Limonenöl und etwas Salz fein pürieren.<br />
Lotuswurzeln in dünne Scheiben<br />
schneiden und kurz frittieren.<br />
Zubereitung 2: Die Hohe Rippe<br />
mit Butter und Togarashi vakuumieren<br />
und bei 80°C für 8 Stunden garen.<br />
Den Topi nambur säubern und mit<br />
einem kleinen Messer grob schälen.<br />
Die Schalen stücke blanchieren und mit<br />
etwas Zucker kurz braten. Die innere<br />
Knolle dämpfen und mit etwas Butter,<br />
Salz und Zucker fein pürieren. Für das<br />
Orangen fleisch 2 Orangen schälen, das<br />
helle Zwischen fleisch ausstechen und<br />
mit Butter kurz in der Pfanne braten.<br />
Wirsingblätter blanchieren, in Streifen<br />
schneiden und mit grünem Curry und<br />
Kokosmilch sautieren.<br />
Zubereitung 3: Ingwerbier,<br />
Saft von einer Limette, reduzierter<br />
Maracuja-Saft mit Zucker und einer<br />
Prise Salz zu einer Mari nade vermischen.<br />
Die Garten gur ken schälen,<br />
portionieren und mit der Mari nade<br />
vakuumieren. Für etwa 4 Stunden<br />
ziehen lassen. Für die Pannacotta das<br />
Kokospüree, Kokos milch, Sahne und<br />
Kokosblütenzucker aufkochen und<br />
mit Gurkenschalen 24 Stunden ziehen<br />
lassen. Anschließend durchsieben, mit<br />
Gelatine und weißer Kuvertüre andicken.<br />
Die Salatgurken für das Sorbet<br />
schälen, entkernen und in Würfel<br />
schneiden. Mit dem grünen Tee,<br />
Limettensirup, Birken- und Rübenzucker<br />
sowie der frischen Minze<br />
mischen und alles fein pürieren.<br />
Abschließend in eine Form füllen und<br />
die Mischung gefrieren lassen.<br />

1. Hamachi Ceviche with Hibiscus<br />
Onions and Avocado<br />
1 fresh, finely chopped hot pepper<br />
1 pickled ume, finely sliced<br />
1 tsp finely chopped capers<br />
80 ml ponzu<br />
3 tsp coriander oil<br />
1 tsp salt<br />
juice of 2 limes<br />
fresh coriander, finely chopped<br />
200 g hamachi<br />
2 Roscoff onions<br />
sesame oil<br />
50 ml hibiscus syrup<br />
50 ml rum<br />
50 ml smoked vinegar<br />
1 avocado<br />
lime oil<br />
lotus roots<br />
2. Prime Rib with Topinambur,<br />
Orange Pulp and Spicy<br />
Savoy Cabbage<br />
600 g prime rib<br />
50 g butter<br />
2 EL togarashi<br />
200 g topinambur<br />
salt, sugar<br />
2 oranges<br />
savoy cabbage<br />
green curry<br />
coconut milk<br />
3. Coconut Pannacotta<br />
with Cucumber Sorbet<br />
100 ml ginger beer<br />
50 ml reduced passion fruit juicet<br />
2 tbsp sugar<br />
juice of 1 lime<br />
salt<br />
4 small garden cucumbers<br />
150 ml coconut puree<br />
100 ml coconut milk<br />
250 ml cream<br />
coconut blossom sugar (to taste)<br />
3 gelatine leaves<br />
2 tbsp white chocolate coverture<br />
200 ml organic green tea<br />
20 ml lime syrup<br />
20 g birch sugar<br />
20 g beet sugar<br />
2 cucumbers<br />
1 bunch of mint<br />
Preparation 1: For the marinade,<br />
mix the hot pepper, pickled ume and capers<br />
with the ponzu, coriander oil and the juice<br />
of 2 limes. Flavour with salt and fresh coriander.<br />
Cut 200 g Hamachi into approx. 2<br />
cm cubes and leave to marinade for approx.<br />
5 minutes. For the hibiscus onions, slice 2<br />
Roscoff onions and sauté in sesame oil until<br />
colourless. Deglaze with hibiscus syrup, rum<br />
and smoked vinegar, and boil down. Puree<br />
the avocado with lime juice, lime oil and a<br />
little salt. Thinly slice the lotus roots and<br />
fry briefly.<br />
Preparation 2: Vacuum seal the<br />
prime rib with butter and Togarashi and<br />
simmer at 80 °C for 8 hours. Clean the<br />
topinambur and peel coarsely with a small<br />
knife. Blanch the pieces and fry briefly with<br />
a little sugar. Steam the inner tuber and<br />
puree finely with a little butter, salt and sugar.<br />
Peel 2 oranges, cut out the pulp and fry<br />
briefly in butter. Blanch the savoy cabbage<br />
leaves, slice and sauté with green curry and<br />
coconut milk.<br />
Preparation 3: Mix ginger beer,<br />
juice of a lime, reduced passion fruit juice<br />
with sugar and a pinch of salt to a marinade.<br />
Peel the cucumbers and vacuum seal<br />
with the marinade. Allow to infuse for<br />
about 4 hours.<br />
For the pannacotta, bring the coconut<br />
puree, coconut milk, cream and coconut<br />
blossom sugar to the boil and leave to steep<br />
for 24 hours with the cucumber peels. Then<br />
sieve, and thicken with gelatine and white<br />
couverture.<br />
Peel the cucumbers for the sorbet, remove<br />
the seeds and cut into cubes. Mix with the<br />
green tea, lime syrup, birch and beet sugar<br />
and fresh mint, and puree finely. Finally,<br />
pour into a mould and freeze the mixture.
