2 cups (250 g) all-purpose flour

For the almond cream

⅔ cup (1¼ sticks/150 g) unsalted butter

¾ cup (150 g) superfine sugar

1½ cups (150 g) ground almonds

3 large (150 g) eggs (⅔ cup)

For the pastry cream

1¾ cups plus 2 tablespoons

(450 g) whole milk

3½ tablespoons (50 g) whipping cream

2 vanilla beans, split and scraped

⅓ cup plus 2 tablespoons (90 g) superfine sugar

1½ tablespoons (25 g) custard powder
