Finding your inner peas<br />
Peas are so often overlooked<br />
outside of being boiled and<br />
dumped on a plate of meat<br />
and three vege. This creamy<br />
pea salad is packed full of<br />
flavour with frozen sweet<br />
green peas, a mayonnaise<br />
dressing, crunchy onions,<br />
bacon, and cheddar cheese<br />
Classic Pea Salad<br />
Ingredients<br />
500g bag of frozen peas (not<br />
minted)<br />
⅓ cup mayonnaise<br />
2 tsp granulated sugar<br />
½ tsp salt<br />
½ tsp pepper<br />
1 small red onion, chopped<br />
1 cup shredded cheddar cheese<br />
100g cooked bacon bits (or 8<br />
rashers, cooked and chopped)<br />
Directions<br />
Remove the frozen peas from<br />
the freezer. Open the bag and<br />
place the peas in a colander.<br />
Allow them to thaw slightly while<br />
you mix up the salad dressing.<br />
In a large bowl mix together<br />
the mayonnaise, sugar, salt, and<br />
pepper with the red onion, cheese,<br />
and bacon bits.<br />
Add the frozen peas to the<br />
salad and stir well, but gently to<br />
combine.<br />
Chill the salad, covered, for at<br />
least one hour before serving.<br />
These pea fritters are easy<br />
to make and can be whipped<br />
up quickly. They taste<br />
delicious both hot and<br />
cold, so any leftovers are<br />
great for the lunchbox<br />
Pea Fritters<br />
Ingredients<br />
400g frozen peas<br />
3 eggs<br />
180g self raising flour<br />
1 spring onion – chopped<br />
55g crumbled feta cheese<br />
2 Tbsp chopped parsley<br />
Directions<br />
Boil the peas for<br />
4min and drain.<br />
Add the flour, eggs,<br />
spring onion and half<br />
of the peas to a food<br />
processor and pulse<br />
until combined.<br />
Fold through the<br />
remaining peas, feta<br />
cheese and parsley.<br />
Fry tablespoons of<br />
the mixture in a little<br />
oil for about 2min<br />
on each side until<br />
golden.
