La maza es la parte que mayor carne presenta y también la másrica y jugosa. La babilla contiene menor cantidad de jamón al estardelimitada por los huesos fémur y coxal. Esta parte es menos jugosaque la maza, por lo que se recomienda empezar por ella el jamóncuando su consumo va a ser prolongado en el tiempo. La parte deljarrete y la caña habitualmente se utiliza para extraer taquitos de jamón,la textura de la carne es más dura y presenta sabores diferentes.3.4.The main parts of a jamón are: “la maza” the thicker end of the hamwith the largest amount of lean, juicy meat, which is visible and readyto cut when the ham is placed with the hoof facing up. “la contramaza yla babilla” the part of the ham with the least lean meat. La “maza” che contiene un maggior quantitativo di carneed è pure la piu’ ricca di gusto. La “babilla” contiene quantità di carneinferiore, essendo delimitata dalle due grandi ossa. Questa parte èmeno gustosa della “maza” , pertanto si consiglia da questa per il tagliodel prosciutto quando il consumo è destinato ad un tempo prolungato.Dalle parti “jarrete” e “cana” si estraggono piccoli tranci di prosciuttoche normalmente sono di carne piu’ dura e con sapori di erenti.5.6.Основными частями окорока являются: внешняя часть,внутренняя часть и подбедерок.
