competition's Hollywood <strong>the</strong>me. Ihe<br />
chefs an Team Shotts were <strong>in</strong>spired by<br />
1930s actor Charlie Chapl<strong>in</strong> and decided<br />
to. design an entry to. honor his performance<br />
<strong>in</strong> Ihe movie Modem TImes.<br />
Noth<strong>in</strong>g symbolized <strong>the</strong> message of<br />
Modem Times better than a gear, says<br />
Shotts.<br />
"II had to be a gear because,<br />
dur<strong>in</strong>g<br />
(<strong>the</strong>) Depression, <strong>the</strong>re was so much<br />
more an emphasi on <strong>the</strong> mechanical,<br />
ra<strong>the</strong>r than On humans," he say .<br />
Shotts and hi colleague. Patrice<br />
Caillot and Remy Fi.<strong>in</strong>frock. constructed<br />
two. gears.<br />
One gear was <strong>the</strong>team's<br />
sugar howpiece, '<strong>the</strong> o<strong>the</strong>r was it.<br />
chocolate<br />
showpiece.<br />
"We were depict<strong>in</strong>g<br />
an old movie reel<br />
with tile sugar howplece," say Shotts.<br />

<strong>format</strong><br />
The chocolate showpiece looks<br />
much like <strong>the</strong> ugar one, but. <strong>the</strong>re are<br />
some subtle differences between <strong>the</strong>m.<br />
At <strong>the</strong> bottom of <strong>the</strong> chocolate howpiece,<br />
for example. are fanlike cutout<br />
resembl<strong>in</strong>g a shutter. Both creations<br />
show gear curv<strong>in</strong>g on ei<strong>the</strong>r side to<br />
illustrate <strong>the</strong> mechanical nature of factory<br />
work dur<strong>in</strong>g<br />
<strong>the</strong> Depression.<br />
S<strong>in</strong>ce <strong>the</strong> creators were tra<strong>in</strong>ed <strong>in</strong><br />
cul<strong>in</strong>ary arts ra<strong>the</strong>r than <strong>in</strong> manufactur<strong>in</strong>g,<br />
<strong>the</strong>ir plann<strong>in</strong>g for <strong>the</strong> contest was<br />
extensive. They spent three months<br />
learn<strong>in</strong>g about mach<strong>in</strong>ery, design<strong>in</strong>g a<br />
template and mix<strong>in</strong>g <strong>the</strong> <strong>in</strong>gredients.<br />
Shotts. Fi<strong>in</strong>frock and Caillol began <strong>the</strong>ir<br />
creative process at <strong>the</strong> library, research<strong>in</strong>g<br />
gears <strong>in</strong> periodicals and trade journals.<br />
Once <strong>the</strong>y became comfortable with<br />
<strong>the</strong> construction of a gear. <strong>the</strong>y tried to<br />
devise <strong>the</strong> howpieces out of cardboard.<br />
They aved <strong>the</strong> cardboard template to a<br />
disk and sent it to an eng<strong>in</strong>eer <strong>in</strong><br />
Atlanta. who <strong>the</strong>n cut a mold to tbe<br />
exact specifications . Once <strong>the</strong>y had this<br />
mold 'back from <strong>the</strong> eng<strong>in</strong>eer,<br />

This year, Shotts and his partners are<br />
100 bu y with <strong>the</strong>ir day jobs to participate<br />
<strong>in</strong> <strong>the</strong> National Pastry Team<br />
Championship <strong>2002</strong> Contest. ShOHS<br />
works <strong>in</strong> ew York as a corporate pastry<br />
chef for Guiuard Chocolate CD. and<br />
launches a new l<strong>in</strong>e of seasonal! bonbons<br />
every<br />
three months,<br />
Caillot works as executive pastry<br />
chef at New York's St. Regis Hotel, pecializ<strong>in</strong>g<br />
<strong>in</strong> desserts, and Funfrock<br />
explores new desserts <strong>in</strong> his role as<br />
executive pastry chef at Cafe Boulud <strong>in</strong><br />
New York.<br />
Though <strong>the</strong>ir gears were probably<br />
better ta t<strong>in</strong>g than tho e made <strong>in</strong> factorie<br />
. <strong>the</strong> creators. opted to throw<br />
showpieces after<strong>the</strong> compctition.O<br />
