Topping (thawed)<br />

Directions<br />

Dulce de Leche Mousse:<br />

Take 4 ounces Trigal Dorado Pastry<br />

Topping (already whipped) and<br />

4 ounces of Trigal Dorado Dulce de<br />

Leche Topping and incorporate to<br />

make a dulce de leche mousse.<br />

Refrigerate.<br />

the Cake:<br />

1. Follow the easy one-step<br />

procedure for Tres Leches<br />

Cake listed on the bag of<br />

Trigal Dorado Tres Leches<br />

Cake Mix, then scale the batter<br />

onto a lined or greased<br />

cake pan.<br />

2. Bake layers in a moderate<br />

oven (330°-340°F) until firm<br />

in center.<br />

3. Remove the layers from the<br />

pan immediately after baking.<br />

Turning them over provides an<br />

even, flat layer that will help you<br />

make a level finished cake.<br />

4. Slice each layer in half using<br />

a serrated knife. You may<br />

choose to use three or four of<br />

these half layers to construct<br />

your finished cake.<br />

5. Place the half layers on the<br />

workbench cut side up.<br />

6. Ring the edge of the layer with<br />

a band of whipped topping.<br />

7. Now pour 4-5 ounces of Trigal<br />

Dorado Alegria onto the<br />

layers. Spread the dulce de<br />

leche mousse layering the<br />

cakes until all layers are filled.<br />

8. Ice with Trigal Dorado Pastry<br />

Topping and decorate by<br />

drizzling dulce de leche over<br />

the finished cake.<br />

Topping with your choice of fillings.<br />

To finish your delicious cakes, use Trigal<br />

ingredients<br />

50 pounds of Trigal Dorado Bolillo Mix<br />

24 pounds of ice cold water<br />

12 ounces of Trigal Dorado Fresh<br />

Yeast<br />

2 pounds of <strong>BakeMark</strong> All-Purpose<br />

Shortening<br />

Directions<br />

1. Combine all ingredients in<br />

a mixing bowl and using a<br />

dough hook mix for 1 minute<br />

on low speed to incorporate.<br />

2. Mix for an additional 12 minutes<br />

on medium speed or until<br />

dough temperature reaches<br />

82-85˚F.<br />

3. Cut and weigh to desired<br />

weight.<br />

4. Make up oval dough balls and<br />

proof in a medium humidity<br />

proofer for 30 minutes.<br />

5. Using a wooden dowel, make<br />

two indentations to form the<br />

telera.<br />

6. Proof for an additional 50-60<br />

minutes.<br />

7. Bake at 400˚F with 15 second<br />

steam.<br />

8. Continue to bake for an additional<br />

15-18 minutes.<br />

5 pounds Westco Mac Mix (Instant<br />

Macaroon Cookie Mix)<br />

1 pound, 8 ounces Hot water<br />

Directions<br />

1. Mix on low speed (2nd speed<br />

on a 4-speed machine) only to<br />

incorporate ingredients.<br />

2. For best results, use boiling<br />

water.<br />

3. Let rest 5 minutes before depositing.<br />

4. Bake at 350˚F to golden crust<br />

5. For Variation/Flavors: Divide<br />

the mix in 3 pounds, 4 ounces.<br />

Add 4 ounces of Pineapple<br />

Fruit-O (Westco). Add to the<br />

remaining 3 pounds, 4 ounces.<br />

Mix 4 ounces of Banana Fruit-<br />

O (Westco).<br />
