee remain outstanding. Wine licenses will be
automatically suspended and then cancelled after 14
days if the fee remains outstanding.
If you have not received notification, please contact
OLGR on 1300 072 322. You can pay your fees online
through the LGFT online portal:
ONE VENUE’S APPROACH TO CREATING A
SAFER ENVIRONMENT FOR CUSTOMERS
Recently the Office of Liquor and Gaming Regulation
(OLGR) conducted a compliance inspection at the
Porters Plainland Hotel and were impressed with the
systems and procedures the hotel has put in place
under their safer gambling strategies.
As part of an OLGR initiative to showcase best
practice in the industry, we spoke to the venue about
how they are protecting customers from gambling
harm and being alert to possible money laundering
activity.
Porters Plainland Hotel’s Gaming Manager, Kiana
Austin, said the hotel’s approach to making the venue
safer for patrons comes from the top.
“Our General Manager Melissa Porter says she wants
customers to come to our venue and spend their
entertainment budget, not their grocery budget,” Mrs
Austin said.
The hotel has introduced a commercial IT solution
with a real time mobile interface which is improving
their capacity to record incidents, prepare reports, and
better prepare them for their compliance checks.
According to the venue, the mobile solution has
significantly improved communication between gaming
staff and management, in turn providing a safer
environment for patrons.
“We are now much better at supporting staff in
recognising the signs of gambling harm and that is
evidence in our compliance checks.
“It’s all about getting to know your customers better
and recognising when you may need to intervene or
offer some advice or help,” Mrs Austin said.
It’s important to note that many actions taken by
venues towards identifying and responding to signs
patrons may be at risk of gambling harm are also
relevant to identifying signs of potential criminal activity
including money laundering and counter-terrorism
financing.
Criminals are known to use machine gaming at pubs
and clubs to launder the proceeds of crime.
There are several things you can do to protect your
business and the community from serious and
organised crime.
If you see behaviours of concern, it does not
automatically mean your customer is breaking the
law. But it is a red flag, and you should look out for it,
manage it and consider reporting it.
Be aware if you are seeing something that doesn’t
seem right. It may involve a regular or a new customer.
Be on the lookout for unusual activity, including
customers who are attempting to buy winning tickets
from other patrons; patrons with no known relationship
sharing funds; asking for cheques or EFTs to be written
in someone else’s name; or regularly gambling large
amounts of cash and/or have very high turnover.
Venues looking for resources and information to help
their customers experiencing gambling harm can
access advice on the Business Queensland website.
• Venues should also familiarise themselves with
the developed Australian Transaction Reports and
Analysis Centre’s (AUSTRAC) materials, including:
• A new video which includes examples of what
behaviours to be aware of that may indicate
suspicious behaviour
• An updated brochure for pubs to print and share
with staff to outline AML/CTF tips to help protect
their business
• A streamlined version of the ‘be aware, be alert’
poster to help you understand the myths and facts
relating to money laundering and terrorism financing
• A myths and facts poster to help you and your staff
understand the myths and facts relating to money
laundering and terrorism financing.
LEGAL MATTERS with Curt Schatz
VOIDABLE BETTING TRANSACTIONS
QHA REVIEW | 28
With technological and sociological advancements, all
retailers and providers have been forced to consider
a revamp of their services and the mediums through
which those services are provided to the public. This
is no different for hotel operators, who have had to
continue to evolve their offerings in order to meet
the changing demands of their patrons. With such
advancements have also come various methods and
offerings through which patrons may get involved in
wagering.
Wagering is offered by a variety of providers
throughout Queensland and Australia through inperson
and online services. The essence of wagering
is the investing of money on an event or contingency
with the hope of a return on the investment based on
the result or outcome of that event or contingency.
The investment may either yield some or no returns
depending on the wager (including the amount of the
wager) and the outcome of the event or contingency.
There are many ways through which a person may
utilise the services of wagering providers to make a
wager, including in-person, by telephone, through an
automated device or online. All of these methods may
be susceptible to some form of error, whether it be of
a technical or clerical nature, which could result in a
person engaging in wagering to seek a return that is
more than the expected return for which they betted.
For example, a person may wager on a sporting
event and choose to place their wager online. The
intended wager is for $10.00 with an expected
return of $100.00, however, due to a system fault
the wager is recorded as $100.00 with only $10.00
being deposited. In the event the player has a winning
bet, they may claim for a larger return than they are
entitled to.
The wagering provider may have their own terms and
conditions which address such issues, however for
the hotel operator, the problem is then whether they
are required to pay the higher return to the player. This
can be a difficult issue to navigate, as on the face of it,
it would appear the player can claim and receive the
higher return.
However, this is not correct. The return on the player’s
investment is calculated from the amount of the
investment. Where this has been recorded incorrectly
due to a technical failure or other error, it will generally
render the bet void with a refund of the amount the
player actually wagered. This is regardless of whether
the player offers to pay the difference for their actual
investment and the investment recorded on their
wager.
Betting providers will have extensive terms and
conditions that will determine how such an issue may
be resolved. It can also depend on whether the error
is discovered before or after the event upon which
the bet is placed has commenced. If you experience
this issue, it is important to refer to the terms and
conditions of the relevant betting provider and then to
make a determination as to whether the bet is void.

GOOD SPORTSMANSHIP
THERE AREN’T MANY PLACES WHERE YOU CAN
STEP THROUGH THE DOOR AND INSTANTLY
FEEL THE COMPETITIVE SPIRIT OF COUNTLESS
FOOTBALL GAMES PAST.
Of course, what else would you expect from The
Caxton Hotel – one of Brisbane’s most beloved
pubs situated just a short walk away from Suncorp
Stadium and so closely tied to Queensland’s fierce
love of sport.
The family owned and operated hotel has firmly
established itself as state icon, and has been a
landmark watering hole for many sports teams
and their fans for over a century. Drawing upon the
original, exposed brick features of the building, the
hotel is a warm and inviting place, with plenty of
iconic Queensland sporting memorabilia lining the
walls and adding to its charm.
Hotel Administrator at The Caxton, Kath Potter,
said they would like to think it’s their family
hospitality that makes them stand out from the
rest, but in reality, it’s also their passionate sporting
association with Suncorp Stadium.
“Our emphasis on sport is obvious with the number
of big screens and televisions we have right across
the entire hotel.
INSIGHTS
“THESE DAYS, THE HOTEL IS DEEPLY CONNECTED TO STATE OF ORIGIN, WITH ALL OF
QUEENSLAND’S GAMES BEING PLAYED AT SUNCORP STADIUM.
“Our very loyal locals, fondly known as ‘the bar flies’,
are a regular mainstay of the hotel’s business. They
really present the venue more as a social sporting club
than a public house.
“Food is a very important component to The Caxton,
as we serve staple pub classics from our Café kitchen
and our Char Grill Steak Restaurant. Both have been
award winners multiple times at the QHA Awards for
Excellence, which we are really proud of,” she said.
Of course, the hotel has a rich history with rugby
league in Queensland, dating all the way back to
150 years ago, when its owner, Steve Farquhar, won
several first-grade premierships with Eastern Suburbs
Rugby League Club and played several games for
Queensland prior to it becoming the State of Origin
series.
The Caxton was previously built in 1876 on the other
side of the iconic Caxton Street, which was then called
Government Road. After a fire consumed the hotel
beyond repair, the building was rebuilt in 1884 on its
current site and has been a local favourite ever since.
Kathy said the original building has been refurbished
several times with major upgrades to the iconic
Cauldron Bar and Restaurant areas, all of which were
undertaken by the Farquhar family in 2007 and 2010.
“The Caxton means an awful lot to the Farquhar family,
as they have been operating the hotel for 26 years. As
Ross often says, ‘you think we’d know how to operate
it by now’.
“These days, the hotel is deeply connected to State
of Origin, with all of Queensland’s games being played
at Suncorp Stadium. We also have a wonderful
relationship with the Brisbane Broncos, as many past
players are among our regulars,” she said.
Along with its lasting tradition of staying family owned
and operated, The Caxton has also maintained its
reputation as a true ‘sportspersons’ hotel. Even from
its early days of operation, the venue has brought
a multitude of sporting activities to visitors – from
rowing clubs, to boxing matches, to its most infamous
relationship with Rugby League.
The Caxton has indeed found particular notoriety in
recent history with State of Origin matches, providing
fans of the sport with a party atmosphere in the true
Queenslander spirit. The venue is as famous as ever for
being recognised as the place to be on Origin night.
Kath said their hotel is unashamedly very connected to
the local community with sponsorships of local rugby
league, rugby union and touch rugby league teams.
“We are also very proud of our support for the local
music industry, as we feature many multicultural events
such as Seafood Festival, Brazilian Carnival and our
Craft Park Parties.
“The hotel is upgraded regularly in terms of furnishings
and paintings, however to accommodate more
community events we are currently undergoing major
renovations to our number one function area – The
Haunt.
“The carpark is also undergoing extensive refurbishment
as we use this area as a temporary beer Garden on
Suncorp Stadium event days. This area is extremely
popular with all of the football supporters,” she said.
With such a rich history steeped in sporting passion
and grand final celebrations, the hotel will surely be
there for every kick-off in the years to come. Kathy
said the owners are very proud of the legacy that is
The Caxton Hotel, and over the years they have done
nothing but improve its reputation as Queensland’s
leading sports hotel.
“This is all the more incredible when you consider that
the two brothers are always 100% correct, yet never
HIRING NEW EMPLOYEES
QHA REVIEW | 36
Hiring and training new staff can be a stressful process
as employers juggle a gap in their business, but it is a
process no employer can avoid.
Recruitment is an opportunity for both the employer
and candidate to determine if they could be a good
match for the vacancy. The onboarding stage is an
opportunity to train and set expectations with the
new employee, setting them (and subsequently, the
employer) up for the best chance of success.
This article provides an overview of key considerations
when undergoing the recruitment and onboarding
process. The QHA’s Employment Relations (‘ER’)
team can provide specific advice to QHA members
regarding the below considerations.
Reference checks
The recruitment process generally involves an
application, interview, reference check and offer of
employment. Employers are encouraged to complete
reference checks for all roles before making an offer of
employment.
Reference checks should ideally be completed with
the candidate’s previous supervisor or manager. It
is important that any questions are focused on the
candidate’s skills, performance, conduct, employment
type and length of employment.
Unpaid trials
It may be common practice in your business to use
unpaid work trials to evaluate if a candidate can
demonstrate the required skills for the vacancy.
Employers should think of this unpaid trial as a skills
demonstration instead, where the candidate is given
the opportunity to demonstrate their skills where
relevant to the position.
Employers are recommended to ensure that the
candidate is under direct supervision for the length of
the skills demonstration and the it is only for as long as
needed to demonstrate the skills required for the job.
Qualifications
If the position requires a mandatory qualification,
employers are encouraged to get, or site, a copy
of this before making an offer of employment. If
employees have a set period to obtain the qualification,
employers are encouraged to set reminders to ensure
that it is provided in time.
Applicable industrial instrument and
classification
Determining the industrial instrument, such as the
modern award or enterprise agreement, that applies
to a vacancy is an essential step in the recruitment
process to determine what conditions and entitlements
must be offered. If a position does not fall within
a modern award, such as the Hospitality Industry
(General) Award 2020 (‘HIGA’), it may fall under a
different modern award or be award-free. Once you
have determined the correct industrial instrument, you
will need to determine the applicable classification
level that applies based on the duty and qualification
requirements of the position. The QHA’s ER team can
assist employers to determine the correct industrial
instrument and classification which applies.
Employment type
Employers are recommended to assess which
employment type is the best fit for their needs and
the vacancy they are recruiting for. Under the HIGA,
the available options are casual, part-time and fulltime.
Each employment type has unique conditions,
particularly with regards to how the hours of work may
be performed, so it is important that employers are
across the specific conditions which apply.
Wage and salary
Once employers have determined the applicable
industrial instrument and classification, this will
provide the minimum remuneration amount that can
be compensated to an employee. Employees can
be remunerated through an hourly rate or a salary.
Employers should be wary that there are specific
provisions under the HIGA which apply to salary
arrangements. The QHA’s ER team can provide advice
on which arrangement will work best for the employer.
Employment contracts
Employment contracts set out the agreed conditions of
employment. Issuing a contract is an integral step as
it ensures both parties are on the same page of what
the employer is offering, and assists the employer to
meet record keeping requirements provided by the Fair
Work Regulations 2009. The QHA has employment
contract templates available for purchase on its
website. Employers are required to issue contracts for
all employees, including casuals.
Tana Thorpe EMPLOYMENT RELATIONS
Fair Work Information Statement
Before, or as soon as practicable after an employee
starts employment, the Fair Work Act 2009 (‘Act’)
provides that they must be provided with a copy of
the Fair Work Information Statement. If casual, they
must also receive a copy of the Casual Employment
Information Statement. Employers are not required
to provide these statements more than once in 12
months, which is relevant if an employee ends and
re-commences employment within 12 months.
Effective from 6 December 2023, employers will also
be required to issue the new Fixed Term Contract
Information Statement to new employees on fixed and
maximum term contracts.
Position descriptions
Position descriptions are a great tool for assisting
candidates and helping new and existing employees
understand the expectations of the position. The QHA
has position descriptions available for purchase on its
website and as part of its HR Manual.
New starter training - policies
Policies and procedures are an essential tool to
assist employers managing compliance risk and
communicate expectations to employees. Employers
should ensure they have clear policies in place and
that these policies are communicated to new staff. The
QHA’s HR Manual includes multiple template policies
such as:
• code of conduct
• sexual harassment, bullying and discrimination
• workplace health and safety
• fitness for duty
The QHA’s template policies also include an
acknowledgement section for the employee to confirm
that they have read and understood the policy.
Health and safety
Employers have a duty of care to employees under
the Work Health and Safety Act 2011 to provide a
safe work environment and provide workers with
information, training, instruction and supervision
needed to reduce their risk of harm at work. For new
employees this may include:
• training in safety procedures and responsibilities
• training in reporting incidents, hazards, injuries or
near misses
• evacuation procedure, emergency exits and first aid
Minimum Employment Period (MEP)
MEP is the period in which an employee cannot
lodge an unfair dismissal application to the Fair Work
Commission if their employment ends.
The MEP is often referred to as ‘probation’, however
MEP is the legal term. The Act prescribes that for
employers with fewer than 15 employees, the MEP is 6
months, for employers with more than 15 employees,
the MEP is 12 months.
Employers are recommended to keep track of an
employee’s MEP, provide proactive feedback, and
keep notes of performance or conduct discussions.
Setting reminders half way through their MEP and
one month out from its end is a good method for
reviewing whether the employee is on-track to pass
their upcoming MEP. The QHA’s ER team can provide
advice to members who are considering dismissing
an employee within their MEP, as there are other
external claims an employee may make regarding the
dismissal.
Uniform
Under the HIGA, if an employee is required to wear
special clothing the employer must provide it to the
employee or reimburse them for the cost. Special
clothing is defined in clause 26.6(a) of the HIGA and
common examples include uniforms (e.g. shirts with a
company logo) and items worn for health and safety
reasons (e.g. protective aprons or footwear).
Upon commencement of employment, the employer
may require the employee to sign a receipt for any
special clothing supplied or paid for by the employer.
Upon ceasing employment, the employer can use this
receipt and deduct from wages owed to the employee
the value (as stated on the receipt but allowing for
fair wear and tear) of any item of special clothing not
returned to the employer, unless it was damaged, lost
or stolen.
Further assistance
This article provides an overview of some of the
considerations when hiring new staff. QHA members
seeking further assistance or wishing to discuss a
specific employment relations matter are encouraged
The QHA’s HR Manual
The QHA’s HR Manual has been created to meet the
needs of employers in the hospitality industry. The
contracts, policies, position descriptions, and template
forms and letters, including a template induction
checklist. For queries about the HR Manual, please
SCHOOL-BASED APPRENTICESHIPS AND
TRAINEESHIPS – WHAT YOU SHOULD KNOW
UNDERTAKING AN APPRENTICESHIP OR TRAINEESHIP AT SCHOOL IS A GREAT WAY FOR YOUNG PEOPLE TO GAIN
HANDS-ON WORK SKILLS AND EXPERIENCE.
QHA REVIEW | 38
School-based apprenticeships and traineeships allow
students to study at school while getting on-the-job
experience through training and gaining a nationally
recognised qualification in a trade or occupation.
A school-based apprenticeship or traineeship will
generally commence in Years 10, 11 or 12 while
studying for their Queensland Certificate of Education
(QCE). Some of the most popular courses are
business, hospitality, fitness and sport, construction
and recreation. An average of 5000 Queensland
students finishing Year 12 have participated in a
school-based apprenticeship or traineeship.
Why do an apprenticeship/traineeship at school?
Students who study a apprenticeship/traineeship can:
• study at school and get paid on-the-job experience
while being trained and working towards a
qualification in a trade (apprenticeship) or
occupation (traineeship)
• be trained in trades like electrical, plumbing,
and automotive and industries like business
administration, information technology and tourism
• access learning opportunities that suit young
people with more practical learning styles
• gain skills towards a nationally recognised
qualification (Certificate II, III, or higher)
• have the chance to build a relationship with a
potential employer for when they leave school
• gain skills and experience to help them go on to
university down the track
How many credits does an apprenticeship or
traineeship earn towards the QCE?
Different VET courses and school subjects can earn
different points towards a student’s QCE. For a schoolbased
apprenticeship, the maximum credit available is
6, and for a school-based traineeship, the maximum
credit available is 8. The number of credits a student
can earn a will depend on the skills they learn and the
hours they complete before they finish Year 12.
When does a student complete their schoolbased
apprenticeship or traineeship?
Usually, it takes longer to complete an apprenticeship
or traineeship at school, because school-based
apprentices and trainees work fewer hours.
Students can generally complete their traineeship while
at school depending on the length of the traineeship,
the point the student started the traineeship and the
level of the qualification. If you don’t complete your
traineeship before graduating, you can continue by
converting it to part-time or full-time and continuing to
work with your employer until you complete it.
You can’t complete your apprenticeship during high
school because apprenticeships take longer. But you
can start one at school, convert to part-time or fulltime
once you graduate and continue to work with
your employer until you’ve completed it.
Your role as the parent or carer
If your teen wants to do a school-based
apprenticeship or traineeship, they will need your
support along the way:
• they may need your help in finding out how to enrol,
and in working with the school to set things up
• you’ll need to give your consent if they are under 18
years of age unless they are living independently
• while your teen is doing a school-based
apprenticeship or traineeship, you’ll need to stay in
touch with the school and your teen’s employer to
let them know if your teen cannot attend work or
training (due to illness, for example)
• if your teen changes schools, you’ll need to talk to
the new school to find out if your teen can continue
their apprenticeship or traineeship there.
School-based apprenticeships and traineeships
are not for everyone, so it’s important the student
considers all of their options before making a decision
about their learning pathway.

INDUSTRY ENGAGEMENT
ENERGY MATTERS
Energy continues to be a growing cost to all
Queenslanders and particularly to the hospitality
and hotel sector. For this article I have engaged the
expertise of long term QHA Partners, Trans Tasman
Energy Group (TTEG), who can assist members to
manage costs and identify new profit opportunities by
providing insights on how to:
• minimise energy charges through smart
practices including market timing, group
procurement, contract length selection, diligent
assessment of offers and never leaving your
contract renewal to the last minute
• minimise energy consumption through
onsite practices, monitoring equipment, voltage
optimisation and power factor correction
• effectively consider new energy initiatives
including solar, electric vehicles and batteries
• assess network (supply) charges from Ergon
and Energex — as demand patterns change, up to
1 in 15 sites are simply paying too much
• benefit from profit opportunities including
electricity on-selling to tenants and potentially
demand response if you have an on-site generator
or can shut down load
• prevent procurement disasters — TTEG can
provide insights to help you spot opportunistic
behaviour and to identify any rogues
• regard the electricity market’s operation, updates
on market conditions and pricing plus information
regarding any market wide regulated pricing
1 July price increase – small electricity customers
An example of regulated change is the recent
Queensland Competition Authority notification. From
1 July, small business customers will be charged an
extra 21.9% more in south-east Queensland (Energex
region) and a potentially an extra 26.1% more in
regional Queensland (Ergon region). Energy continues
to be a growing cost to all.
The increases will apply to customers billed via a single
bundled c/kWh rate. This includes bottle shops and
smaller hotels typically spending less than $25,000
p.a. The dollar amounts shown above appear to be for
low users of around 5 MWh p.a. As a bottle shop may
use 60 MWh p.a. the increases are potentially in the
range of $9,000 p.a. in south-east Queensland and
$6,000 p.a. in regional Queensland.
1 July price increase - large electricity customers
Larger hotels don’t escape a price review, but it will be
applied differently. Larger sites are typically billed via
an unbundled price with the energy, network (poles
and wires) and environmental charges billed by their
individual components to provide the total bill.
The Ergon and Energex network charge component as
approved by the Australian Energy Regulator (AER) will
also change from 1 July.
Ergon and Energex have multiple network tariffs, but
as a rough guide we predict a 6 to 8% increase on the
network charge component in south-east Queensland
and a 3% increase in regional Queensland.
Energy component
For larger sites, a major component of your bill is the
energy component. The Australian electricity market is
the most volatile in the world as the spot traded price
can move from $100/MWh (ie 10c/kWh) to $15,000/
MWh (ie 1500 c/kWh) in 30 minutes! This partly
explains why you have a short validity period when
looking at new contracts.
The chart below shows prices are currently being
traded to 2026. This means we can lock prices today
for any period to 2026. To take advantage of any future
lower prices, we suggest a procurement strategy in
place so you can lock in prices when they are low.
What can I do now?
• review your energy contracts, establish your end
date and have a procurement strategy in place
• for any electricity agreements expiring within
the next three years, be prepared to enter into
contracts from today
• take steps now that will help secure favourable
pricing and contract terms and ensure the financial
stability and smooth operations of your business
Should you require any assistance or guidance
regarding energy procurement strategy, the TTEG
team is available to support QHA members.
ACCOMMODATION NEWS
ONE STRONG VOICE FOR THE
ACCOMMODATION INDUSTRY
QHA REVIEW | 40
The amalgamation of AHA TAA (Tourism Association
Australia) and AAoA (Accommodation Association of
Australia) became effective from 1 July 2023.
The new entity is named Accommodation Australia
(AA) presenting one peak industry association
representing the accommodation industry throughout
Australia with a strong, united and effective voice to all
levels of Government.
The Fair Work Commission first considered and
approved an application for a “community of interest”
between the AAoA and AHA and agreed that the
proposed new rules provide for fair representation
of all accommodation members. Getting to this
point has required the AHA to change its National
Registered Organisation rules to create a National
Accommodation Division (Accommodation Australia)
to which any accommodation member of any State
branch of the AHA (including QHA) will automatically
become a member.
The amalgamation will establish one powerful
and unified national voice for the thousands of
accommodation businesses within the tourism and
accommodation industries throughout Australia by:
• maximising their influence and lobbying strength
with all levels of government;
• placing the accommodation industry into a strong
leadership position in relation to the tourism
industry, which is a major contributor to the
Australian economy;
• it will eliminate any potential division and
competition between two organisations in the
accommodation industry;
• bringing together senior and experienced personnel
from each organisation to jointly serve the one
cause in the interests of the combined membership;
• giving members throughout the accommodation
industry support on matters of common interest,
through access to the resources of the AHA’s
national and Branch offices (QHA);
• combining the resources and capacity of both
organisations to drive membership growth and
organisational influence.
AA mission statement
We will be at the forefront to advocate, unite and
influence for our members. We support them to
make informed decisions and proactively capture
opportunities that address accommodation industry
challenges, delivering growth for all.
AA vision statement
To lead sustainable enduring growth for our members.
AA purpose
Influential advocate for a better future.
QHA welcomes our new accommodation
members
As an accommodation member in Queensland, we
look forward to engaging and supporting you both in
person as we travel to members across the state or
through direct phone contact assistance. This includes
the provision of the following services:
• Your dedicated Accommodation Membership
Officer, Tom Fitzgerald, who focuses solely on our
members in this part of the industry to act as your
conduit to information and QHA services.
• QHA Training Department that has an expanding
list of training opportunities for your staff. The QHA
RTO is owned and managed by the QHA, and
can tailor training opportunities for your teams.
Both accredited and non-accredited (think microcredentialling
type courses) are offered.
• Employment Relations Advisors are available to
speak to all members by phone for free initially
and has templated material for every stage of the
employee relationship. If a matter requires Industrial
Relations representation, our experienced team can
also engage on a fee-for-service basis. With many
years of industrial relations negotiations behind
them, our team are experts in their field and are on
hand for members.
• Licensing advice and regulatory interpretation is key
to all members that hold a licence for liquor, gaming
or special facilities in Queensland. After servicing
over a thousand members across Queensland for
many years, there are few situations that we have
not encountered. As a member of the QHA, this
knowledge is now at your disposal with a phone call
to our team.

SUPERANNUATION
SUPER CHANGES FOR THE NEW FINANCIAL YEAR
QHA REVIEW | 42
It’s been a busy few months for superannuation
news, particularly following the Federal Budget
announcement in May. As the end of the financial
year approaches, we’re working to ensure Hostplus
employers are aware of important super changes that
are coming up.
Increase to the Superannuation Guarantee rate
The most time-critical change to be aware of is the
increase to the Superannuation Guarantee (SG). The
SG rate will increase from 10.5% to 11% from 1 July
2023. The rate is legislated to increase by 0.5% each
financial year until it reaches 12% on 1 July 2025.
Payday super legislation
The government also announced its intention to
change the way employers pay super. From 1 July
2026, pending legislative approval, employers will
need to pay super to their employees at the same time
as their salary and wages. Employers are currently
required to make SG payments at least quarterly, so
this could be a significant administrative change.
Increased tax on high super balances
A taxation change to super announced earlier this
year was also included in the May Federal Budget.
From 1 July 2025, any investment earnings on the
portion of a person’s balance over $3 million will be
taxed at 30%. Investment earnings on the portion of
a balance under $3 million will continue to be taxed
at 15%. Investment earnings in account-based
pension accounts will continue to be tax free.
Because Hostplus manages super taxation for our
members, this change won’t have an impact on
employer administration.
a few of the Scarborough
Harbour Brewing beers
and predict they are sure
to become a powerhouse
in the independent
brewing scene.
You will often hear me
raving about a double IPA
but perhaps seem less
enthusiastic about other
tipples. That couldn’t be
further from the truth,
particulary when it comes
to this all-Queensland
alcoholic ginger beer. It’s
nothing short of incredible.
If you’ve had your fill of
beer, there’s nothing more
refreshing then a super
spicey (that’s what I love
about it over and above
any others), fresh ginger
hit with notes of lime and
chilli. It’s the best alcoholic
ginger beer I have ever
tried by a country mile. As
I previously mentioned, it’s
also 100% Queensland
made.
What on earth is this and
where did it come from?
I knew nothing of this
rum before tasting it, but
it sure got my attention.
One minute I’m enjoying
an incredible Maroons
State of Origin victory and
decide to enjoy a victory
rum and the next minute
my mind is blown. What
an incredible rum enjoyed
straight with ice. Blended
from fine Barbados rum
and hand-selected spices,
it simply has to be tried
and savoured. Made with
pure Barbadian limestone
water or aged for up to
15 years in Grade A oak
bourbon barrels, the
complexity and depth of
flavour is stunning.
Felons have been
partnering with local artists
from the get go and this
brew celebrated the recent
Brisbane Street Art Festival
via the works of Rosie
Woods. It’s a stunning
can design with the brew
inside taking the art of
lager to a whole new level.
There is a beautifully sweet
and delicate spicy aroma
and taste along with a
smooth malt breadiness.
It is complex, incredibly
enjoyable and very
drinkable.

WEST COAST IPA
Aether Brewing
DAYGLOW IPA
Alefarm Brewing
Australian certified
organic rum made right
here in Queensland on
the Sunshine Coast.
Nothing but the purest
of ingredients with no
added sugar, sweeteners,
caramel, glycerine,
flavours, colours or
chemicals. 100% pure
unadulterated rum using
wild fermented, locally
sourced molasses,
Woombye water, dunder
and muck. Double pot
distilled, then aged for
a minimum of 2 years in
bourbon barrels emptied
of sherry and port. This is
one rum to take pride of
place in the liquor cabinet.
Strong notes of fresh
ginger, dark spices
and molasses deliver
an intense and fiery
ginger beer that pairs
perfectly with a high
glass rum such as Nil
Desperandum. It made
for the most incredible
‘dark and stormy’ I can
recall. Midnight Mixers
are proving to be world
beaters in my opinion.
Resinous pine, citrus and
grapefruit, just what you
love in a quality West
Coast style IPA. Moderate
bitterness and a soft
mouthfeel only add to the
appeal. My go-to-beerof-choice
at the moment
for my Friday afternoon
knockoff.
Made in Denmark, it’s
simply incredible it’s
travelled so far and kept
its freshness. Dry-hopped
with Strata, Azacca
and Simcoe, this IPA is
bursting with grapefruit
and blood orange notes.
It is nice and sour but
for my palate could have
been aided with a bit
more pithy bitterness.
A CRAFTY BUNCH
FOR THE LOVE OF BEER
AS THE FIRST BREWERY TO HAVE OPENED ITS DOORS IN IPSWICH IN OVER 100 YEARS, 4 HEARTS
BREWING HAS A PASSION FOR CRAFTING BEERS THAT REPRESENT THE VERY BEST OF THEIR HOMETOWN.
QHA REVIEW | 46
The craft brewery is known for taking local ingredients
(honey, rosella and carrots to name a few) and using
them to put unique, modern spins on traditional brews.
So, it was no surprise to hear that 4 Hearts have
begun focusing on more adventurous and difficult
styles of beer since we caught up with them last year.
In fact, the brewery has been working on several
exciting things in the past couple of months, namely a
red XPA called Solar Eclipse, which has seen a wave
of positive feedback from customers and venues.
Hugo Hirst, assistant brewer and sales representative
at 4 Hearts, said regardless of the ups and downs
of the industry, the brewery has been doing great
with their new focus on tasty, unique and high-quality
seasonal brews.
“Being contained in a beautiful heritage listed building
means that, to the causal eye, nothing has changed
here, but once you look a little deeper you’ll start
to notice subtle changes and improvements to our
process.
A CRAFTY BUNCH
“For example, our Sunshine Lager, an unassuming
pilsner with a rice addition for crispness, now lagers
for six weeks, meaning we constantly get a white
frothy head and a bright gold body – just like the beer’s
namesake,” he said.
4 Hearts has always been spurred on by a love of
the architectural and cultural heritage of Ipswich and
their eagerness to share it with others. The brewery
itself is founded in the city’s first source of water – a
redeveloped heritage building called 88 Limestone or
‘Pumpyard’ as it was known in the 1800’s.
In 1901, the site became the centre for technical
education in Queensland with the opening of the
Technical College. After it was abandoned in 2000, it
was purchased by Ipswich locals James and Tracey
Long in 2013, who restored the building to its former
glory while giving it a new, modern use as a brewery.
As an architect, George Brockwell Gill’s rich legacy
is evident throughout the city, so the brewery pays
homage to Ipswich’s history through their natural
brewed ginger beer, Gilly’s Ginger Beer, and through
their venue, Pumpyard Brewery Bar.
A CRAFTY BUNCH
RIGHT NOW, WE ARE IN THE PROCESS OF BREWING AN EXCITING WET
HOP BLACK IPA, WHICH USES FRESH HOPS PICKED ON THE DAY...
QHA REVIEW | 48
Hugo said the last keg of Solar Eclipse was recently
put on tap at the Pumpyard, but they will be continuing
work on several more exciting things in the next couple
of months.
“As a seasonal beer, Solar Eclipse was the perfect
Australian ale for bright autumn and winter days.
“It was an exclusive keg-only, so it was only shared
with our closest venues. We are planning to do a lot
more releases like it, so people are welcome to check
our Instagram @4heartsbrewing for brew-to-brew
updates on stockists.
“Right now, we are in the process of brewing an
exciting Wet Hop Black IPA, which uses fresh hops
picked on the day, so we are expecting that to be
another cracker!” he said.
Recognised as Best of Queensland Experiences 2022,
The brewery’s Pumpyard Brewery Bar is nestled in a
complex of heritage-listed red brick buildings and is
one of the most relaxed and atmospheric places in
Ipswich. The bar is open Wednesday to Sunday and
provides live music on the weekends, a smoker stall on
Sundays and, of course, great food and handcrafted
beer – because the best beer is consumed in the
shadow of the brewery where it was made.
Hugo said, for now, it’s business as usual at 4 Hearts,
so they will be continuing to focus on producing great
brews for everyone to enjoy from their great city.
“Incidentally, right now the back of my shirt says
‘Working for the Love of Beer’ and more relevant
words couldn’t be found for our brewery.
“The past year we’ve worked hard to have those
words reflected in 4 Hearts, and I couldn’t be prouder
of the team here for nailing the kinds of beers we have
been producing,” he said.

Apply to remove a licence condition
Hoteliers are reminded that they have the ability to
apply to OLGR to remove a current licence condition
which may be outdated and disproportionately
unfavourable to your venue compared to similar
venues in your region.
The application is Form 19 and does attract an
application fee, however the benefits of removing
restrictive conditions which may be inhibiting trade or
incurring unnecessary expenses would likely outweigh
the application fee. If you would like to review your
conditions and need assistance with the application
process please contact the QHA.
Annual Liquor License Fees
A simple courtesy reminder that annual liquor license
fees are due and payable by 31 July. Don’t be one of
the venues caught with unlicensed trade on or after
1 August. The fines are significant and OLGR are
unsympathetic to any excuse. If you have financial
hardship there are payment options available to you.
A SPIRITED BUNCH
NIL DESPERANDUM
[NIL DES-PER-AN-DUM] DO NOT DESPAIR; NOTHING TO DESPAIR.
From the creators of Sunshine & Sons comes Nil
Desperandum – reportedly the country’s first and only
Australian Certified Organic rum, inspired by the cane
fields of the Sunshine Coast and the fervent belief that it’s
about time Australia had a rum equal to the world’s best.
Matt Hobson is the founder and chief imaginer of CAVU
Distilling, which encompasses both Sunshine & Sons
spirits and liqueurs and Nil Desperandum, and said since
2020 they’ve been producing what is estimated to be the
third largest production of rum in the country.
“We are really committed to producing Australia’s finest
rum, and we describe it like that with good reason – it’s
delicious, with an amazing taste that comes from organic
ingredients. It’s a wonderful experience for drinkers
and has an elevated, enjoyable quality that people will
certainly recognise from imported rums, but possibly
never from an Australian rum.
“It’s Australian Certified Organic, meaning there’s no
chemicals used in the agricultural origins of the molasses
that we’re using, nor in production and packaging. The
rum is 100% pure and unadulterated.
“Unlike rum that’s been produced in Australia for a very
long time, we’re not adding any caramel for colouring,
and there’s also no sweeteners or things such as
glycerine, which are used to enhance the qualities of a
rum that isn’t potentially as premium as ours,” he said.
A SPIRITED BUNCH
In 1871 James Costar, chose to name one of the
Sunshine Coast’s very first watering holes ‘Nil
Desperandum’, the Latin translation of ‘nothing to
despair for’ and the first iteration of Australia’s iconic
expression of easy-going optimism – ‘no worries’.
Ever since then, Sunshine & Sons has been bottling
the warmth of Queensland’s carefree subtropical
coast while being inspired by close collaborations with
the local producers, great causes and communities
that make Australia the paradise that it is.
The distillery creates and shares their range of spirits
in the Sunshine Coast hinterland rainforest,
neighbouring Queensland’s iconic Big
Pineapple. Matt said they have had
phenomenal success with Sunshine
& Sons, which has a cult following in
the community.
“We have always had a strong
and historical connection with
the locals. In our township of
Woombye, the Nil Desperandum
pub took in thirsty travellers on
their way to the Gympie gold fields
and handed them a fermented ale
or spiritous liquor.
“We really like that story – it links
us locally and connects us to
the Aussie tradition of people
stopping in to have a drink
on their travels. Our beautiful
Tasmanian artisan copper spirit
stills are named after James
Costars wife, Sarah, and his
mother, Maria,” he said.
After trying their hand at making
rum, and subsequently winning
Best Pot Still Rum at the 2022
Australian Rum awards, CAVU
Distilling realised they could make
something truly exceptional.
Filled with an expressive and fullbodied
flavour, Nil Desperandum
is authentically Australian but
comfortably compared to the
most remarkable Caribbean rums.
Matt said as their main products
are further distributed into the
market, they are hoping to add
more awards to the shelf.
QHA REVIEW | 55
A SPIRITED BUNCH
QHA REVIEW | 56
A SPIRITED BUNCH
WE’RE ALSO ZERO-WASTE. AFTER PRODUCING OUR RUM, WE ARE LEFTOVER WITH A
COMPONENT CALLED DUNDER, WHICH IS DIRECTED TO ORGANIC CATTLE FARMS.
“Nil Desperandum is made with production techniques
and ingredients that directly reference some of the
greatest rums from Jamaica, for example, the use of
dunder and muck. They are components that we use
in fermentation to create elevated flavour profiles in
both taste and aroma.
“The rum is premium quality at an affordable price,
which we know is very significant. We are getting a
lot of interest because it’s a rum that hospitality venue
owners and publicans can easily embrace. We’ve
been very aggressive on pricing to make sure there’s
not necessarily a barrier there, so publicans won’t have
something sitting on the back bar that’s priced outside
the range of a typical drinker.
“We really focus on our rum’s quality regardless of if
they’re being mixed or not. Obviously, most rum in
Australia is consumed with a mixer such as coke or
ginger beer, but you’ll see this rum is absolutely good
enough to drink neat over ice,” he said.
Matt said one of the most wonderful things about
the rum and their business is that they are the only
distillery that can, hand on heart, tell people that
there’s no chemicals, additives or waste in their
production process.
“Other companies just simply can’t do that, so we
are very proud. We know that’s of interest to many
consumers and people wanting great quality rum in
their venues and pubs but not necessarily wanting to
go and order a Caribbean rum.
“We’re also zero-waste. After producing our rum, we
are leftover with a component called dunder, which
is directed to organic cattle farms. We’ve got this
beautiful holistic story about the liquids running off the
back end of production as a waste product and used
as a livestock food supplement in the dairy and beef
industry,” he said.
Nil Desperandum also founded the 1871 Club. In
addition to many other benefits, for $999-a-year
the club provides rum fanatics with five single barrel
releases. Matt said the club also allows members to
get a bit of an insight into their large variety of rums.
“We’ve got some very special barrels among the
several thousand we have on site currently. Obviously,
single barrel rums are often at a higher ABV than what
you’d find in a retail or bar setting, but they’re really
capturing the imagination of rum fans that, up until
now, haven’t had the same ability to support local
distillers
“Lovers of rum in Australia tend to spend their
money on exotic rums from overseas, including the
Caribbean. Of course, that’s traditionally been where
the best rums in the world have come from, but we
know that as consumers are finding out about our
brand, we are getting real interest in Australian rums,”
he said.
For anyone interested in sampling Nil Desperandum
fine spirits and witnessing the ageing of Australia’s first
Certified Organic rum, their distillery is open from 10am
daily to the public. Matt said they love showing visitors
around, and see first-hand everyday how locally made
spirits are being embraced in the industry.
“It’s probably not that long ago when publicans were
reluctant to devote taps to craft or local craft beer.
That reluctance certainly belongs in the past, but we’re
very excited that a Queensland publican can have an
independently owned artisan rum at an affordable price
and embrace what we already know is a movement in
other states,” he said.
SHOWCASING THE VERY BEST IN GAMING, TECHNOLOGY AND HOSPITALITY.
QHA REVIEW | 58
Your guide to AGE 2023 - what is the Australasian
Gaming Expo?
The Australasian Gaming Expo (AGE) is an annual
event bringing together the best gaming suppliers,
hospitality, flooring, technology, innovation, security,
construction, signage, food, beverage and more.
It provides the perfect opportunity for industry
professionals to come together and explore the latest
trends in gaming technology and venue management
and operation.
At the AGE, you will sample the latest games from
leading manufacturers and participate in exclusive
on-stand events and competitions. You’ll also have
access to innovative products and services to help
your business grow, plus, plenty of networking
opportunities to meet like-minded professionals from
all over Australia and New Zealand.
What events are on at the Australasian Gaming
Expo?
In addition to the expo, the event organiser, the
Gaming Technologies Association (GTA), also hosts
the AGE Seminars, an information-packed series of
seminars held across the three days of the event.
These seminars are intended to keep you informed of
the latest changes to gaming regulation and the latest
technology and innovation to support your business.
Various networking events and information sessions
are held across the three days, hosted by the
organiser, exhibitors, and vendors.
Tips for making the most of your time at the AGE
Seminar sessions run throughout the morning on
each day of the event. Plan your morning sessions
and then schedule your key meetings with suppliers
in the afternoon. The AGE mobile app allows you to
schedule appointments with exhibitors to discuss your
venue’s needs.
Allow some time to wander the floor and see the latest
products and services to develop new ideas and
connect with industry innovators.
If you’re time-poor, the best day to attend the AGE
is the final day of the event – Thursday. With fewer
crowds on Thursday, you’ll still get access to all the
best on offer from exhibitors and vendors, with less
time spent waiting to try out the latest equipment or
learn from industry specialists.
If you’re looking for an entertaining and informative
industry experience, then make sure you visit the
Australasian Gaming Expo!
Held over three days at ICC Sydney, from Tuesday
exclusive discounts and competition entry to visitors.
Here are four reasons to visit Keno.
1. Get a promo discount to boost customer
engagement
If your venue is planning its next in-venue promotion or
hasn’t tried local area marketing (LAM) yet, it’s worth
a visit to the stand to take advantage of the expoexclusive
discount Keno is offering visitors on the next
promotion they order.
The proven, most effective way to promote Keno
and increase sales performance is by utilising LAM.
Keno’s 2022 customer survey revealed 64% of
venues believed LAM promos were appealing to their
customers and almost 60% said their Keno sales
increased during the promotional period.
2. Find out how the Keno app improves
customers’ playing experience
The Keno app allows customers to enjoy an
immersive, digital playing experience. It essentially
digitises players’ retail tickets to deliver features
designed to build anticipation and create a more
rewarding and sensory playing experience.
The app allows players to watch games live, get realtime
win notifications, and have a digital history of
their retail tickets, so they never miss a win.
Another benefit is that it automatically enters
players into Keno’s ongoing Second Chance Draw
promotion, removing the need for scanning tickets
and entering online. This has been a popular feature,
with four of the five $1,000 cash prize winners in
April entering via the app.
