Thursday November 4 2021 11 Shred chicken to make tasty dishes Shredded chicken is a good base for family meals. By adding other ingredients you can make a little go a long way Chicken pie Serves 4 to 6 Ingredients In advance: 1 large chicken, boil with 1 large onion (sliced) 2 large carrots (diced) 2–3 sticks celery (sliced) •Keep stock to use in sauce On the day: Break up chicken, peeling skin off as you go, and place pieces in casserole dish, then place onion, carrots and celery over top and make sauce, as follows: Sauce: 1 cup blue milk 1½ cups chicken stock Directions Topping: 1 cup breadcrumbs, place in bowl with: 1 large onion (chopped) 1 rounded teaspoon mixed herbs 27gm butter (melted) 3 rashers bacon (cut into small squares) Mix topping ingredients together thoroughly and sprinkle over top of pie. Bake, uncovered, at 180 deg C for 1hr. Melt butter, add flour, herb stock and pepper and cook for 1min. Slowly add milk, then the chicken stock, beat with egg beater to eliminate any lumps. Stir over medium heat until fully thickened (does not go terribly thick). Pour sauce over chicken/onion/ carrots/celery, then make top- 27gm butter, place in large saucepan 2 tablespoons 263 flour x 180 ½ rounded teaspoon green herb stock Pepper ping, as follows: Grill to brown. Simmer for 10min, then serve. Chicken and corn savouries Serves 6 12 slices white sandwich bread, crusts removed 200gm shredded chicken 330gm can creamed corn 2tbsp mayonnaise 1 spring onion (sliced) 2 eggs, beaten with: ½ cup milk 2 tablespoons parsley (chopped) Press bread into holes of muffins pans which have been well greased. Divide the shredded chicken and sweetcorn mixture evenly into the bread linings, scatter spring onion over top. Pour egg mixture evenly into the bread cases.
