PACIFIC COD
Sometimes marketed as “Pacific cod,” or “true cod,”
this white-fleshed, mild-flavored fish (Gadus mac-
rocephalus) compares favorably with its counterpart from the Atlantic. Pacific cod fillets
are available year-round frozen in 15 pound shatterpacks, or in 20–25 pound packages of
individually quick frozen fillets. Other forms include salted, split or filleted cod and stockfish
(salt cured and wind-dried split cod).
