Hand shaping and baking authentic<br />

breads from Mexico are specialties<br />

at La Guadalupana Bakery,<br />

which is located in the northern<br />

Atlanta suburb of Kennesaw, GA.<br />

Head baker Pako Rodriguez supervises<br />

a team of energetic bakers who<br />

are committed to producing only the<br />

highest quality fresh baked goods.<br />

Conchas, bolillos and teleras account<br />

for the three top-selling items in<br />

the bakery. <strong>Signature</strong> items beyond<br />

those products include such unique<br />

shapes as cacahuete (peanut), which is<br />

a bread made with a dab of strawberry<br />

filling on one end with sprinkles<br />

on top. Equally popular are yo-yos, a<br />

Mexican pastry that is typically filled<br />

with raspberry jam. It can be made<br />

with other flavors of fillings.<br />

From <strong>BakeMark</strong>, their bakery<br />

supplier, La Guadalupana uses many<br />

different premium ingredients such<br />

as Trigal Dorado Frozen Pastry Topping.<br />

Rodriquez praises the ingredients<br />

they use at the bakery because<br />

it allows them to produce authentictasting<br />

baked goods time after time.<br />

La Guadalupana features dozens<br />

of Mexican sweet breads and<br />

pastries that are produced carefully<br />

with time-honored traditions<br />

of hand shaping. Rodriquez and<br />

his team of bakers quickly roll out<br />

dough, press the dough pieces into<br />

desired shapes and transfer the<br />

items to baking pans, working like<br />

clockwork to fill each day’s orders.<br />

The Kennesaw bakery opened<br />

eight years ago and is poised for<br />

continued growth in the future. Rodriguez<br />

says they will continue to<br />

increase sales by remaining committed<br />

to baked goods that their customers<br />

know and love.<br />
