Dear KY <strong>State</strong> <strong>Fair</strong> Vendor:<br />

The Louisville Metro Department of Public Health and Wellness would like to welcome<br />

you to the 2013 <strong>Kentucky</strong> <strong>State</strong> <strong>Fair</strong>. We would like to take this opportunity to explain<br />

the parameters in which food and/or retail concessionaires will be asked to purchase a<br />

temporary permit and be inspected by KY Public Health representatives each day. Any<br />

retail food establishment that is sampling or serving potentially hazardous food items,<br />

(food required to be kept hot or cold), will need to purchase a temporary food permit<br />

unless you posses a statewide mobile permit and are operating in the approved mobile<br />

unit. Potentially hazardous food items include dips, spreads, cut melon, meats, cooked<br />

vegetables, etc. Stands that must wash utensils and other food equipment will also be<br />

expected to purchase a temporary food permit. Minimum requirements will include the<br />

use of a three compartment set-up to wash, rinse and sanitize dishes and equipment. A<br />

hand wash station which is equipped with water, soap and disposable paper towels, is<br />

also required to ensure safe food handling. Please see the enclosed handout detailing<br />

proper equipment and set up when operating.<br />

Representatives from each vendor booth will be required to attend a one hour temporary<br />

food service training class. The course will be taught in Freedom Hall VIP room #2. A<br />

list of dates and times is enclosed. Permits may be purchased starting on Tuesday August<br />

13, 2013; no permits will be sold prior to that date. Each booth operating is required to<br />

maintain a temporary food service permit. The Food Safety Trailer is located in the<br />

middle of the Midway adjacent to the permanent restroom facility.<br />
