12 Use Asian spices to bring out flavour If you have some left over roast meat here is an economical and flavoursome way to make sure it is not wasted Moroccan-style left-over roast lamb stew Ingredients Serves 6-8 2 tablespoons olive oil, place in frypan with: 15gm butter 2 onions (chopped) 6 cloves garlic (crushed) 1 x 400gm can chickpeas (drained and rinsed) 1 x 425gm can chopped tomatoes (any variety) Peppercorns 1 teaspoon turmeric ½ teaspoon ground ginger 1 teaspoon cinnamon Juice of 1 lemon (can use a lime) 450ml vegetable stock (can use chicken stock) 1 teaspoon salt Parsley or coriander – or a mixture of both (finely chopped) Mint – can use 2 tablespoons Mint sauce, or 2 teaspoons dried mint, or can use a couple of sprigs of fresh mint 1 teaspoon paprika ¼ teaspoon cayenne pepper Left-over roast lamb (diced) Mixed herbs and dried apricots (to sprinkle over top when done) Directions Heat oil/butter, add onion and garlic and gently fry for at least 10min until softened and coloured. Add chickpeas and tomatoes, stir. Lower heat, add pepper, turmeric, ginger, cinnamon and lemon juice, mix thoroughly. Add the stock and the salt, turn frypan back on and bring to the boil, then simmer for about 20-30 minutes until liquid has reduced right down, but don’t let it dry out completely. Add parsley (and/or coriander), mint, paprika and cayenne pepper, then Noodles will help bulk out this beef stir fry. AROMA: Moroccan stew will tantalise your taste buds. lastly add lamb and dried apricots. Heat through thoroughly. Sprinkle with mixed herbs and serve. Asia-inspired beef stir fry Serves 4 Ingredients 2 tablespoons cooking sake, place in jug with: 2 tablespoons dark soy sauce 1 tablespoon mirin 1 tablespoon caster sugar 1 tablespoon root ginger (grated) 2 teaspoons cornflour 2 separate tablespoons peanut oil, place 1 tablespoon in frypan (or wok) 750gm rump steak (trimmed and thinly sliced) 4 spring onions 1 bunch broccolini (halved) or equivalent of broccoli 1 red capsicum (seeded and thinly sliced) 3 yellow squash (thinly sliced) 400gm packet Udon Noodles (soaked, drained) Directions Combine the sake/soy sauce/mirin/caster sugar/ root ginger/cornflour, stir well and set aside. Heat first measure of peanut oil, stir fry beef in batches for 2-3 minutes each batch or until browned. Transfer to a casserole dish and keep hot. Heat second measure of oil, stir fry spring onions/ broccolini/red capsicum/ squash for 2-3 minutes or until tender crisp. Return beef to frypan with prepared sauce mixture. Stir fry for 2-3 minutes or until sauce boils and thickens. Simmer for 1-2 minutes. Serve on a bed of noodles. Lamb, ginger and broccoli stir fry Serves 2 - 4 Ingredients 2 tablespoons olive oil Up to 600gm lamb, thinly sliced 8 cloves garlic, thinly sliced 2.5cm piece root ginger, sliced into very thin strips 1 bunch spring onions, shredded 3 tablespoons sweet chilli sauce, place in mixing bowl with: 1 tablespoon tomato sauce 3 tablespoons soy sauce 1 pinch dried red chilli flakes 100 millilitres water 1 red capsicum, cut into very thin strips 1 head broccoli (cut up very small and microwave for 2min) Directions Heat oil in frypan or wok, add lamb in small batches, stir frying for 3min (add more oil if necessary). Remove lamb with slotted spoon and set aside in the warming oven. Add garlic, root ginger, spring onions, capsicums and broccoli to the frypan and stir fry for 1min, then add the three sauces, chilli flakes and water. Bring to the boil, then reduce the heat and simmer for 5min, then return the lamb to the pan and cook for a further 2-3min to heat through before serving.
