ROCKFISH/SNAPPER (IDIOT)
Alaska’s waters support large populations of several species of rockfish (Sebastes). The
most popular is yelloweye (Sebastes ruberrimus). Because of the firm texture and mild
flesh—which turns white when cooked—rockfish can be prepared a number of ways.
Alaska rockfish is commonly marketed as fresh or frozen whole (or gutted) fish and as
fresh or frozen fillets.
