across South America, from Ecuador<br />
to Paraguay. How could this be? This<br />
question nagged Nick Norman, an<br />
exploration geologist by profession<br />

Guess where we found ourselves? Front row at the Roodepoort<br />
Theatre, watching African Dreams – a lovely ballet showcase<br />
featuring a crew of young talents from Dance Inc. It felt like<br />
basking in the warmth of African sunshine … the performance<br />
was pure magic! From timeless tunes like Pata Pata and<br />
Kumbaya to the modern beats of Jerusalema, each step just left<br />

Blooming<br />
business<br />
After more than two decades and countless celebrations, Dania de<br />
Wit still does a jolly jive every time she gets to work her floral magic.<br />
It all started with a plastic ice cream tub<br />
doubling as a cash register on a steel table<br />
under an umbrella.<br />
As the town’s beloved flower girl, Dania spills<br />
the petals on how her passion for flowers grew<br />
from humble beginnings. Dania de Wit was<br />
only 12 years old when her dad (aka superhero)<br />
opened a retail nursery… later called Colour<br />
Country Nursery.<br />
“The nursery was opened on our farm in<br />
Krugersdorp. So, I just remember the whole<br />
fam constantly looking out the house windows<br />
to see if we had a customer. It wasn’t long<br />
before the nursery became successful and<br />
soon enough got nicknamed the R1 Nursery<br />
because that’s what my dad sold a lot of the<br />
plants for.<br />
“I was very involved with the nursery from<br />
the get-go. As children, we were never<br />
allowed to ‘do nothing’. So, on Sundays after<br />
church, my dad used to host flower-arranging<br />
competitions for the family. We had to use<br />
flowers from the garden and my dad would be<br />
the judge. He also got us planting all kinds of<br />
seeds after dinners, and he always made it so<br />
much fun for us.”<br />
Needless to say, the seed was planted, and<br />
Dania pretty much lived in the nursery during<br />
her teen years. So, when the owner of the<br />
nursery’s flower shop (which was separate<br />
at the time) closed its doors within months<br />
of opening, 19-year-old Dania, who had just<br />
become a single mom, saw it as the perfect<br />
opportunity to step up and take on the<br />
challenge. And boy did she own it … winning<br />
Sanlam’s Business Achiever of the Year award<br />
barely five years in.<br />
Since then, Dania’s flower shop has been her<br />
main gig, pride and joy … but she’s also hustled<br />
on the side. She’s been her dad’s rental agent,<br />
lent a hand at his production farm and nursery,<br />
and even started her own wedding décor<br />
company, and guesthouse – which snagged<br />
LekkeSlaap’s award for the Top Place to Stay in
Joburg back in 2016, by the way!<br />
As a mom of two, Dania had a lot to juggle…<br />
but what goes up, must come down, right?<br />
In 2018 she had a mini-stroke. So, she scaled<br />
down… sold the nursery and let go of the<br />
guesthouse to focus on the flower shop. Then<br />
came Covid.<br />
“Although life stood still in other industries, it<br />
went on in the flower business. I knew I had<br />
to find a way to provide for my family. And so I<br />
plucked flowers from my garden (and later even<br />
the neighbour’s garden) to be able to make<br />
flower arrangements for funerals. I just couldn’t<br />
let my customers down.”<br />
And, it’s exactly this kind of can-do attitude<br />
that helped Colour Country Flora through its<br />
most challenging times. But, unfortunately, life’s<br />
garden wasn’t all roses from there. Even though<br />
Dania’s flower shop managed to weather the<br />
storm of the pandemic, her parents, sadly, didn’t<br />
make it. It was hands down the toughest time<br />
in her life. Luckily, anyone who knows Dania,<br />
knows that when life knocks her down seven<br />
times, she’ll get back up eight.<br />
Today, she just loves pouring herself into her<br />
new flower shop... going to flower markets,<br />
maintaining personal relationships with<br />
customers and making sure everything runs<br />
smoothly. She also prides herself in knowing<br />
her customers.<br />
“Over the past 25 years, I have come to learn<br />
exactly which flowers someone would like<br />
based on the colour of their hair, their haircut<br />
and the way they dress and speak.<br />
“I always try to reflect someone’s personality and<br />
style in their flower arrangements. I see flowers<br />
as God’s art and he gave us so much to choose<br />
from. And so each person can find a piece of<br />
themselves in His creation.”<br />
Behind the petals and stems, Dania is a selfconfessed<br />
neat freak. When she’s not at the<br />
shop, you’ll most probably find her at home,<br />
rearranging her cupboards and decluttering as<br />
much as she can. Because a clear space equals a<br />
clear mind, right?<br />
She also loves spending time with her children,<br />
grandchild, family and friends. And, perhaps<br />
even surprising them with a special culinary<br />
delight here and there. In fact, her hidden<br />
talents bloom like a well-tended garden<br />
too… from baking cakes (but only for her<br />
granddaughter, Lia) to offering sage advice to<br />
those in need.<br />
For Dania, success isn’t measured in wealth, but<br />
in the happiness of her children, the warmth of<br />
family, and the beauty of a life lived passionately.<br />

Seven things a flower wholesaler wants you to know<br />
1Cut-flower prices change daily. They are bought by flower<br />
agents (like me) at an electronic auction every morning. The<br />
price depends on the availability of the specific flower and<br />
demand thereof that specific day or week.<br />
2About 400 flower agents across the country go to the<br />
Multiflora flower auction which starts at 7am each morning.<br />
We sit in an auditorium room with four electronic clocks in<br />
front of us. Trolleys filled with flowers from around 600 growers<br />
from all around the county are then pushed through the<br />
auction room for us to see and (very quickly) bid on. All we have is a<br />
small computer, a buy button and earphones. There’s no time to send<br />
customers prices of flowers and everything is sold very quickly. So, if<br />
you’ve missed something, you’ve missed it. Around one million stems<br />
of cut flowers are sold daily on this flower auction.<br />
3Flower prices are never the same. It all depends on whether<br />
the flower is in season or not. If you get a price for a specific<br />
flower from one supplier in January and another price from<br />
a different supplier in June, the difference might vary greatly.<br />
The best approach is to compare supplier prices within<br />
the same week.<br />
4This makes it very difficult for us to quote in advance. That’s<br />
why florists will only be able to give you estimated prices in<br />
advance, and the actual price on the day. One tip I’d give to<br />
customers is to never give the same big order of a scarce<br />
flower to more than one supplier. This will increase your price<br />
as two flower agents will be bidding on your order.<br />

Dare to dream…<br />

Tucked away in the heart of Krugersdorp lies a<br />
slice of serenity known as The Cork Tree restaurant.<br />
And running the show is Simon Meintjes,<br />
who’s taken life’s curveballs and turned them<br />
into a delicious recipe for success.<br />
All his life, Simon Meintjes battled with Primary Immunodeficiency Disease<br />
(PID). This rare condition, a mix of genetic disorders affecting the immune<br />
system, cast a shadow over his growing-up years. Think dealing with regular<br />
skin infections, battling constant bouts of sickness, and making regular trips<br />
to the hospital… a rollercoaster ride that eventually led to Simon being<br />
homeschooled. These were but a few of the hurdles he faced. Amidst the<br />
uncertainty, though, a resilient spirit began to take root.<br />
“My dreams have always been more important than my disease. I learned from<br />
a young age that if PID was going to be a constant throughout my life, I would<br />
just have to find other ways to reach my goals. Needless to say, I’ve always been<br />
pretty set on making my dreams come true. Or to try at the very least.”<br />
And at 22, Simon defied the odds and opened The Cork Tree restaurant.<br />
Sophisticated. Tranquil. And serene. Complete with a lush garden, perfect for<br />
weddings and gatherings of all sorts.<br />
Step inside, and you’ll most probably be greeted by Simon himself – bursting<br />
with vibrancy, creativity and a genuine love for people. He’s not just the owner,<br />
but the heart and soul of the Cork Tree! When he’s not busy running the show<br />
– managing everything from the kitchen to special events – you’ll find this Jackof-all-trades<br />
getting his hands dirty in the garden (and sneaking in barefoot<br />
strolls whenever he can). He even made most of the napkins, seat cushions,<br />
tablecloths, and runners himself too! Talk about hands-on!<br />
It comes as no surprise that Simon’s absolutely passionate about cooking. As<br />
the brains behind the menu, he wanted to give his customers something that<br />
would keep them coming back. And boy, did he!<br />
“My favourite part has to be the people. If the customers are happy, I’m over<br />
the moon. I want them to experience good food and have good conversations<br />
with their loved ones. It warms my heart to see people just relaxing and having<br />
a good time.<br />
“I want them to let go of their cares when they walk through these doors. I am<br />
genuinely at my happiest when customers can feel that they can relax and let<br />
their hair down.”<br />
Yet, amidst the whirlwind of culinary pleasures and challenges, Simon still<br />
grapples with the daily realities of living with PID. Managing stress and<br />
maintaining a keen awareness of his body’s signals are essential to keeping the<br />
condition in check.<br />
For Simon, the disease serves as a constant reminder of life’s fragility, urging<br />
him to seize each moment. In his world, obstacles are not barriers but stepping<br />
stones to success. We chat with Simon for some more insight.<br />

Your signature dish? The star of my<br />
menu has to be the butter chicken<br />
curry with homemade naan. If a<br />
customer has had it once, they come<br />
back for it again and again. Another<br />
unexpected winner is the chicken<br />
parmesan… with a twist. It’s unique<br />
due to the fairly unknown ingredient –<br />
pink peppercorns which just takes it to<br />
the next level.<br />
What else is on the menu? I just<br />
love experimenting with different<br />
flavours and combinations, which is<br />
why I incorporated many different<br />
cuisines into my menu. I included<br />
South African, Indian, Italian and<br />
American dishes among others. Think<br />
bobotie phyllo rolls, curry meals and<br />
cheeseburgers... all with somewhat of<br />
a unique twist.<br />
Biggest lesson learnt? The most<br />
surprising lesson I learnt from running<br />
my own business is that it takes longer<br />
than you might think. To get your<br />
client base and relationships built. I<br />
truly didn’t realize that. It also takes a<br />
while to create a name for yourself. But<br />
hey, it’s all about the process, right?<br />
Advice for other young<br />
entrepreneurs? To approach other<br />
entrepreneurs who have done the<br />
work. Ask for their advice, guidance,<br />
motivation and support. I, for one,<br />
will do everything in my power to<br />
help and motivate an upcoming<br />
entrepreneur. No one really offered<br />
this to me. So, I would like to offer it<br />
to others. Also, they need to identify<br />
what motivates them. And let<br />
that encourage them and be their<br />
driving factor.<br />
How do you unwind? I love going<br />
out, hanging out with friends and<br />
socializing. I also enjoy movies,<br />
music and reading. I’m also very<br />
passionate about various fields of art.<br />
Music. Acting. In fact, I’m hoping to<br />
incorporate some theatre and music<br />
events into the restaurant space<br />
somewhere in the future. And, you<br />
might just find me concocting some<br />
homemade jams from time to time.
What words do you live by? It’s so<br />
important to always be grateful. And<br />
always keep a good perspective on<br />
your circumstances. It’s all about<br />
gratitude and perspective. If you can<br />
keep those two qualities in good<br />
balance, then you should be happy.<br />
There is always someone who has<br />
less than you, and there is always<br />
something to be thankful for. If you<br />
remember that, then everything<br />
feels lighter. It’s hard sometimes…<br />
I still don’t have everything I want,<br />
but I have more than some. And I’m<br />
grateful for that.<br />
One goal you’re never giving up on?<br />
My music and acting. I really want to<br />
see what can become of it. Even if it<br />
doesn’t work out, I just want to know<br />
that I gave it my all. I’m also writing a<br />
book. A memoir of what life has taught<br />
me so far. About life in general, my<br />
illness and all sorts of things.<br />
Simon’s famous Butter Chicken Curry…<br />
You’ll need: 1 large onion (diced); 3 Tbsp salted butter; 2 Tbsp butter<br />
chicken curry spice; 800g chicken breast (cubed); 2 Tbsp tomato paste; 1<br />
tin whole peeled tomatoes or tomato puree; 125ml fresh cream; handful<br />
fresh coriander leaves (rinsed, de-stemmed and chopped); 500g diced<br />
and roasted butternut; a pinch of cinnamon; salt and pepper.<br />
To make: Sauté onion and spice mix in butter for about 4 minutes, stirring<br />
constantly. Add the chicken together with the tomato paste and sauté<br />
for a further 5 minutes. Add the butternut and cinnamon, and stir in<br />
the rest of the tomato. Turn down the heat and simmer gently for 10-15<br />
minutes. Remove from the heat, add the cream and mix well. Sprinkle<br />
with coriander leaves, salt and pepper.<br />
For the naan bread...<br />
You’ll need: 1 1/2 cups flour; 1/4 cup milk; 1/4 cup plain yoghurt; 2 Tbsp<br />
sunflower oil; 2 Tbsp water; 1 Tbsp garlic (finely chopped); 1 tsp baking<br />
powder; 1 tsp yeast; a pinch of salt.<br />
To make: Mix ingredients together. The dough should be bread-like, not<br />
too soft, not too stiff. Let it stand to rise until it has doubled. Divide the<br />
dough into 4 to 6 balls and leave to rise some more. Roll out the balls into<br />
thin layers and fry on both sides in a medium-hot pan, until brown.<br />

Beetroot-cured gravadlax with horseradish<br />
sauce with Spier Frans K Smit white blend<br />
Gravadlax is a decadent snack perfect for a<br />
celebration. After you’ve cured them at home<br />
overnight, these silky pink fish slices will last<br />
for at least five days in the fridge, so you can<br />
prepare in advance of your party. Serve with<br />
crackers or seed loaf, creamy horseradish sauce<br />
or even some baby gem lettuce. Serves six as a<br />
light meal or starter. Prep and cooking time: 20<br />
minutes plus overnight curing.<br />
You’ll need: For the gravadlax ... 400-600g fresh<br />
trout fillets, skin on; 2 small beetroots, peeled and<br />
quartered; 1 cup muscavado sugar; 1 cup salt,<br />
medium grain<br />
For the creamy horseradish sauce ... 250ml sour<br />
cream; 2 Tbsp hot horseradish sauce (or 1<br />
Tbsp fresh grated horseradish); 5ml Dijon<br />
mustard (optional)<br />
To serve ... crackers of your choice or seed loaf;<br />
baby gem lettuce (optional)<br />
To make: Use a tweezer to pin-bone the fillets, if<br />
they are not already pin-boned.<br />
Place the beetroot in a food processor along<br />
with the sugar and salt. Process to create a<br />
coarse paste.<br />
Place a sheet of cling-wrap on a clean surface,<br />
then sprinkle 1/3 of the mixture onto it. Place half<br />
of the fillets on the paste, skin side down. Top<br />
with another 1/3 of the mixture and spread it out<br />
to cover the surface of the fillets. Now place the<br />
remaining half of the fillets on top of the covered<br />
fillets, skin side up (so they are lying meat-side<br />
together). Top with the final mixture, then with<br />
another layer of plastic wrap. Wrap up tightly and<br />
place inside a large-enough plastic container with<br />
a lid. Refrigerate overnight or for 12 hours, turning<br />
it over after 6 hours. The sugar/salt/beetroot<br />
curing mix will create a sticky syrup, so be careful<br />
not to mess it on your clothes.<br />
When the curing time is up, open up the fillets<br />
and rinse them under cold running water. Pat<br />
dry. Use a sharp knife to cut thin slivers on an<br />
angle from the tail side to the top, creating<br />
as much surface area as you can. Arrange on<br />
a platter and serve with the sauce and the<br />
crackers/bread/leaves.<br />
For the sauce, mix the sour cream, horseradish<br />
and mustard together in a small bowl.<br />
Serve with a glass of Spier Frans K Smit white<br />
blend - a Bordeaux-style white blend of 80 per<br />
cent Sauvignon Blanc and 20 per cent Sémillon,<br />
with a citrus and lime palate more tropical than<br />
herbaceous, and surprising hints of elder flower.<br />

It’s all about the lavish plating, the tastiest<br />
ingredients, the generosity of servings.<br />

Avo bagels<br />
Up your avo game. Switch the toast for a bagel<br />
and ... voilà ... the posh version. Perfect for a breakfast<br />
party. This makes four ... we serve with a glass of bubbles!<br />
You’ll need: 2 bagels, cut in half horizontally; 2 avocados;<br />
salt and pepper; plus ½ cup spreads, a small handful<br />
herbs, a sprinkling spice and about 3 Tbsp extra toppings<br />
- see suggestions below.<br />
To make: Toast the bagel halves in a toaster.<br />
Loadshedding tip ... toast them on a griddle or frying<br />
pan on gas. Or alternatively skip the toasting and serve<br />
fresh. Spread with your choice of spread.<br />
Mash, slice, dice or cut the avocados into shapes with<br />
cookie cutters and place on top. Season with salt and<br />
pepper. Sprinkle over herbs, spices and toppings.<br />
Try these combinations: Cream cheese or chunky cottage<br />
cheese with dukkah, honey and sliced avo • Hummus,<br />
feta, red peppercorns, avo stars and baby herbs •<br />
Mashed avo, red onion, chilli flakes, lime and coriander<br />

Greek salad platter with cheats poached eggs<br />
Guests coming over for lunch or an early dinner. This<br />
Mediterranean-style platter is affordable, quick to put<br />
together, and perfect to nibble on while sipping a cocktail.<br />
We’re also keen on the Mediterranean diet, so this works<br />
well for us.<br />
You’ll need: 4 eggs; salt and pepper; 2 handfuls cherry<br />
tomatoes; 1 small red onion, thinly sliced into rings; half<br />
a cucumber, cut into sticks; 100g packet Kalamata olives,<br />
drained; 2 rings Feta, broken into pieces; Greek salad dressing.<br />
To make: Make cheats poached eggs by pressing the middle of<br />
a perforated plastic wrap square into a small ramekin or bowl,<br />
leaving the rest of the plastic to hang over the outside edge.<br />
Spray the centre with cooking spray and crack in an egg.<br />
Bring the sides of the plastic overhang up and tie up tightly<br />
with kitchen string, ensuring there are no air bubbles around<br />
the egg. Take the plastic parcel out of the ramekin and<br />
repeat with the rest of the eggs.<br />
Bring a medium saucepan half full of water to a simmer on<br />
medium heat. Carefully add all the egg parcels and cook for<br />
4 minutes for runny yolks or until cooked to your liking.<br />
Carefully cut the parcels open under the knots and unwrap.<br />
Season with salt and pepper.<br />
Arrange the tomatoes, onion, cucumber, olives and Feta on a<br />
platter with the eggs. Serve with a Greek style dressing.<br />

fragrance of dwarf pot carnations.<br />
The names say it<br />
all. Pink Kisses. I love You.<br />
And Purple Wedding. These pretty<br />
and petite pot carnations, in romantic<br />
shades of pink, blush and purple, come<br />
from centuries of cultivation. The association<br />
of carnations with love, fascination and<br />
distinction goes back some 2000 years, when<br />
they were named ‘the flower of the gods’ by Greek<br />
philosopher Theophrastus. Like roses, many myths<br />
and legends surround the carnation, reinforcing<br />
its association with romance. They are woven<br />
into wedding bouquets and celebratory<br />
wreaths, are worn in buttonholes, and<br />
are the official flower for Mother’s<br />
Day. Pot carnations…what’s<br />

Modern pot carnations are compact and bushy, producing<br />
masses of bicoloured double flowers above grey-green stems<br />
and leaves. They can be planted as a showy border, are<br />
ideal for gravel gardens, and are hardy plants for patio<br />
containers and hanging baskets. They are perfect gift<br />
plants and can be grown indoors. Unlike the older, taller<br />
carnation varieties that need staking and pinching,<br />
pot carnations don’t have to be fussed over.<br />
Pink Kisses produces long-lasting tiny,<br />
bicolour flowers in sugar pink with<br />
a darker pink centre and a delicious<br />
fragrance. Plants grow up to 35cm high<br />
and wide, and the pickable blooms<br />
are long lasting.<br />
I Love You is a living bouquet in shades of deep pink, soft<br />
pink and rose through to white, as the flowers change<br />
colour as they mature. Butterflies, bees and other<br />
pollinators love this fragrant carnation. It’s a frost tolerant<br />
carnation and works well both indoors and out.<br />
Purple Wedding has single flowers in shades of pink and purple, with<br />
a frilly white edging. The flowers cover this compact plant so that it<br />
looks like a bouquet but lasts a lot longer. When grown indoors or on<br />
the patio it needs plenty of bright light. As a garden plant it stands out<br />
as an edging for a bed, in full sun to semi-shade.<br />
Easy to grow<br />
• Pot carnations need four to five hours of full sun.<br />
Plant in well composted soil that drains well. • Space<br />
plants 30cm apart and plant the crown of the plant<br />
level with the surface of the soil. No need to mulch -<br />
the stems like to be free of lingering moisture. • Once<br />
established, plants are drought tolerant and should not<br />
be over-watered. Let the soil dry out moderately before<br />
watering. The roots tend to rot in soggy soil. • Fertilise<br />
once a month and cut back after flowering for a repeat<br />
flush of flowers. • Container grown plants do best with<br />
morning sun and afternoon shade. Use a good quality<br />
potting soil that drains well and feed with Margaret<br />
Roberts Organic Supercharger after planting. Plants in<br />
containers need more water than those in the garden.<br />

their big day to be timeless yet trendy.<br />
Roses remain the wedding flower of choice, but unlike previous years, this year’s<br />
brides (and wedding planners) are favouring bouquets, arrangements and<br />
installations that pop with colour, yet are natural and organic.<br />
According to wedding planners, bold and vibrant colours resonate with<br />
couples who want a wedding that celebrates their story and their individuality.<br />
Bright colours are energising and joyful, what better way to celebrate the most<br />
memorable day of their lives, says rose grower Ludwig Taschner.<br />
Bouquets that seem freshly gathered from the garden evoke a sense of simplicity<br />
and spontaneity.<br />
Unlike traditional rose bouquets that usually feature a single colour, the latest<br />
trend offers space to play with different coloured roses. Combine them with<br />
other much loved garden flowers like baby’s breath, daisies, grasses and other<br />
foliage that also add texture. What could be more personal than incorporating a<br />
bride’s favourite roses, or those that she grew up with in her parent’s garden?<br />
The more colours the better, so feel free to break with convention when<br />
composing your bouquet. The secret is to get the balance right with rose blooms<br />
in complementary colours, offset with organic textures and hints of opulence.<br />
The effect? Both trendy and timeless.<br />

There’s a more natural, country feel to<br />

necessary for everything to be uniform. Composing<br />

differing containers creates visual interest and energy.<br />
