Satisfy your craving for chocolate<br />

Chocolate caramel<br />

almond slice<br />

Serves 10<br />

Ingredients<br />

250gm butter, softened, place in<br />

mixer with:<br />

1½ cups brown sugar (firmly<br />

packed)<br />

½ cup caster sugar<br />

2 eggs<br />

2 teaspoons vanilla essence<br />

1½ cups flour, sifted with:<br />

½ teaspoon baking soda<br />

½ teaspoon nutmeg<br />

240gm (2 x 70gm packets) jersey<br />

caramels (leave whole)<br />

2 x 70gm packets blanched<br />

almonds (leave whole)<br />

1 x 200gm block dark chocolate<br />

(broken into squares)<br />

Directions<br />

Cream butter and sugars, beat<br />

in eggs and vanilla essence. Stir<br />

in dry ingredients, then jersey<br />

caramels, almonds and chocolate<br />

squares.<br />

Spread mixture evenly into<br />

large springform pan that has<br />

been well greased and lined with<br />

four thicknesses of baking paper.<br />

Bake at 180 degrees C for<br />

50min, turn oven off, check<br />

to see if completely set, if not,<br />

leave in for another five minutes,<br />

remove from oven.<br />

When completely cold, cut.<br />

Chocolate cinnamon and<br />

pumpkin seed cookie<br />

brittle<br />

Serves 6 to 8<br />

Ingredients<br />

<strong>11</strong>3gm butter, place in large<br />

casserole dish and melt<br />

½ teaspoon cinnamon<br />

28gm chocolate (chopped into<br />

small pieces)<br />

½ cup sugar<br />

¼ teaspoon vanilla essence<br />

1 Egg<br />

1/3rd cup flour (sifted)<br />

½ cup pumpkin seeds<br />

Directions<br />

Add cinnamon to melted butter<br />

and stir, add the chocolate<br />

and stir until melted. Stir in<br />

sugar, vanilla essence and egg<br />

until smooth.<br />

Stir in the flour and beat well.<br />

Pour into small springform<br />

pan that has been well greased<br />

and lined with four thicknesses<br />

of baking paper and even out the<br />

top, scatter the pumpkin seeds<br />

evenly over the top.<br />

Bake at 190 deg C for 10min<br />

or until the brittle is just set.<br />

When cold cut or break into<br />

rough pieces like a nut brittle.<br />

Chocolate muffins<br />

Serves 6 to 8<br />

Ingredients<br />

50gm dark chocolate<br />

1½ cups plain flour<br />

2 tbsp cocoa powder<br />

1½ tsp baking powder<br />

½ cup cane sugar<br />

100gm butter, melted<br />

1 cup milk<br />

1 egg, lightly beaten<br />

Directions<br />

Preheat the oven to 200 deg C.<br />

Lightly grease a six-hole muffin<br />

pan.<br />

Cut the chocolate into six<br />

even-sized pieces.<br />

Sift the flour, cocoa and baking<br />

powder into a bowl. Stir in the<br />

sugar. Combine the butter, milk<br />

and egg. Stir into the dry ingredients<br />

until just moistened.<br />

Fill ⅓ of the muffin cups with<br />

the batter.<br />

Add a chocolate piece to<br />

each. Cover with the remaining<br />

batter. Bake for 20min, until<br />

they start to come away from the<br />

sides.<br />

Cool on a wire rack. Great<br />

topped with chocolate icing.<br />

Chocolate, honey and<br />

nut slice<br />

Serves 10<br />

Ingredients<br />

Base – 340gm butter, place in<br />

mixing bowl with:<br />

1½ cups sugar<br />

1 teaspoon vanilla essence<br />

3½ cups flour, sifted with:<br />

½ cup cocoa<br />

2 teaspoons baking powder<br />

Directions<br />

Cream butter and sugar, add<br />

vanilla essence and beat again.<br />

Stir in flour/cocoa/baking powder.<br />

Press into largest springform<br />

pan that has been well greased<br />

and lined.<br />

Bake at 180 deg C for 30min.<br />

Make topping when base is<br />

almost ready to come out of<br />

oven:<br />

Topping – 200 gm butter, place<br />

in large casserole dish with:<br />

1 cup sugar<br />

1 cup liquid honey<br />

4 cups mixed nuts, place in<br />

large bowl and mix with:<br />

800gm cark chocolate<br />

Heat butter/sugar/honey for<br />

10min until reduced.<br />

When base comes out of oven,<br />

sprinkle nuts/chocolate over top,<br />

then pour butter/sugar/honey<br />

over nuts/chocolate.<br />

Leave to go completely cold<br />

and set.<br />

Remove from springform pan<br />

and cut into wedges.<br />
