We’ll be bringing you recipes from <strong>Club</strong> contribu<strong>to</strong>rs & from local fundraising<br />

cookbooks we’ve collected over <strong>the</strong> last quarter of a century. You’re welcome<br />

<strong>to</strong> send your own recipes, or on behalf of an organizaon that has a new<br />

cookbook, & we can help promote those cookbooks for free.<br />

Chicken Caccia<strong>to</strong>re<br />

2 Tbsp buer<br />

Chicken breasts<br />

1 medium onion, chopped<br />

1 garlic clove, minced<br />

Sauté chicken, 3 minutes per side. Remove chicken, keep 2 tablespoons<br />

drippings. Add vegetables and sauté. Add <strong>to</strong>ma<strong>to</strong>es, broth and seasoning.<br />

Return chicken <strong>to</strong> skillet and simmer, covered, for 20 minutes, unl tender,<br />

Serve over pasta or rice.<br />

Make ahead, chop chicken; mix with sauce. Can freeze up <strong>to</strong> 1 month.<br />

Thaw and bake at 350 degrees F for 30 minutes.<br />

Taco Dip<br />

4 oz cream cheese<br />

1/4 cup sour cream<br />

1/4 bole taco sauce (or less)<br />

shredded leuce<br />

Strawberry Banana<br />

Smoothie<br />

1 cup sliced strawberries, chilled<br />

1 ripe banana peeled & broken<br />

in<strong>to</strong> pieces, chilled<br />

8 oz low-fat vanilla yogurt<br />

1 green pepper, chopped<br />

1 can chopped <strong>to</strong>ma<strong>to</strong>es<br />

1/4 cup chicken broth<br />

1 1/2 tsp Italian seasoning<br />

Blueberry Crumb Muffins<br />

Crumb Topping:<br />

1 cup flour<br />

3 Tbsp light brown sugar<br />

2 Tbsp granulated sugar<br />

Muffins:<br />

1 3/4 cups flour<br />

2 1/4 tsp baking powder<br />

1/2 tsp salt<br />

1 cup granulated sugar<br />

grated cheddar cheese<br />

chopped green onion<br />

sliced olives<br />

Combine cream cheese with sour cream. Layer above ingredients on a<br />

serving tray and serve with nacho chips.<br />

1 tsp baking powder<br />

pinch of salt<br />

6 Tbsp unsalted buer, melted<br />

2 large eggs<br />

1/2 cup canola oil<br />

3/4 cup whole milk<br />

1 tsp vanilla<br />

1 1/2 cups blueberries<br />

1 Tbsp honey<br />

1/4 tsp vanilla extract<br />

3 ice cubes<br />

whole strawberries & banana<br />

slices, for garnish<br />

Place strawberries, banana, yogurt, honey and vanilla in blender. Process<br />

on medium unl mixture is smooth. Increase speed <strong>to</strong> high and drop ice<br />

cubes, one at a me through opening in blender cover. Process unl ice is<br />

crushed. Garnish if desired and serve immediately.<br />

Nutrion per serving: 137 cals; 4g protein; 1g fat; 29g carbohydrates; 51 mg sodium; 4 mg cholesterol.<br />

30th Anniversary book)<br />

Topping: Combine flour, brown sugar, granulated sugar, baking powder and<br />

salt. Sr in melted buer, <strong>the</strong>n pinch mixture unl it forms pea-size clumps.<br />

Set aside.<br />

Muffins: In a medium bowl whisk flour, baking powder and salt. In a large<br />

bowl, combine sugar, eggs and canola oil. Beat with mixer at low speed unl<br />

combined. Beat in milk and vanilla. Add flour mixture all at once and beat at<br />

low speed unl baer is smooth. Sr in blueberries. Spoon baer in<strong>to</strong> 18<br />

muffin cup with paper liners or spray 2 muffin ns. Sprinkle with crumb<br />

<strong>to</strong>pping. Bake at 375 degrees F for 30 minutes or unl lightly browned.<br />
