Finding your inner peas
Peas are so often overlooked
outside of being boiled and
dumped on a plate of meat
and three vege. This creamy
pea salad is packed full of
flavour with frozen sweet
green peas, a mayonnaise
dressing, crunchy onions,
bacon, and cheddar cheese
Classic Pea Salad
Ingredients
500g bag of frozen peas (not
minted)
⅓ cup mayonnaise
2 tsp granulated sugar
½ tsp salt
½ tsp pepper
1 small red onion, chopped
1 cup shredded cheddar cheese
100g cooked bacon bits (or 8
rashers, cooked and chopped)
Directions
Remove the frozen peas from
the freezer. Open the bag and
place the peas in a colander.
Allow them to thaw slightly while
you mix up the salad dressing.
In a large bowl mix together
the mayonnaise, sugar, salt, and
pepper with the red onion, cheese,
and bacon bits.
Add the frozen peas to the
salad and stir well, but gently to
combine.
Chill the salad, covered, for at
least one hour before serving.
These pea fritters are easy
cold, so any leftovers are
great for the lunchbox
