1¼ cups (300 g) Borniambuc ® cream

For the crumb dough

¾ cup plus 1½ tablespoons (110 g) cake flour

⅓ cup (75 g) superfine sugar

½ cup (1 stick/110 g) unsalted butter

For assembly in ramekins

2 teaspoons (10 g) unsalted butter

1 teaspoon (2 g) chili powder

1 tablespoon (10 g) almonds

½ teaspoon packed (3 g) light brown sugar

1 quantity (14 ounces/300 g)
