BLACK COD (SABLEFISH)
Sometimes marketed as “sablefish” or “butterfish,” Alaska black cod has a rich, distinctive
flavor and tender texture. To ensure top quality, special care is taken during harvesting
and processing. A growing favorite with the restaurant trade, Alaska black cod is marketed
year-round in a variety of forms. It is available fresh or frozen, either whole or dressed
(ranging from 3-5 pounds), and in fillets and steaks. Black cod is often marketed in either
cold or hard-smoked; some also sold in pickled form.
