of spring and a century-long history. Why? Because we invite you, dear guests, to celebrate the centenary of 

Premier Palace Hotel in the month of May. One hundred years is quite a long period of time, in fact, but Premier 

Palace still remains the best just like it used to be. A centennial anniversary is a good reason to turn around and

развития – началась ее реконструкция 

через более чем 20 лет 

с момента открытия после последней 

реставрации. Согласно 

плану, «Лондонская» к началу 

высокого сезона предстанет 

перед своими гостями в совершенно 

новом облике. Уже 

полностью завершены ремонт 

и отделка номеров 4-го этажа, 

стены которых украсили картины 

с видами Одессы XIX века. 

В марте был сооружен внутренний 

переход между гостиницей

выходя из отеля, пользоваться

Londonskaya Hotel entered the new 

period of its history; the reconstruction 

of the hotel began after more than 

20 years from the moment it was 

opened after the last overhaul. 

According to the plan, Londonskaya 

has to enter the high season in a brand 

new look without closing the hotel or 

creating inconveniences for the quests. 

The reconstruction and decoration works 

have already been completed at the 4th 

floor where rooms have been decorated 

with the paintings showing the views of 

Odessa in the 19th century. 

In March, the construction of the porch 

connecting the hotel premises to Formula 

Wellness Centre was completed. From 

now on, the guests staying at the hotel will 

benefit from a variety of services offered by 

one of the most popular wellness centers 

of Odessa where exclusive spa treatments 

help people relax and feel renewed.

now. The said packages include the

pleased to announce the launch of 

the new program. From now on, 

the members of Panorama Club 

(the frequent flyer program of UIA) 

can earn miles for accommodation

Hotels. Accumulated miles can be then changed to any benefits 

for the members of Panorama Club. It is already the second 

program of Premier Hotels and Ukraine International Airlines. 

In 2008, two special weekend packages including flight and

and Dnister Hotel in Lviv. Two companies plan to cooperate in

On April 11th, 2009, a renovated Helen Marlen 

boutique opened its doors to the public in the 

town of Yalta. The store offers numerous goods 

including a collection of clothes and footwear and 

some related products designed for the spring 

and summer of 2009. The said boutique is located 

at the former mansion of Karl Walter, a famous patron of arts, 

which is considered one of the most beautiful buildings in Yalta. 

This building can be found at the corner of the Yalta Quayside 

and Morska Street. Over its entire history dating back to the late 

19th century, the building was first a private mansion, then a 

royal residence and the luxurious Marino Hotel. Nowadays, its

The tradition of Sunday brunches dates back to the 

beginning of the 20th century and the place of origin for 

this meal was probably Britain. The concept is quite simple: 

breakfast + lunch = brunch. Brunch was first introduced 

to the public in 1941 in one of the luxury hotels on Fifth 

Avenue in Manhattan. That Sunday meal was a great success

One Hundred Years Ago

it built in one piece. In the end, two palatial 

buildings were joined together. You can still 

see the gap when you walk the corridors. 

Wherever you have to climb some stairs, 

you are crossing the border between the 

buildings. We talk about the corner block with 

the main entrance and the adjoining building, 

down the road, at number 5 Shevchenko 

Boulevard. Then, in 1909, it was still called 

Bibikov Boulevard. The corner building, where 

we have today’s main entrance, was always 

meant to be a hotel.

паломничества для всех молодых архитекторов. Это сооружение 

определенно содержало в себе элемент новизны. Два архитектора 

из Одессы, Минкус и Трупянский, создали высокий, 

изящный и достойный фасад. В 1908 году венский архитектор 

Адольф Лоос придумал провокационную фразу «украшение и 

преступление», имея в виду, что украшениям не место в предметах 

каждодневного обихода, включая здания. Фасад гостиницы 

Palast Hôtel являл собой оригинальный компромисс 

между ар-нуво, ар-деко и был чем-то совсем новым. За этим 

стилем будущее, соглашались молодые архитекторы. 

На башне гостиница гордо и зазывно сообщала свое название: 

Palast-Hôtel, это экспериментальная (или ошибочная?) 

игра слов, немецкое слово Palast (дворец) сочетается с французским 

написанием слова hôtel, с соответствующим ударением 

(^) над «o». В те времена слово «hotel» писалось именно 

так практически во всей Европе. Но оно никогда не ставилось 

вместе с немецким словом. Таким образом, название «Palast 

Hôtel» можно считать уникальным – эта уникальность сохраняется 

и в наши дни. 

Palast был построен как гостиница с рестораном, что по международным 

стандартам позволяло занести его в категорию 

больших отелей. Ресторан был огромный. Он простирался 

прямо от кафе у тротуара через весь вестибюль и уходил в

In 1912, the new corner building at 

Pushkinska Street and Bibikov (today 

Shevchenko) Boulevard became the target 

of pilgrimage for every student of architecture. 

There was something to this 

structure that was new. The two architects 

from Odessa, Minkus and Troupyanskiy, 

had created a tall, sleek, sober façade. In 

1908, a Viennese architect Adolf Loos 

had coined the provocative catch phrase 

‘Ornament and Crime’, promoting the 

deletion of ornament from everyday 

objects including buildings. The façade 

of the Palast Hôtel was a smart compromise 

between Art Nouveau, Art Decor, 

and something new. That must be the 

future, the young students agreed. The 

hotel tower proudly announced its name: 

Palast-Hôtel, an experimental (or erroneous?) 

play of words, combining the German 

word “Palast” (for ‘palace’) with the 

French way of writing ‘hotel’, using the 

appropriate accent circumflex (^) on the 

‘o’. This was of course the international 

standard for writing the word ‘hôtel’ at 

the time all over Europe. But never had it 

been seen in combination with a German 

word. This made the name Palast Hôtel 

truly unique, and it still remains a unique 

place nowadays as well. 

The Palast was built as a hotel with a restaurant, 

which makes it by international 

standards a fully self-contained grand 

hotel. Its restaurant was huge. It stretched 

from a sidewalk café through the entire 

ground floor into a one-story annex, a 

separate house in the courtyard. On top 

of that construction was a roof garden. 

Altogether one thousand people could be 

seated. Walking along the corridors, visitors 

could stroll into a dairy shop, a bakery, 

a confectionery, a drugstore, an ale 

tavern, a barbershop, a hatter, and so on, 

almost as we have it today. At the basement, 

there was a billiards room. Upstairs, 

all bedrooms could be connected to each 

other. The location, as it is today, was perfect. 

It was situated within a short distance 

to the provincial government and the offices 

of the Governor General, the district 

court, and the spiritual consistory on Vo-

Владимирке. Тут же – Крещатик с многочисленными банками 

и биржей, университет и главные театры города, Бессарабский 

рынок и – не в последнюю очередь – городской вокзал. 

Хотя гостиница находилась вблизи шумных центральных 

улиц, окна ее выходили на зеленый бульвар и тихую Пушкинскую 

улицу. Время от времени, внося приятное разнообразие,

место в списке лучших гостиниц Киева.

Я вдруг выяснил, что ем на завтрак не то, что ел всегда. С утра 

я предпочитаю фрукты, может быть, яичницу с ветчиной, потом 

круассан с джемом. В «Премьер Паласе» я неожиданно 

для себя беру на завтрак салат «под шубой». Это достаточно 

простой салат из свеклы, селедки, картошки, лука и майонеза. 

Сочная рыба изумительно сочетается с кружочками лука 

и сладковатой свеклой. 

Я сижу за столиком в холле на седьмом этаже – представительском 

этаже. Мне нравится здешняя атмосфера спокойствия 

и уюта. Иногда хочется побыть вне общества. На этом 

этаже есть свой сотрудник гостиницы, эдакий личный помощник, 

который помогает мне войти в Интернет, подбирает 

свежие газеты и оказывает всяческую помощь.

with its numerous banks and the stock 

exchange, to the university, and the city’s 

main theatres as well as to Bessarabskiy 

Rynok, a market place and, not to forget, 

the central railway station. 

Though the hotel was very close to the otherwise 

noisy downtown thoroughfares, its windows 

looked out onto the green boulevard 

and the peaceful Pushkinska Street. The occasional 

electrical tram, travelling up and down 

the boulevard, operated by Lomayer&Co, 

was even a welcome diversion. 

The manager of the hotel was Jacob Zellermeier, 

a citizen of Austria-Hungary residing 

in Kiev. The level of service could be 

compared to any famous hotel anywhere 

in Europe. And, indeed, Zellermeier 

would ensure that the hotel keeps up with 

the highest standards. It was immediately 

recognized as the leading hotel of the city, 

the yearly ‘Calendar’, an address directory, 

highlighted it prominently on top of all 

the best hotels of Kiev… 

THE GRAND EXHIBITION 

I discover an elemental change in my 

breakfast habits. At early hours, I am used 

to fruits, maybe ham and eggs, followed by 

croissant with jam. At the Premier Palace, 

I find myself trying Salat Schuba. Literally 

translated, it means ‘Fish in a Fur Coat’. It’s 

a simple salad with beets, herring, potatoes, 

onions, and mayonnaise. The creamy 

texture of the fish mixed with the bite of 

the onion and the sweetness of the beets is 

a near perfect combination.

Каждый гость – личность со своими маленькими предпочтениями. 

Мы стараемся узнать об этих прихотях и всячески им 

потакаем». Именно таким всегда было кредо гостиницы. Подобное 

отношение к клиентам Целлермайер установил еще 

в 1912 году. Поразительно, но эта практика работает и сегодня, 

когда весной, во время цветения каштанов, в Киев съезжаются

sheltered atmosphere up here. Sometimes 

you need your privacy. This floor 

has its own receptionist, a sort of personal 

assistant who manages my Internet 

access, takes care to get the latest newspapers, 

and assists wherever possible. On 

my way from my room up here, I have 

seen housekeeping ladies with little baskets 

walking around in the corridors. 

They are carrying the replenishments 

of the mini bars to the rooms. This is 

just one of the many captivating aspects 

housekeeping has to offer at this hotel. I 

like the little touches. Look at your laundry 

list. You can even ask for minor repairs 

like sewing on a button or inserting 

a zipper. They also offer a packing service, 

where your shoes are packed in shoe 

bags and your dresses neatly placed into 

cloth hangers. All this packages wear the 

elegant logo ‘Premier Palace – Nomen es 

omen’. The male-dominated clientele appreciates 

these services. 

Anna Semenkova, the hotel’s executive 

housekeeper, is in charge of all of this. After 

studying in Germany, she has accepted 

the challenge to run the Premier Palace’s 

housekeeping. She is in fact the lady of the 

house. “Your experience a lot of things,“ 

she smiles, “each guest is an individual 

and has his or her personal little preference. 

We try to find out about it, and support 

it.” That was always the credo of the 

house. Mr. Zellermeier introduced such 

mindset back in 1912. It is amazing to see 

it works today as people flock to Kiev for 

the Ukrainian spring when all chestnut 

trees stand in full bloom; for outstanding 

opera or ballet performances; or for big 

events such as the forthcoming European 

soccer championship or the European 

Song Contest (after winning siad contest 

in 2004, the country hosted Europe’s largest 

singing contest in 2005 and opened its 

borders and dropped visa requirements). 

Almost 90 years earlier, we remember, 

the city of Kiev had to cope with a similar 

task. Let us return to our history. Please 

excuse this little excursion, but I had to tell 

you about salat schuba.

The summer of 1913 came. With the 

All-Russian Exhibition, the city of Kiev 

wanted to build itself a memorial. It 

marked indeed a milestone in the history 

of the city, and the country itself. 

And all the features of the Palast Hôtel 

were put to test. The top municipal 

managers of Kiev had invested huge 

amounts to get the permission to host 

the fair. The entire area allocated for the

Известно, что почти 90 лет тому назад перед Киевом возникла 

аналогичная задача. Давайте вернемся в прошлое. Извините за 

этот небольшой переход в настоящее, но не рассказать о салате 

«под шубой» я просто не мог. 

Итак, наступило лето 1913 года. Киев должен был принять 

у себя Всероссийскую выставку и хотел, чтобы это событие 

по-настоящему прославило его. Выставка стала вехой 

в истории города, да и страны в целом. Серьезному испытанию 

подвергся и Palast Hôtel. Отцы города изрядно раскошелились, 

чтобы «поднять» выставку. Вся отведенная под 

нее территория была превращена в одну большую ярмарку. 

Эффект был потрясающий. Главный вход и прилегающая 

территория сохранились и в наши дни. Многие иностранные 

гости сравнивали выставку с Парижской и Венской. На 

территории в 26 десятин выставка-ярмарка была прекрасно 

оборудована. Цветочные клумбы, фонтаны с подсветкой, 

электрические фонари, с павильона навигации струил луч 

декоративный маяк. По всей территории выставки ездил 

электрический трамвай. В деревне развлечений находились 

кинотеатр, концертный павильон и большой ресторан. Чтобы 

сделать картину этого события более наглядной – хотя 

все равно ошибочной, – скажу, что Киевская тюремная администрация 

изготовила стенд в форме тюрьмы ХIХ века с тяжелыми 

воротами, крепкими стенами и сторожевой башней. 

Павильон собственноручно выстроили заключенные. Внутри 

находились разные поделки, изготовленные обитателями 

тюрьмы: от предметов мебели до крашеных фигурок из 

хлебной крошки. Эти экспонаты продавались как сувениры. 

Интересно, на что пошли вырученные деньги… 

Какой это был год! С огромным успехом прошла Всероссийская 

выставка, на Всероссийских олимпийских играх яблоку 

было негде упасть. Гостиничный бизнес Киева – рестораны, 

кафе, дома с меблированными комнатами всех уровней – был 

собой доволен. Сразу после окончания Всероссийской выставки, 

в октябре 1913 года, родилась идея о том, чтобы проводить 

ее регулярно. Конечно же, прошедшим сезоном был 

более чем доволен и Целлермайер. Palast Hôtel превращался 

в одну из лучших гостиниц Европы. 

В его фойе всегда можно было увидеть бизнесменов, приезжавших 

на ежегодные выставки. Здесь же останавливались оперные 

и театральные звезды, выступавшие в Урбане или театре 

Соловцова. В списке гостей можно было найти граждан из всех 

стран Европы. Если при заселении предъявлялся австрийский 

паспорт, Целлермайер, сам гражданин Австро-Венгрии, распоряжался 

поселить гостя в один из лучших номеров.

Как-то два военных из Варшавы, одетые в форму российских 

офицеров, вызвали Целлермайера. Они попросили его 

открыть номер некоего гостя из Вены 

и велели помалкивать. Номер открыли, 

вещи постояльца унесли, и больше 

его в гостинице не видели. Про счет 

Целлермайеру рекомендовали забыть. 

Целлермайер, хотя и был человеком 

любопытным, этому случаю значения 

не придал и только гораздо позже по-

It was breathtaking, to say the least. Its 

main gate and entrance area still visible 

today. Many international visitors compared 

the event with the exhibitions in 

Paris and Vienna. The fair ground was 

splendidly furnished. Flower displays, 

fountains with colored illumination, 

electric lanterns, a decorative lighthouse 

beamed from the navigation pavilion. 

An electric tram travelled all over the 

exhibition area. An entertainment village 

with a movie and concert pavilion 

and a large restaurant were in place. 

To give you a – certainly wrong – picture 

of the curiosities of this event, let 

me tell you that the Kiev Penitentiary 

Administration set up a display stand 

shaped as a 19th century prison with 

heavy gates, strong walls, and a watchtower. 

The local prisoners had built the 

pavilion with their own hands. Inside, 

visitors could see different items created 

by the convicts and ranginh from furniture 

to colored sculptures made of bread 

crumbs. They were souvenirs for sale. 

I wonder where the proceeds went to… 

What a year it was! The All-Russian Exhibition 

was a success and the Pan-Russian 

Olympics attracted immense number of 

visitors. The members of the Kiev hotel 

business, with all those restaurants, and 

cafés, and all kinds of lodging houses, were 

indeed happy. The idea to make the All- 

Russian-Exhibition a regularly held event 

was born immediately in October of 1913 

after the show came to its end. Jacob Zellermeier 

was extremely pleased with that hotel 

season. There was little that could possibly 

keep the Palast Hôtel from becoming 

one of the best hotels of the continent. 

ARRIVING 

I have always dreamt to arrive by train 

coming from Vienna. I would either take 

one of the elegant overnight sleepers from 

Lemberg to Kiev or I would travel via 

Warsaw, the Polish capital. It is a one-day 

journey compared to a two-hour flight. 

One day, I will see … 

Since the 1860s, Kiev was a railway hub. 

Trains departed for Moscow or to Warsaw 

from where one continued the journey to 

all major European cities. The overnight 

train to Moscow took 21 hours. The trip 

to Berlin was over 30 hours. A first class 

ticket that cost 19 rubles opened the doors 

to a luxurious enclave. At night, the compartments 

of the first class railcars od the 

Odessa-Kiev trains were converted into 

elegant bedrooms. 

At the lobby of the Palast Hôtel, businessmen 

arrived for the annual exhibitions. 

The occasional opera or theatre star came 

to town, performing at the Urban or the 

Solovtsov Theatre, checked into the Palast. 

Tourists from all over the continent stood 

on the list of arrivals. When an Austrian 

passport was shown at the reception, Mr. 

Zellermaier, a citizen of the Austro-Hungarian 

Empire, would normally make sure 

that one of the best rooms had been reserved. 

One day, two officers from Warsaw, 

wearing Russian military uniform, asked 

for Zellermeier. They ordered him to open 

the room of a certain guest from Vienna. 

Mr. Zellermeier was told to remain silent 

about that. The room was unlocked, the 

belongings of the guest removed, and the 

guest was never seen again. 

Zellermeier was advised to forget about 

the bill. Zellermeier, although curious, 

paid little attention to this incident, and it 

was only much later that he started to realize 

what might have been going on. The 

Austrian citizen, whose room was then 

opened and who never returned to the 

hotel, had probably been a spy captured 

by the operatives of the Russia’s military 

intelligence… 

For travelers from Germany and Austria, 

nothing had changed. Those who travelled 

to Kiev were holding little red books in 

their hands. Those were the guides written 

by Karl Baedeker, Germany’s most notable 

author and publisher of travel guidebooks. 

Arriving at the central train station was 

like stepping onto an anthill. Busy hands 

swiftly pulled you away; strangers grabbed 

your luggage, carrying it towards the exit

while trying to lure you into anything that 

could make your stay in particular memorable, 

or miserable. Most of the hotels had 

their own ‘runners’, the staff members 

dressed in their hotel uniform and meeting 

all arriving trains to ensure that no 

potential customer slip thru their fingers. 

Taxi cabs were waiting outside to take you 

to your hotel. Should a visitor desire a 

cheaper alternative, he would rely on one 

of the waiting coachmen. Those coachmen 

would be paid by hotel owners if they 

“recommended the visitor a hotel to stay 

at”. Karl Baedeker’s guide to Kiev warned: 

“It should be pointed out that in no case 

you can rely on the words of a cabbie recommending 

any particular hotel; the fact 

is that they have made deals with the hotel 

owners in which they get a bonus for 

every passenger they bring to the hotel”. 

For 1914, Mr. Zellermeier advertised his 

hotel, sometimes with a few lines only, in 

various international travel guidebooks. 

The latest Baedeker’s guidebook to Russia 

did not yet feature the name of the Palast 

Hôtel. Jacob Zellermeier wrote a message 

to the editor asking to be included in the 

next edition. 

As the lethal shots were fired that killed 

Franz Ferdinand, the heir to the Austrian 

throne, on June 28, 1914 in Sarajevo, virtually 

everybody was willing to go to war. 

However, nobody was really prepared for 

it. The wrong assessments of the actual 

situation based on manipulated intelligence 

lead Emperor Franz Joseph to sign 

the declaration of war… 

Since August of 1914, Russia was engaged 

in the hostilities. Almost six months later, 

Adjutant-General Trotsky, the military 

commander of Kiev, had an eye on Yakov 

Karlovich Zellermeier, whose real name 

was, of course, Jacob Zellermeier whereas 

“Karlovych” was the Ukrainian-Russian 

way of saying “son of Karl”. Since there 

was war, it was unacceptable to have a citizen 

of the Austrian-Hungarian Empire, 

the enemy, operating one of Kiev’s best 

hotels. On January 17, a decree was issued 

ordering Mr. Zellermeier to close down 

his hotel. He was given only four days to 

evacuate all guests and to shut down his 

business. After a brief and extremely successful 

business carrier, the Palast Hôtel 

closed down on January 20, 1915… 

This is not the end of the story. You can 

learn what happened during the next 

years from Premier Palace Hotel, the 

book by Andreas Augustin. The book is 

available …

минус). Почти все гостиницы высылали на вокзал своих агентов 

в форменной одежде – те встречали все прибывавшие поезда, 

чтобы не упустить ни одного потенциального клиента. 

На привокзальной площади вереницей стояли такси – довезти 

вас до гостиницы. Если такси гостю было не по карману, 

к его услугам был извозчик. Эти извозчики получали 

от гостиниц процент, если «рекомендовали» гостю, в какой 

гостинице лучше остановиться. Карл Бедекер в своем путеводителе 

по Киеву предупреждал: «Следует заметить, что ни 

в коем случае нельзя выбирать гостиницу по рекомендации 

таксиста: все они состоят в сговоре с оборотистыми хозяевами 

гостиниц, те им приплачивают за каждого привезенного 

к ним пассажира». 

В 1914 году Целлермайер давал рекламу своей гостиницы 

в многочисленных международных путеводителях, иногда 

всего в несколько строчек. В последнем путеводителе Бедекера 

по России Palast Hôtel еще не был указан. Целлермайер 

обратился к издателю с просьбой включить его гостиницу 

в следующий выпуск. 

28 июня 1914 года в Сараево прозвучали роковые выстрелы, 

поразившие наследника австрийского престола Франца Фердинанда, 

и готовность вступить в войну изъявили почти все. 

Но никто не был к ней готов по-настоящему. Недооценка истинной 

ситуации из-за подтасовки разведывательных данных 

побудила императора Франца Иосифа подписать документ об 

объявлении войны… 

В августе 1914 года Россия вступила в войну. Примерно полгода 

спустя в поле зрения киевского военачальника, генераладъютанта 

Троцкого, попал Яков Карлович Целлермайер. 

Поскольку шла война, гражданин Австро-Венгерской империи, 

вражеской стороны, не мог управлять одной из лучших 

гостиниц Киева. 17 января Целлермайер получил распоряжение 

закрыть гостиницу. На то, чтобы эвакуировать гостей 

и свернуть дела, ему дали всего четыре дня. 

20 января 1915 года, после стремительной и чрезвычайно 

успешной карьеры, Palast Hôtel был закрыт. А в Европе бушевала 

война….

The first prototype model 100EX was a 

two-door four-seat cabriolet displayed 

at the Geneva Motor Show in 2004. The 

vehicle was created to mark the centennial 

anniversary of the Rolls-Royce design 

and technology history. This 100EX 

cabriolet and its 101EX coupe version 

have become the pattern for many serial 

models and have established the new 

standards for luxury cars nowadays. 

In order to strengthen the successful 

business, the same team of automotive 

engineers and designers came up with 

the 200EX model, which laid the way 

towards Rolls-Royce RR4, a new vehicle

«Ореанда» впервые открыла 

свои двери для изысканной публики, 

ей не были нужны все современные 

атрибуты выражения стиля. В то 

время яркими вывесками с картинками 

украшали в основном торговые лавки и 

заведения по оказанию всяческих услуг. 

«Ореанда» быстро завоевала популярность 

среди гостей Ялты. В ней останавливалась 

только благородная публика, 

в ее салоне устраивали художественные 

выставки, на ее территории обустроили 

зимний сад… Об открытии и устройстве 

отеля писали практически все газеты 

того времени. 

К своему столетию «Ореанда» пережила 

несколько серьезных реконструкций, 

получив современное внутреннее 

убранство и комфорт, но сохранив при 

этом внешний облик строения начала 

столетия и бесценный опыт безукоризненного 

гостеприимства. К тому же гостиница 

«Ореанда» стала обладательницей 

фирменного знака, полностью 

соответствующего ее статусу, богатой 

истории и уникальной архитектуре. 

История создания логотипа для 

«Ореанды» сама по себе достойна 

внимания. Этот знак появился не 

с чистого листа. Богатая и бурная 

история гостиницы рождала множество 

ассоциативных связей, архитектура на 

стыке суши и моря требовала особого 

выражения. Постепенно круг идей 

сужался, и в итоге остался лишь один 

символ – морская раковина. В этой 

ракушке заложен принцип спирали, 

которая символизирует развитие и 

вечное изменение. Каждый виток – 

конец одного цикла и начало другого. 

Что могло более точно выразить 

жизненный принцип этого роскошного 

курортного отеля? Даже проект 

здания, если посмотреть с высоты, 

закладывался в форме спирали. В этом 

At THE TIME WHEN OREANDA 

HOTEL in Yalta first opened its doors 

to the noble public in 1907, the place 

did not require any modern features to 

display its style. In that epoch, only retail 

shops and providers of various services 

would normally use some vividly picturesque 

signboards to distinguish their 

businesses. Oreanda Hotel had quickly 

gained popularity with the visitors of 

the town of Yalta. Only members of the 

noble classes used to stay in this hotel. 

Arts exhibitions would be organized and 

winter gardens were built in Oreanda, 

and almost every newspaper of the time 

wrote about the hotel’s opening and 

about its nice interiors. 

By the time of its centennial anniversary, 

Oreanda has seen a number of 

serious renovations. There are modern 

interiors and conveniences at the hotel 

nowadays, but it has also managed to 

keep the overall outlook of the building 

dating back to the early days of 20th 

century as well as the traditions of best 

service its visitors are offered. Furthermore, 

the hotel has got its own business 

emblem that entirely fits its present-day 

status, rich history, and unique architectural 

features. 

The story of how the Oreanda business 

logo was being invented is worth attention 

as well. The said emblem means 

a lot. The very rich and vivid history 

of the hotel would conjure up lots of 

associations, and its architectural style, 

a meeting point of land and sea, would 

require some special way of expression. 

One after another, the creative ideas 

were eventually dismissed, and only one 

symbol was left in the end; a seashell. It 

shows the principle of a spiral symbolizing 

development and eternal changes 

whereby each new turn ends one cycle 

and begins another one. Indeed, could 

there be any more precise explanation 

for the way this luxurious resort hotel is 

arranged? Again, the very design of the 

Oreanda building resembles a spiral if 

one takes a bird’s eye view at the place. 

This symbol is a fusion of art-décor style 

and some modern elements while the 

way the letters are written just amplifies 

the beauty of the building’s architectural 

shape. When the Oreanda logo was

Фирменный стиль отеля был создан 

Сергеем Милокумовым – художником, 

блестящим рисовальщиком и колористом, 

изысканным дизайнером 

и знатоком геральдики, философом и 

просто обаятельным человеком. Его 

творчество назвали «эхом модернистского 

прорыва конца XIX века». Живопись 

Сергея – это как взгляд со стороны 

на обычные вещи или явления. Его 

работы несут в себе особую энергию 

созидания, как и все, что окружает 

художника на солнечном побережье 

Ялты, где в живописном «Винном доме 

князя Голицына» открыта его галерея. 

Неслучайно именно ему принадлежит 

авторство современного герба Ялты, 

в котором опять же с помощью символов 

выражена суть этого яркого города, 

давным-давно облюбованного 

знатью и царским двором и по сей день 

остающегося курортной столицей, 

городом-праздником. 

Отель «Ореанда» достоин эмблемы 

работы мастера своего дела, ведь он 

всегда был лучшим для своих гостей и 

остается таким в начале второго столетия 

его истории. Над его образом 

всегда трудились люди незаурядные, 

и так будет и дальше, ведь 102-й год – 

это всего лишь новый виток спирали, 

следующий шаг на пути к совершенству. 

Все в отеле «Ореанда» будет доставлять 

радость и удовольствие его 

гостям – в этом его призвание.

thing happened; as construction workers 

were disassembling one of the banquette 

room walls, they found an ancient tapestry 

showing a seashell in its central part, 

and it was one more confirmation that 

the said symbol literally lied down in the 

very heart of Oreanda where the roar of 

seawater can always be heard. 

The hotel’s emblem was created by the 

painter named Sergey Milokumov. He 

is a brilliant artist and colorist, very 

good at design art, expert in heraldry, 

a philosopher, and a very charming 

man in general. His artworks were 

oftentimes called “the echo of modernist 

breakthrough in the end of the 19th 

century”. Sergey Milokumov’s paintings 

are kind of looker-on view to quite 

usual things and events. His artworks 

are full of some special energy of creation, 

same as everything that surrounds 

a painter at the sunny seashores of Yalta 

where Sergey Milokumov’s artworks 

are on display at the picturesque Prince 

Galitsin Wine House. It is not a mere 

chance that this painter invented 

the present-day Yalta emblem where 

characteristic symbols show the gist of 

this beautiful town since long favored 

by rich people and royal families and 

nowadays remaining one of the health 

recreation centers. 

Oreanda Hotel is proud to have the 

emblem created by a true master of 

arts because this hotel has always been 

the best place to stay in Yalta and still 

remains such best place as it lives thru its 

second century. Outstanding people did 

their part to create and shape the place, 

and this tradition will survive as time

amateur players. The game is played by Bill 

Gates, Bill Clinton, Irina Hakamada, Celine 

Dion, and many others. Well, if we talk 

about celebrities, it would be much easier 

to say which of them do not play golf.

popular in a country, it means that there 

are quite many rich people with good taste 

and caring of their own health and eager to

own reasons to like this sport. So, what 

does the game mean to each of them? Or, 

maybe, to each of us? 

The golf game was invented in Europe 

some 400 years ago as occasional entertainment 

of Scottish herdsmen who 

used to move small stones with their 

wooden crooks, and it eventually became 

one of the most dignified sports 

with sophisticated rules and quite austere 

etiquette. Long story short, tradition 

is the very first thing about it. Still, 

a tradition alone would not be attractive 

to people unless some spicy content 

is available. So there is another thing 

alongside the old traditions golf could 

bring to the present-day human beings; 

a specific way of thinking dating back

адрес). Не существует в гольфе и судейского надзирательства 

– каждый сам отвечает за соблюдение вековых правил.

своего клуба…». В любом спорте есть свои «заповеди» 

и законы, однако гольф, пожалуй, – единственный вид спорта,

atmosphere that means even more than

В 19 лет Соломия поступила в Львовскую консерваторию и поразила

TURE in the province of Galicia, can tell you great many stories 

about the lives of the musicians this marvelous land gave to the 

rest of the world. Among those numerous stories is the one about 

Solomiya Kruszelnicka, a famous operatic singer. This female 

legend of Lviv was excitedly greeted by the audience at La Scala in 

Milan, at Grand Opera in Paris, at San Carlo in Naples, at Colon 

in Buenos Aires, at the Warsaw Opera Theater, and at Le Grand 

Opera Imperial in Saint Petersburg. In order to express their 

admiration of the virtuosic performance by Solomiya Kruszelnicka 

in the “Salome” composed by Richard Wagner, the Italians 

produced three medals – golden, silver, 

and bronze – showing her facial profile. 

There are rumors that the residents of the 

Italian town of Viareggio still oftentimes 

tell stories about a beautiful signora from 

Lviv who liked to take a walk along the 

seashore there. 

However, the scenic career of the famous 

female singer began in Lviv where she many 

times sang for the local public and where 

she eventually rested in piece forever… 

Solomiya was a brave and independent 

woman, and that made her so different 

from most women of that time and 

perhaps opened her way to the worldwide 

fame. She had considerable support from 

her father who became her very first and 

most loved mentor. Reverend Ambrosias 

was a unique priest and it was exactly his 

merit that his daughter developed great 

interest and dedication to the art of music 

and singing. When young Solomiya was 

scheduled to marry a student of religious 

school, her father cancelled the ceremony 

in response to her plea. He did it with no 

fear of possible public disapproval and 

rumors because his daughter wanted to 

acquire education. Her father managed to 

find some money for her education first 

in Lviv and later in Italy. 

As Solomiya was nineteen, she became 

a student at the Conservatoire of Lviv 

and excited Professor Wysocki with 

her charming silver-toned voice and 

her proud beauty. During her time as a student, she met Teofil 

Okuniewski, a lawyer and local politician, who would oftentimes 

accompany her at public events, since “it was improper for a 

female from Galicia to go out alone”. One day after a party, Teofil 

confessed his love to Solomiya. The girl became so excited that 

she could not sleep that night and next day, as she was singing an 

aria, she stuttered and made her professor very angry. After that 

occasion, she never let her feelings go since she remembered that 

her education was financed by the money her father borrowed 

and kept for her while other children were denied such an opportunity. 

Solomiya wanted to love and be loved and used to say 

there is no balance in arts for her if there is no love. However, she 

said no to all her admirers for the sake of the art. 

After Solomiya’s graduation from the conservatoire and her 

debut at Lviv Opera Theater, she continued her musical studies

предыдущую! А ведь Крушельницкая не сразу согласилась 

на участие в постановке. «Где вы видели японку такого роста, 

как мой? – спрашивала она у Пуччини. – Ладно еще, что 

с виду европейка, но где взять эту восточную хрупкость?». 

Триумфальный успех певицы вознес ее на вершину славы. 

Дальнейшая карьера Крушельницкой была стремительной. 

В 1906 году Артуро Тосканини пригласил ее в La Scala. 

Именно в этом театре Крушельницкая во всем блеске проявила 

себя в итальянских премьерах штраусовских «Салоin

and teacher. Solomiya came to Milan 

to improve her singing skills. As time 

went on, she studied hard and learnt to 

win. Soon thereafter, she was offered 

a job contract with the Lviv Opera 

Theater. Solomiya celebrated her return 

to the city together with her kindred 

and friends after the opening night of 

“Faust”. She looked happy, told fun stories, 

and laughed, but deep inside she 

was sad as she could feel the cold and 

even hostile attitude instead of support 

and understanding on the part of her 

friends, instructors, and colleagues. Her 

first months at the opera became a real 

test for the young singer, but an absolute triumph awaited 

her at the end of the story. Solomiya’s performances in Lviv 

were always a great success, and the spectators always brought 

flowers to her, and the applause and excited appraisals were 

just endless. After one hundred years, the name of Solomiya 

Kruszelnicka was assigned to the theater where she used to 

perform so greatly. 

As the opening night performance of “Madam Butterfly” by 

Giacomo Puccini failed in 1904, the maestro remade and staged it 

anew. This time, the lead part was performed not by the outstanding 

Rosina Storchio, but by Solomiya Kruszelnicka. The new 

Chio-Chio-san was much better than the previous one! It is to 

mention that Kruszelnicka did not at once accept the offer. "Have 

you ever seen a Japanese woman as tall as I am?" she asked Mr. 

Puccini. “I look as a typical European and I don't have that oriental 

tenderness, in fact", Kruszelnicka commented. The absolute 

success of the performance brought her to the top of fame. Her 

further career developed fast. In 1906, she got the invitation to 

La Scala from Arturo Toscanini, and it was at La Scala that she 

starred in the Italian-directed ‘Salome’ in 1906 and in ‘Electra’ 

in 1909, both composed by Strauss. Later, there were ‘Gloria’ by 

F. Cilea (1907) and ‘Fedra’ by I. Pizzetti (1915). 

The press of the time used to call Solomiya Kruszelnicka the 

“unforgettable Aida”, the “brilliant Chio-Chio-san”, the “perfect 

Brumhilde”, the "charming Salome", and the “striking Valkyrie”…

дующий день, исполняя арию, сбилась, 

чем вызвала гнев профессора. Больше 

она не позволяла себе давать волю своим 

чувствам, ведь постоянно помнила о том, 

что учится на одолженные отцом деньги, 

оторванные от других детей. Соломия хотела 

любить и говорила, что без этого для 

нее в искусстве нет равновесия, но ради 

того же искусства она отказывала всем 

поклонникам. 

После окончания консерватории и дебюта 

в Львовской опере Соломия продолжила 

учебу в Италии у известной 

певицы и педагога Фаусты Креспи. Она 

приехала в Милан совершенствовать 

технику пения. И дальше с упорством 

училась и побеждала. Вскоре Львовская опера предложила 

певице контракт. Возвращение во Львов Крушельницкая отметила 

со своими родственниками и друзьями после премьеры 

«Фауста». Она была весела, рассказывала разные истории, 

смеялась, но на душе у нее было грустно: вместо поддержки 

и понимания друзей, педагогов, партнеров по сцене она чувствовала 

холод и даже вражду. Первые месяцы в опере стали 

настающим испытанием для молодой певицы, но ее ждал 

безоговорочный триумф. Выступления Соломии во Львове 

всегда проходили с неизменным успехом, публика буквально 

забрасывала ее цветами. Аплодисментам и восхищению не 

было конца. (Пройдет сто лет, и театру, на сцене которого так 

триумфально выступала Соломия, присвоят ее имя.)

times. Today, the Opera is named in her honour 

меи» (1906) и «Электры» (1909), в мировых премьерах опер 

Ф. Чилеа «Глория» (1907), И. Пиццетти «Федра» (1915). 

Пресса называла Крушельницкую «незабываемой Аидой», 

«наипрекраснейшей Чио-Чио-сан», «идеальной Брунгильдой», 

«чарующей Саломеей», «поражающей Валькирией»... 

Соломия была необыкновенно красивой, элегантной, с изысканными 

манерами, но вместе с тем очень простой, искренней 

и сердечной. Она одинаково относилась к людям разных социальных 

кругов, благодаря чему вызывала всеобщее уважение. 

Знакомство с Федром Шаляпиным Соломия инициировала 

сама, прислав ему после одного из концертов букетик мимоз 

с запиской по-украински. На рассвете следующего дня 

певице доставили огромный букет роз, поразивший ее. Потом 

были прогулки и бесконечные разговоры. Были ли они 

влюблены друг в друга? Кто знает… 

Крушельницкая была счастлива замужем за известным адвокатом, 

мэром городка Виареджо Чезаре Риччони. Ее муж был натурой 

тонкой и разделял главный интерес жены – музыку. Жили 

Solomiya was very beautiful, elegant, and well-bred and, at the 

same time, she was quite easy-going, sincere, and hearty. She used 

to get along with people of different classes in the same manner, 

and that brought her deep respect of all. 

She took initiative to become acquainted with Feodor Chaliapin 

as she sent flowers to him with a greeting card written in Ukrainian 

after one of his concerts. Next morning, a large bouquet of 

roses was delivered to her. After that, there were numerous walkouts 

and endless conversations between the two people. Were 

they in love with each other? Nobody knows for sure... 

Kruszelnicka was happily married to Cesare Riccioni, a famous 

lawyer and mayor of the town of Viareggio. Her husband was an 

intelligent person and he shared his wife's desire for music and 

singing. The couple dwelt in Viareggio that was a paradise place for 

the elite. Members of the European royal families and other noble 

people used to come there to the coast of the Tyrrhenian Sea. There 

in Viareggio, one could see Zita, the queen of Bulgaria and the 

future empress of Austria as well as the daughters of Don Carlos 

who wished to gain the Spanish crown back then. Isadora Duncan 

and Eleanora Duse resided in the vicinity, and Solomiya Kruszelnicka, 

together with Puccini and Leoncavallo, also belonged to the 

operatic elite of the town. The beautiful Solomiya, a daughter to 

a priest from the Ternopol region, was intelligent enough and properly 

educated to entirely fit in such aristocratic neighborhood. 

Of special importance to Solomiya Kruszelnicka were the concerts 

in the memory of Taras Shevchenko, Ivan Franko, and Mikhail 

Shashkevicz. She used to come to Lviv to perform at such events 

where she sang operatic arias as well as her favorite Ukrainian folk 

songs. Kruszelnicka had many friends in Lviv, and the famous 

Ukrainian writer and poet Ivan Franko was one of them. As she 

came to Lviv, she often visited his house (now at 152 Ivan Franko 

Street). Franko’s son Taras recalled that Solomiya used to sing as his 

mother was playing the music, and that was a kind of little concert. 

The brilliant voice of the famous singer could be heard all around 

the street, and their neighbors and other people would get together 

near their house to listen to Kruszelnicka’s singing. 

Nowadays in Kruszelnicka Street, not far from Dniester Hotel, 

there is a stone house Solomiya bought for her family members. 

The house had seven living rooms, two kitchens and two bathrooms. 

As she purchased this house, her family got the chance to 

move to Lviv and earn some money by hiring out some parts of 

their dwelling. Solomiya used to come to that house very often to 

see her kindred.

Сюда, на берег Тирренского моря, съезжались представители 

«голубых кровей» со всей Европы. Здесь поселились царица Болгарии, 

будущая австрийская императрица Зита, дочки Дона Карлоса, 

претендента на испанскую корону. Неподалеку жили Айседора 

Дункан и блистательная актриса Элеонора Дузе. Вместе 

с ней, Пуччини и Леонкавалло Крушельницкая принадлежала 

к оперной элите городка. Красавица Соломия, дочь священника 

с Тернопольщины, утонченная, интеллигентная и образованная, 

полностью отвечала этому аристократическому окружению. 

Особое место в жизни певицы занимали концерты, посвященные 

памяти Т.Г. Шевченко, И.Я. Франко и М. Шашкевича. Для участия 

в них певица часто приезжала во Львов. Она пела не только 

оперные арии, но и свои любимые украинские народные песни 

под собственный аккомпанемент. Во Львове у нее было много 

друзей, среди них и известный писатель Иван Франко. Приезжая 

во Львов, певица часто посещала его дом (по улице И. Франко, 

152). Сын писателя Тарас вспоминал о том, как артистка пела под 

аккомпанемент матери. Это были маленькие концерты. Серебряный 

голос певицы звучал на всю улицу, прохожие и соседи собирались 

толпой возле окон послушать ее пение. 

На улице, теперь носящей ее имя, неподалеку от гостиницы 

«Днистер», в шеренге домов выделяется «камяница», которую 

Соломия купила, чтобы поселить там своих родных. Дом состоял 

из семи комнат, двух кухонь и ванных. Приобретение 

этого здания певицей дало возможность ее семье переехать во 

Львов и зарабатывать деньги на жизнь за счет сдачи в аренду 

помещений. Соломия очень часто приезжала сюда, чтобы увидеть 

своих родных. 

Когда во Львов пришли советские войска, Соломию – гражданку 

Италии – не выпустили из Советского Союза. Дом 

национализировали. Певица получила квартиру на первом 

этаже, а во время Великой Отечественной войны здание занимали 

оккупанты. После войны певица и ее сестра Анна 

жили в квартире №4 на втором этаже. Свой последний концерт 

Соломия дала в 77 лет. Маленький зал не мог вместить 

всех, кто хотел ее услышать. Через два года певицы не стало. 

Город Львов был очевидцем яркого дебюта, множества 

испытаний и триумфов блистательной Соломии, которая 

прославила его своим божественным даром.

As the Soviet troops entered Lviv, Solomiya was not allowed to 

leave the now-Soviet city, though she was a citizen of Italy. Her 

house was nationalized and she was given an apartment at the 

ground floor. The house was later occupied by the Germans 

during the World War II. After the war ended, the singer and her 

sister Anna resided in Apartment #4 at the first floor of the building. 

Ms. Kruszelnicka gave her last concert at the age of seventyseven, 

and the concert hall was way too small to let in all those 

who wished to hear her singing then. In two years thereafter, 

Solomiya Kruszelnicka passed away. 

The city of Lviv witnessed the vivid debut and numerous ordeals 

and triumphs of the brilliant Solomiya whose divine gift of singing 

brought fame to the city.

заведений в мире гастрономии Le Cordon Bleu, 

член Мировой ассоциации поваров (WACS), обладатель

и многих других титулов. Игаль признан во 

всем мире, он имеет опыт работы в ресторанах, отмеченных 

звездами Мишлен, таких как L’Arpege (Париж),

Troisgros (Руан). Игаль родился в западном украинском

Igal Kovriga graduated from Le Cordon Bleu, one of the 

most reputable and prestigious cookery education institutions. 

Member of the World Association of Cookery Specialists 

(WACS), Mr. Kovriga is a laureate of the golden prizes at 

high-level cookery contests and has many other honorable 

awards. Mr. Kovriga is known worldwide for his cookery art 

as he used to work for the Michelin-rated restaurants like 

L’Arpege (Paris), Jumeirah Carlton Tower Hotel (London), 

and Troisgros (Rouen). Igal Kovriga was born in the Ukrainian 

town of Chernovtsy and moved to Israel as he was a little 

boy. There he started his professional career to become a 

chief cook so famous nowadays. Igal used to work in Britain, 

Japan, France, the United States, and Turkey. Today Igal 

Kovriga is back in the Ukraine to create a special Ukraineinfluenced 

Mediterranean menu for Terracotta restaurant 

located at Premier Palace Hotel. In his opinion, this restaurant 

is worth to become rated by the world’s leading guidebooks 

for gourmets. It is just a matter of time, he thinks. 

Игаль, расскажите, как возникла идея создания ресторанамузея. 

И что это такое? 

Музей – это место, где человек может узнать и увидеть 

что-то интересное. И если в музее вы наслаждаетесь искусством, 

дизайном и интерьером, то в музее-ресторане 

кроме этого сможете попробовать качественные блюда, 

приготовленные из экологически чистых продуктов по 

древним рецептам. 

Ресторан «Терракота» открылся совсем недавно, в декабре. 

Это достаточно краткий срок для того, чтобы стать музеем. 

Не правильнее было бы обустроить ресторан-музей в историческом 

месте? 

Концепция ресторана была специально продумана, чтобы 

воссоздать атмосферу Средиземноморья. Теплые полутона 

и яркие акценты, только натуральные материалы декора, 

картины-подлинники, панорамный вид на исторический 

центр Киева – все это создает нужное настроение. К тому же 

ресторан открылся в единственной исторической пятизвездочной 

гостинице Киева, которая в этом году празднует сто 

лет. Здесь вы чувствуете неразрывную связь с историей. Кстати, 

рекомендую посетить выставку фотографий, расположенную 

на втором этаже гостиницы, – вы увидите, как выглядел 

Киев в начале прошлого века. 

Почему средиземноморский ресторан-музей открыли именно 

в Киеве? 

Влияние Средиземноморья на украинскую 

кухню нельзя переоценить.

Османской империй. 

Исторически так сложилось, что юг 

Украины имел тесные связи со странами 

Igal, would you please tell us how the idea of a restaurantmuseum 

came across your mind and what kind of place it is 

basically? 

A museum is a place where people can learn and see something 

interesting. Whereas visitors usually enjoy the works of art, the 

design, and the interiors at a museum, here they can also try 

high-quality meals made from ecologically pure foodstuff in 

accordance with ancient recipes. 

Terracotta restaurant was opened quite a short time ago. It is 

a rather young place to become a museum, don’t you find? 

Wouldn’t it be better to create an establishment of such a kind at 

a more historical place? 

The concept of this restaurant was particularly designed to 

feature the Mediterranean environment. Warm colors and 

vivid tones, only natural materials in the interior outfit, 

genuine paintings, and a panoramic view to the historical 

center of Kiev altogether create a right mood for people in 

here. What’s more, this restaurant is housed by the city’s only 

five-star hotel to celebrate its centenary this year. Here one 

can feel a strong touch of history, indeed. By the way, I suggest 

that you visit the photo display at the second floor where 

you can learn how the city of Kiev looked like at the beginning 

of the 19th century. 

And what was the reason for opening a Mediterranean restaurant-museum 

specifically in Kiev? 

Actually, the importance of the Mediterranean traditions for 

the Ukrainian cuisine is very significant as our country had for 

centuries been vastly influenced by the Greek states and by the 

Ottoman Empire. 

Historically, the south of the Ukraine had strong ties with the 

Mediterranean nations. There is historical data that shellfish 

used to be delivered from the Black Sea area to the south of 

France during the reign of Elisabeth the Great. Furthermore, 

the events described in the Odyssey poem were unfolding in 

the Black Sea region in the south of the present-day Ukraine 

where Homer took his protagonist. The Black Sea was the 

trunk way for the most expensive foodstuff originating from 

the Mediterranean. And finally, swine, the nice animal so 

popular with the Ukrainians nowadays, also comes from that 

subtropical region. 

Well, does it mean that the common perception of swine as 

a purely Ukrainian domestic animal is actually wrong? 

The DNA probes of the fossil swine revealed that these animals 

migrated to the European part of our continent from the 

south. It was also discovered that the first swine ever found 

originated from the Near East as they migrated together with 

the human beings seeking a better fortune in Europe. They 

were quite well in Israel, of course, still they were not popular 

among the local people there. The advent of 

swine to the European soil had triggered the 

process of domestication of wild hogs. 

What are the objectives the founders of this restaurant 

set for themselves? 

Our major objective is to become rated by 

Michelin, the world’s most renowned restaurant 

guidebook, and to acquire one or two, and maybe 

even three stars according to its rating scale. It is 

the best reward for us that our visitors from all 

over the globe and especially from the Mediterranean 

become impressed with the new tastes of our 

meals and get purely excited here. 

Would you please tell us about the criteria a restaurant 

should meet to become rated by Michelin? 

The Michelin rating criteria are kept in secret by its 

experts, but I am sure they know their job very well.

рапаны доставлялись с Черного моря на юг Франции. И 

действия Одиссеи происходили на Черном море. Да, Гомер забросил 

Одиссея на юг Украины. Через Черное море нам доставляли 

все самые дорогие деликатесы Средиземноморья. И даже 

любимая украинцами свинина «родом из субтропиков». 

Значит, мнение, что свинья – это исконно украинское животное, 

ошибочно? 

После того как ученые провели анализ ДНК останков древних 

свиней, оказалось, что эти животные мигрировали в европейскую 

часть континента с юга. Выяснилось, что самые 

первые свиньи были родом с Ближнего Востока, они пришли 

вместе с людьми, которые искали лучшей судьбы в Европе. 

В Израиле им, конечно, было хорошо, но они не пользовались 

там особой популярностью. Появление свиней в Европе активизировало 

процесс одомашнивания европейских кабанов. 

Так что по происхождению свинья – не украинка 

и тем более не европейка. 

Какие задачи и цели поставили перед собой создатели 

ресторана? 

В случае с рестораном «Терракота» нашей главной 

целью является вхождение в самый рейтинговый 

в мире гид – «Мишлен». И получение одной, двух, 

а может, и всех трех звезд. Высшая похвала для 

нас – когда гости со всего мира, а особенно из Средиземноморья, 

посещая ресторан, удивляются совершенно 

новым вкусам и приходят в восторг. 

Расскажите, каким критериям должен отвечать 

ресторан для получения звезд Мишлен? 

По каким критериям эксперты «Мишлен» определяют, 

что ресторан достоин звезды, является 

коммерческой тайной. Но можно с уверенностью 

утверждать, что они знают в этом толк.

Расскажите о современных тенденциях кулинарии. И какие 

мировые достижения вы используете в ресторане «Терракота»? 

В мире популярны современные технологии, молекулярная 

кухня и в то же время возвращение к традициям, а также разделение 

кухонь по направлениям. Во время моего обучения в Le 

Cordon Bleu мы на протяжении полугода отрабатывали каждое 

направление: изучали книги рецептов, историю, традиции, обычаи 

народов, топографию, 

климат. Чтобы понять и 

прочувствовать менталитет 

страны, нужно в ней 

пожить какое-то время – 

только тогда приходит 

понимание ее особенностей. 

Ведь быть туристом 

и жить в стране, как говорят 

у нас в Одессе, – «это 

две большие разницы». 

В «Терракоте» мы создаем 

новое направление 

кулинарии –

Could you tell our readers a little about the modern cookery 

trends? And what kind of newest achievements do you use here 

at Terracotta? 

The modern world is dominated by advanced technology and 

molecular cooking industry. At the same time, the return 

to old traditions and the division of cookery art by areas of 

expertise is also present. As I studied at Le Cordon Bleu, we 

carefully learnt each subject for six months. There were various 

areas of expertise like recipe books, history, traditions, 

national customs, topography, and climate. One must live in 

a country for some time in order to learn and understand a 

nation’s mentality and 

other particular things 

about it. Being a tourist 

is one thing while living 

in a country is quite 

another; the difference is 

very significant as they 

say in Odessa. 

Here at Terracotta, we 

are creating a new field 

of cookery; Mediterranean 

Ukrainian. This 

is a kind of symbiosis of 

Ukrainian and Mediterranean 

cuisines. We also 

have plans to organize 

a number of cookery 

contests under the aegis 

of the World Association 

of Cookery Specialists 

(WACS) whereby 

Ukrainian cookery 

experts will be offered 

a chance to show their 

views of the Medi- 

Ukrainian cuisine.

But still, what is the difference between the restaurants assigned 

one, two, and three-star ratings? 

Actually, the rating system remains unchanged since the 

1930s. One star means that a restaurant is very good for its 

class. Two stars tell us that a place offers splendid meals and 

that there is a point to make a detour on your way to visit it. 

And a three-star rating means that a restaurant has a top-class 

chief cook and that clients will be delighted they made a special 

effort to visit it.

Нью-Йорке много захватывающих дух достопримечательностей, 

одна из них – легендарный отель «Плаза», 

открытый еще в 1907 году. 

После последней реконструкции, стоившей 400 миллионов 

долларов, отель обрел новое дыхание и современный шик, 

сохранив при этом свое старинное очарование. Легендарный 

ресторан Oak Room, славящийся пышным, но изящным 

декором и величественной атмосферой, прекрасно сочетается 

с новинками – элегантным баром Champagne Bar, 

в котором подают коктейли, шампанское (25-60 долларов 

за бокал) и вино (до 3350 долларов), экзотическим зимним 

садом с бассейнами и совершенной системой освещения. 

Создатель «Плазы» Генри Харденберг построил ее по 

образцу французских замков. 1 октября 1907 года, когда

The French Renaissance château-style building was designed

Plaza was accorded landmark status by the New York City 

Landmarks Preservation Commission in 1988 

In the 1950s it was the setting for Kay Thompson's series of 

Eloise books, Eartha Kitt and Peggy Lee played the Persian 

Room, unaccompanied ladies were not permitted in the 

Oak Room bar and the Palm Court was favored for luncheons 

and teas. The Beatles stayed at the Plaza during their 

first visit to the United States in February, 1964. On November 

28, 1966, in honor of publisher Katharine Graham, 

Truman Capote hosted his acclaimed "Black & White Ball" 

in the Grand Ballroom. 

The hotel has appeared in huge number of films, it was a 

setting for Funny Girl (1968), Cotton Club (1984), Brewster's 

Millions (1985), the first two Crocodile Dundee movies, Big 

Business (1988), King of New York (1990), Home Alone 2: 

Lost in New York (1992) – then-Plaza owner Donald Trump 

appears in the film directing the main character Kevin to the 

lobby, Sleepless in Seattle (1993), It Could Happen to You 

(1994), Almost Famous (2000). 

The recent Bride Wars (2008) with Kate Hudson and Anne 

Hathaway was shot in the Grand ballroom, the Terrace room, 

and in corridors and Palm Court.

In 1852, THE EMPEROR NAPOLéON III commissioned Georges 

Haussmann to transform Paris from a quiet medieval city into a modern 

and vibrant capital metropolis. The next few decades saw many 

unique hotels appear across the city’s skyline that, even today, are 

symbols of traditional French style. The Hôtel Plaza Athénée was one 

of them. In 1911, Hôtel Plaza Athénée opened its doors at 25 Avenue 

Montaigne. 

Christian Dior was so infatuated with the Plaza Athénée that in 1946 

he chose Avenue Montaigne as the location for his boutique, due to 

its close proximity to the hotel. Soon afterwards Chanel, Prada, Nina 

Ricci and Louis Vuitton followed suit and today Avenue Montaigne is 

a byword for luxury and haute couture. 

Among many who have chosen the hotel as their Paris address are 

the Vanderbilts, the Rockefellers, Jacqueline Kennedy, and celebrity 

bright lights such as Maurice Chevalier, Marlene Dietrich, Rudolf 

Valentino, Grace Kelly and Carrie Bradshaw. Carrie Bradshaw? Yes, 

the famous reunion between Big and Carrie in the series finale of Sex 

And The City was filmed at Hôtel Plaza Athénée. 

World-famous master chef Alain Ducasse sends out masterpieces 

from his kitchen to the stunning, 3-Michelin-starred Alain Ducasse 

Restaurant at Plaza Athénée. 

Since 2000, the Plaza Athénée has undergone extensive renovations, 

including the introduction of avant-garde design in the Eiffel Tower 

Suite, 5382-square-foot Royal Suite, Le Bar with a counter made as an 

iceberg and safe for personal bottles of hotel regular guests. It is the 

only Parisian grand hotel with two Art Deco floors. 

In 2003, it was taken over by the Dorchester Group, now the Dorchester 

Collection.

At THE VERY HEART OF THE CITY OF MADRID, surrounded 

by museums, parks, and squares, there is Ritz Hotel located at an 

ancient palace. This splendid hotel was built as per the orders of the 

Spanish king Alfonso XIII who was full of daring ideas and plans 

concerning Madrid as this young monarch returned from his journey 

around Europe, deeply impressed with all those palaces, parks, 

and architecture of the continent. Soon thereafter, a luxurious hotel 

was erected among the local magnolias, cedars, and Prado acacias to 

open its doors to the public in 1910, with His Royal Majesty Alfonso 

XIII attending the ceremony. It was due to the new hotel that the 

formerly small provincial town of Madrid later became one of the

«патриотические» названия уже были 

«разобраны», Карута обратил свой взор к 

Туманному Альбиону и назвал свою 

гостиницу «Лондонская». 

За долгие годы отель заработал безупречную 

репутацию. Фешенебельный фасад, мраморные 

лестницы, искрящиеся хрусталики люстр, 

цветные витражи – все это создает атмосферу роскоши и незаурядности. 

Возможно, поэтому «Лондонскую» очень любили 

знаменитости. По воспоминаниям писателя Алексея Пантелеева, 

во время его работы с Одесской киностудией в соседнем номере 

«Лондонской» жил Луи Арагон с женой Эльзой Триоле, а этажом 

ниже – знаменитый дрессировщик Борис Эдер, вместе с которым 

помещалась и его любимая львица. В новогодний вечер Эдер 

зашел в ресторан, где немолодая чета Арагонов обворожительно 

танцевала блюз, чтобы купить что-то в буфете, в сопровождении 

львицы, чем вызвал небольшой скандал. Кстати, когда-то на месте 

буфета была арка, а в ней – возвышение наподобие эстрады. В более 

ранние годы, когда в «Лондонской» останавливались Чехов, 

Куприн, Бунин, на ее подмостках отплясывали канкан шантанные 

дивы… Именно «Лондонская» принимала у себя звездное жюри 

I Международного кинофестиваля «Золотой Дюк» в составе Марчелло 

Мастрояни, Никиты Михалкова, Олега Янковского, Марка 

Захарова и Станислава Говорухина. Одесса до сих пор помнит, 

как Михалков и Мастрояни бродили по Приморскому бульвару 

в окружении толпы поклонников. 

Пребывание в «Лондонской» и сейчас остается неким ритуалом. 

И кто знает, в каком из номеров вы остановитесь – где 

парила в танце Айседора Дункан, писал свой очередной 

детективный шедевр Жорж Сименон или приветствовал на 

балконе своих поклонников Марчелло Мастрояни? 

Londonskaya Hotel is a superb place to stay!

This HOTEL WAS ESTABLISHED and 

INITIALLY OWNED by Jean-Batiste Caroutas, 

a famous French confectionary and foodstuff businessman. 

Since all French-like “patriotic” names 

had already been taken by the year 1846, Mr. 

Caroutas decided to resort to the British ideas and 

named his hotel business “Londonskaya”. 

The hotel gained impeccable reputation over the 

years. Beautiful façade, marble staircases, shining 

crystal chandeliers, and colorful stained-glass 

windows altogether create the feel of luxury and 

uniqueness up there. Perhaps that is why this hotel was very much 

favored by celebrities. As writer Alexei Panteleyev recalled of the time 

he worked with Odessa Film Studios, Luis Aragon with his wife Elsa 

Triole resided in a neighboring room at Londonskaya while famous 

animal trainer Boris Eder stayed in a room one floor below with his 

favorite lioness. It was on a New Year’s night that Mr. Eder, wishing 

to buy something at the bar and followed by his lioness, came into 

the restaurant where the aged Aragón couple was nicely dancing to 

the blues music, and such his visit caused a small scandal down there. 

By the way, it is to mention that before the lunch counter was made, 

there had been an arch with an elevation like a stage where exotic 

female dancers used to perform in the hotel's early years as Anton 

Chekhov, Alexander Kuprin, and Ivan Bunin would stay there. And it 

was exactly Londonskaya where the renowned jury of the 1st International 

Film Festival named ‘Golden Duce’ was accommodated, with 

Marcello Mastroianni, Oleg Yankovski, Mark Zakharov, and Stanislav 

Govorukhin being the jury members. The city of Odessa still remembers 

Mikhalkov and Mastroianni walking along Seaside Boulevard 

surrounded by a crowd of their admirers. 

Staying at Londonskaya Hotel still remains a kind of special ritual 

today as well. Who knows, maybe you are going to stay at the room 

where Isadora Duncan was hovering in her dance, or where George 

Simenon was writing one of his detective novels, or where Marcello 

Mastroianni was greeting his fans as he stood at the balcony…
