Dai Weiqiang, from Wuxi, a city of<br />

eastern China, has opened a quickservice<br />

Vietnamese restaurant<br />

in <strong>Hangzhou</strong>. The restaurant,<br />

called Saigon Funyo, was inspired by<br />

how the iconic noodle soup is made and<br />

enjoyed in its place of origin, Vietnam.<br />

Mr Dai explained that phở has become<br />

a successful business model because of<br />

young Chinese people who pay more<br />

attention to their diet - phở is delicious,<br />

fresh and healthy. Phở consists of a<br />

fragrant broth poured over fresh rice<br />

noodles, topped with a handful of herbs,<br />

green onions, and slices of tender meat.<br />

The ratio between beef and noodles<br />

is perfect. The accompaniment is lime,<br />

chilli pepper, lettuce and beansprouts.<br />

Served simply, with nothing added.<br />

try, among many others<br />

dishes, phở bò (beef noodles), phở<br />

gà (chicken noodles), chả giò (fried spring<br />

rolls), gỏi cuốn (summer spring rolls) and<br />

chè ba màu (coloured sweet soup dessert).<br />

In order to keep the original taste of phở,<br />

the owner has sent some chefs to Vietnam<br />

to take part in cooking classes and join<br />

training courses conducted by Vietnamese<br />

chefs. Moreover, some ingredients<br />

like mint, noodles, Thai basil and lime<br />

are ordered from Guangxi province of<br />

China, where the flavour is the same as<br />

those ingredients found in Vietnam.<br />

hats converted into sparkling yellow<br />

lamps; the staff of the restaurant wears<br />

traditional Áo dài (Vietnamese dress)<br />

and conical hats. These are reminiscent<br />

of the beauty of Vietnamese women<br />

through many generations. The large<br />

framed photos on the walls are quite<br />

impressive, showing daily life in Vietnamese<br />

villages: kids riding buffalos in the fields,<br />

children gathered after school, the<br />

exquisitely tanned hands of farmers - all<br />

are the quintessential soul of Vietnam.<br />
