12 Make tasty meals using mushrooms Mushrooms are plentiful, good value and versatile, they also add much flavour to dishes Mushroom and beef casserole Serves 6 ½ cup flour, place in large bowl 1500gm rump steak (cut into cubes, toss into the flour) 2 tablespoons olive oil 1 tablespoon olive oil 250gm button mushrooms (halved) 2 carrots (cut into thirds, then sliced) 1 large brown onion (sliced) 4 cloves garlic (crushed) ½ cup tomato paste 500ml beef stock Directions Dust the steak cubes in the flour. Heat oil in frypan and brown beef in batches, set aside. In the same pan, add second measure of oil, add onion, garlic, and mushrooms and cook for 3-4min until mushrooms start to brown and the onions soften. Add stock and tomato paste, stir to combine, bring to the boil, then remove from heat. Place beef in slow cooker, then pour hot stock and mushroom mixture over beef, add carrots, cover and cook on high setting for four hours, or low setting for 6-8 hours. Mushroom-stuffed schnitzels Serves 4-6 Ingredients 27gm butter, place in frypan and melt, then add: 24 mushrooms (peeled and halved or quartered) 1 bunch spring onions (sliced) 2 cloves garlic (crushed) 4 large slices, or 6 smaller slices plain wiener schnitzel, lay out on sandwich board and cover half of each piece with generous amount: Cracked peppercorns Rosemary Oregano Tarragon Thyme 1 cup cheese (grated) ½ cup flour 4 eggs, beaten with 8 tablespoons milk – can use trim or homogenised 2 cups breadcrumbs (may need more) Olive oil Directions Saute mushrooms/spring onions/garlic. Cover the peppered half of each of the schnitzel slices with quarter (if making four, or 1/6th if making six) of the cheese, then a quarter (if making four, or 1/6th if making six) the mushroom/spring onion/garlic mixture. Fold the plain half of the schnitzel over to cover the filling and pin together with kebab sticks. Dust each schnitzel thoroughly with flour, then dunk into the egg/milk mixture, then roll in the breadcrumbs. Repeat by dunking back into the egg/milk mixture, then roll a second time in the breadcrumbs so that each schnitzel has been double-dipped. Refrigerate for at least an hour before cooking to allow them to set, the longer the better, overnight is best. Can either fry in oil until golden brown all over and meat is cooked through or, for best results, line an ovenproof dish with non-stick tin foil, paint a generous layer of olive oil over it using a brush, place the schnitzels onto the tin foil, then pour olive oil over the top, painting it all over the schnitzels. Turn the meat over, and make sure every part of the schnitzel is coated in olive oil. Bake in the oven at 180 deg C for 40min; if possible, turn them over after 20min and bake for the remainder of the time. Mushroom and pumpkin risotto Serves 4-5 Ingredients Olive oil 1 large onion, chopped 4 cloves garlic, crushed 250gm pumpkin, grated 250gm (or a small plastic punnet) brown button mushrooms, peeled and halved 1 cup rice (uncooked) 4 cups vegetable stock Pepper 1 cup frozen peas 1 tablespoon pesto 3 tablespoons parmesan cheese Directions Above: Mushroom and beef casserole. Left: Mushroom and pumpkin risotto. Heat two tablespoons olive oil in frypan and saute onion and garlic, remove from pan. Put another tablespoon olive oil in frypan and add pumpkin and mushrooms, saute them for about 5min, remove from pan. Add another tablespoon of olive oil to the frypan, add the raw rice and cook for a couple of minutes, then add three cups of the vegetable stock and pepper. Bring to the boil, reduce heat and let it simmer until most of the liquid has disappeared. Add the remainder of the stock, return the onion/garlic/pumpkin/ mushrooms to the pan and add the peas. Let it simmer until all the liquid has been taken up, test the rice to make sure it’s done, and add the pesto and parmesan cheese. Heat through thoroughly and serve. Rising damp is an issue that affects many of our older properties which suffer from poor, or no, ground moisture barrier. In Canterbury especially, post-quake, many people have relocated to homes that suffer from rising damp which can be associated with health problems.
