HALIBUT
North Pacific or Alaska halibut (Hippoglossus stenol-
epis) is the largest member of the flounder fish family.
Characterized by snow-white, mild flavored, firm flesh, halibut is prized by restaurants and
consumers alike. Halibut is commonly marketed fresh or frozen as steaks, roasts, fletches
(fillets), or gutted whole.
