Delights from the Sea<br />

Fresh fish are quick to cook, delicious to<br />

eat, and very healthy. Learn what to look<br />

for to identify the freshness of the fish, or<br />

fillet, and familiarize yourself with different<br />

cuts of fish, and how to best cook them. In<br />

the class we will prepare our fish in some of<br />

the most popular styles, including baking,<br />

poaching, and grilling. Join us to experience<br />

wild salmon in green curry broth, rosemary<br />

tuna and white bean puree, lime marinated<br />

salmon on potato crisps with lemon confit,<br />

and roasted mahi-mahi with walnut crust.<br />

Workshop fee includes all food items, recipes<br />

and tasting samples.<br />

Crazy for Crepes<br />

Did you know that crepes can be either savory<br />

or sweet? Join Chef Joanna and demystify the<br />

crepe! Learn how to make the perfect batter,<br />

how to swirl the pan to achieve the correct<br />

form and thickness of the crepe and how<br />

temperature affects the outcome. In this class<br />

we will make appetizers, main dishes and<br />

desserts all using crepes! See for yourself how<br />

this hoity-toity dish can be an easy weeknight<br />

supper!<br />

Michigan Wine Country Tour<br />

October is harvest time for the wineries in<br />

Michigan. In this new class you’ll travel by<br />

motor coach to three wineries and have a<br />

chance to tour and taste at each of them. On<br />

the way, Cecil Robbins, certified sommelier,<br />

will share his knowledge of wine information<br />

about the wineries in Michigan and why vintners<br />

prefer the Southwest Michigan climate.<br />

We’ll begin with Tabor Hill Winery, nestled<br />

in the rolling hills of Buchanan, where you’ll<br />

have a chance to stroll through the vineyard<br />

and taste a variety of wines made in this midsized<br />

winery. Tabor Hill Winery has been<br />

voted “Best of the Region” by the readers of<br />

Shore Magazine. You can be one of the first<br />

to try the 2010 vintage! Our next stop is the<br />

small Hickory Creek Winery. You may have<br />

tried a sip or two of these wines at the Binder<br />

Park Zoo’s Corks for Conservation event.<br />

Hickory Creek has been crafting world class<br />

wines since August 2006. One of Michigan’s<br />

smallest wineries, the grapes for their wines<br />

are grown exclusively off Lake Michigan’s<br />

eastern shore. Following this tour we’ll stop<br />

at a local favorite eatery for a light lunch. No<br />

wine tour would be complete without a stop<br />

at Michigan’s most famous winery, St. Julian<br />

Winery. For over 90 years, award-winning<br />

products have been made at the Paw Paw<br />

location. Experience a tour and a taste in the<br />

place where family tradition and science meet<br />

to create the fine wines of St. Julian Winery.<br />

Travel Details: We’ll meet at the RMTC parking<br />

lot on Saturday, October 8th, between<br />

8:30-8:45 am and the motor coach will depart<br />

promptly at 9 am. We’ll return to the RMTC<br />

parking lot at approximately 4:15-4:30 pm.<br />

You must be at least 21 years of age to<br />

participate. Registration must be received by<br />

September 22, 2011, to guarantee a seat; all<br />

registrations after that date will be made on a<br />

space-available basis.<br />
