Chinook salmon, spring salmon Onchorhynchus tshawytscha
Prized for their color, high oil content, firm texture and succulent flesh, king salmon are
the largest and least abundant of the species. Average weight is 18 to 20 pounds but they
can be greater than 40 pounds. Length ranges from 30 to 40 inches. King salmon have
blue-green to black backs with black spots and silver sides. Black spots can be seen on the
back and tail. They have dark colored or black gums. Salmon over 30 pounds are likely to
be kings.
