HALIBUT<br />

North Pacific or <strong>Alaska</strong> halibut (Hippoglossus stenol-<br />

epis) is the largest member of the flounder fish family.<br />

Characterized by snow-white, mild flavored, firm flesh, halibut is prized by restaurants and<br />

consumers alike. Halibut is commonly marketed fresh or frozen as steaks, roasts, fletches<br />

(fillets), or gutted whole.<br />
